Steps:
- In a large saucepan, combine the parsley, pimento, salt, pepper, tomato sauce, and fresh tomatoes. Bring to a boil. Add carrots, celery and garlic. Cook until carrots are cooked, but still firm.
- Stir in a little water and juice of 1 lemon. Place fish into pan without stirring. Baste fish with liquid. Add sugar.
- When the fish is cooked, remove from heat. Let cool and serve cold

- Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
- Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
- Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

- I a large non-stick skillet, saute the onion and garlic in oil until tender, about 5 minutes.
- Add the red peppers, coriander, and pepper flakes; saute 1 minute.
- Cover and cook over low heat until the peppers are very tender, about 8 minutes.
- Transfer the mixture to a food processor or blender (Or use hand blender for less clean up);Blend until smooth, scraping down sides twice.
- Stir in 1/4 teaspoon of the salt.

I saw this on Nick Stellino's show and had to make it. Unfortunately I couldn't find the recipe anywhere, and he's really vague on quantities, so I sort of guessed and improvised, and it turned out awesome. quantities are fuzzy, i sort of guessed at what I used.

- Heat oil in pot over medium heat. Add garlic, onion, red pepper, celery, carrot bay leaves, herbs, and sauté for a few minutes until softened. You can also use bacon fat here -- I didn't.
- Add red wine; reduce by ½ (this will take about 15-20 minutes, maybe). Add chicken stock; cook 35-40 minutes until "glazed" (in Nick Stellino's words -- I found that it just looked well combined and nice). It will reduce a bit, too.
- Strain sauce; reduce some more (I found this step unnecessary; it had reduced quite a bit cooking with the stock). Combine butter and flour. In stages, whisk in the butter/flour mixture until sauce is the proper consistency (you want it to be a little thickened -- just imagine it on a plate with salmon. you will probably use all of the mixture). Whisk until butter is melted before adding more. Add just a bit of butter for a sheen, if desired.
- Heat light olive oil in pan over medium-high heat. Mix salt, paprika, onion and garlic powders. Coat one side of salmon filet with spice mix; place in pan spice side down. Sprinkle other side of fish with spice mix. Cook until seared (maybe 2-3 minutes each side, depending on thickness); salmon will have a wonderful crust. Flip and cook until other side is seared. If you like your salmon more done, you can cook longer, but the absolute worst is to have it overcooked, and it will cook a bit after you remove it from the pan. Seriously, you're not gonna die from some slightly rawish salmon. This whole searing salmon thing is not something I'd done before, and it's a fantastic way to prepare it. The fats and sugars ooze out and combine with the spice rub to make this just perfect crust.
- To serve, coat plate with red wine sauce; add salmon filet. Add veggies -- Mr. Stellino added steamed, sauteed baby bok choy; I found broccoli works well too with that sauce. Add mashed potatoes if you're into starch. Anything else will absorb too much of the sauce. Serve with glasses of the same wine you used in the sauce.
- Note: another thing Mr. Stellino did was to chop and fry up some slab bacon (apparently this kind he gets is as expensive as foie gras -- it made me want to eat bacon, and i am a vegetarian except for fish), and sprinkle some on top of the salmon when done. This is not necessary but might add some nice flavor.

- The strength of the chili sauce will effect how hot this dish is.
- I recommend a sweet chili sauce for those who don't like it too hot.
- Place oil, ginger, garlic, tomato sauce and chili sauce in a pan on medium heat for 5 minutes.
- Add remaining ingredients and let it simmer on low for a few more minutes.
- Leave the sauce to sit while you prepare the fish.
- Chop the fish into approximately bite-size pieces.
- Sift the flour and cornflour into a bowl.
- Make a well in the flour and add the egg white and water.
- Mix to a smooth batter.
- Coat the pieces of fish with the batter.
- Heat oil in large pan and dip the fish into the oil.
- Cook the pieces for a few minutes each (cook many at a time).
- Heat the sauce back up.
- Once the fish is all cooked add the sauce to the fish in a large frying pan.
- Serve when hot.
- Enjoy.

FISH IN CRAZY WATER

- Mince garlic. Quarter tomatoes and finely chop parsley. Season fish inside and out with salt and pepper.
- In a heavy skillet just large enough to fit fish heat oil over moderately high heat until hot but not smoking and sauté garlic, stirring, until it just begins to turn golden. Add fish, tomatoes, water, wine, and 1/4 cup parsley and bring to a boil over high heat. Spoon cooking liquid over fish and cook fish, covered, at a bare simmer until just cooked through, 15 to 20 minutes.
- Transfer fish and tomatoes to a large serving platter and cover with foil. Boil cooking liquid over high heat until reduced to 1 cup, about 10 minutes. Stir in remaining parsley and salt and pepper to taste. Fillet fish and spoon sauce and tomatoes over it.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan, melt the butter on low heat; cool to room temperature. Meanwhile, in a medium bowl, combine the cayenne pepper, black pepper, lemon pepper, garlic powder and salt. Set aside.

- Mix together the green seasoning ingredients with a pinch of salt and pepper. Rub the fish in the seasoning, cover and leave to marinate in the fridge for 1 hr.
- Use kitchen paper to dab off excess marinade, then gently roll each fillet up into a pinwheel and secure with a cocktail stick.
- For the cou-cou, heat the oil in a small saucepan, add the onion and cook until soft (about 5 mins), stirring often.
- Add the garlic, thyme and coriander, and cook for about 30 secs, stirring continuously. Stir in the okra and sauté for 1 min. Add 300ml boiling water, reduce the heat and simmer for about 5 mins, topping up with more boiling water if the pan dries out. Remove the okra and onion with a slotted spoon and set aside.
- Turn up the heat and bring to the boil. Whisk in the polenta gradually, and continue to whisk until it is smooth, thick and starts to bubble - about 3 mins. Reduce the heat to low, cover the pan and simmer for 10 mins, whisking very often, until the polenta is cooked through. Stir in the okra and onion. Remove the sprig of thyme and discard. Add the butter and nutmeg, and season to taste.
- Meanwhile, make the sauce. Heat the oil in a pan, add the onion, celery and pepper, and soften, stirring often, for 5-10 mins. Add the garlic, pepper sauce, herbs and curry powder, and cook for about 30 secs, stirring regularly. Add the tomatoes, tomato purée, 100ml water and sugar, and bring to a gentle simmer. Cook for 15 mins, allowing the sauce to thicken a little.
- Place the rolled fish fillets in the sauce, cover and continue to simmer until just cooked through, about 10-15 mins, depending on the size of the fish. Divide the cou-cou between plates, spoon over the sauce and arrange the fillets on top. Eat immediately.

- Preheat oven to 425 degrees.
- Cook fish stock down until reduced by half. Set aside.
- Trim off bottom end of each scallion and pull off and discard any tough or blemished outer leaves. Cut each scallion into 6-inch lengths. Arrange in flat baking dish and add water to barely cover, 2 tablespoons of the butter, salt and pepper. Bring to boil and let cook about 5 minutes. Remove from heat. Set aside.
- Select heatproof skillet or baking dish large enough to hold fish fillets in one layer. Rub bottom with one tablespoon of butter and sprinkle with shallots. Arrange fillets over shallots and sprinkle with salt and pepper.
- Pour wine and water over fillets. Dot with 3 tablespoons butter. Bring to boil on top of stove. Place in oven and bake 2 1/2 to 5 minutes, depending on thickness of fillets. Cook only until fish loses raw look throughout.
- Transfer fillets, 2 at a time, to 4 individual heated serving plates.
- Pour cooking liquid into saucepan. Add 2 tablespoons of butter and fish stock with red wine. Cook combined sauces down to one cup. Put this through sieve and press to extract as much liquid as possible. There should be about 3/4 cup. Reheat gently.
- Garnish each serving with 6 individual drained scallions. Spoon sauce around fish but not on top.

Transfer fish to fresh paper towels to drain. Bring curry sauce to a simmer, then add fish and cook, turning fish gently to coat with sauce, about 1 minute.
- Serve fish curry with long beans scattered on top.
