Delicious Spanish flan, everyone will love it!

1 cup white sugar
3 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
  • In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.
  • Bake in preheated oven 60 minutes. Let cool completely.
  • To serve, carefully invert on serving plate with edges when completely cool.

4 cups milk
1½ t pure vanilla extract
2 strips orange zest
2 strips lemon zest
1 two-inch long cinnamon stick
5 large eggs
5 large egg yolks
¾ cup sugar
2 tablespoon cognac or brandy

Steps:

  • caramelize pan preheat oven to 325º in a medium size, heavy saucepan, bring the milk to a simmer (just below the boiling point). Add zests, and cinammon. let steep for 20 minutes at temperature below a simmer in a large mixing bowl, beat together the eggs, egg yolks, and sugar until well mixed. add the hot milk in a stream, beating all the time with a wire wisk. add the cognac and vanilla extract. Remove any froth that forms on the surface. strain the mixture through a medium mesh sieve into the prepared caramel mold. set the mold in a roasting pan in a baño maria. cover with a piece of aluminum foil over the top. bake in the lower third of the oven until a a knife inserted in the center comes out clean, about 45 min.
