6 (4 to 6-ounce) filet mignons
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
6 tablespoons cold unsalted butter
1 onion, thinly sliced
1 tablespoon minced garlic
1 teaspoon dried oregano
1/4 cup tomato paste
2 1/2 cups dry red wine

Steps:

  • Preheat grill to medium-high heat.
  • Generously season the steaks with salt and pepper and drizzle with the 3 tablespoons of olive oil. Grill to desired doneness, about 5 minutes per side for medium-rare. Transfer the steaks to a cutting board. Tent with foil and let stand 10 minutes.
  • Meanwhile, melt 2 tablespoons of butter in a heavy large saucepan over medium-high heat. Add the onions and saute until tender, about 5 minutes. Season with salt. Add the garlic and oregano and saute until fragrant, about 30 seconds. Stir in the tomato paste and cook for 2 minutes, stirring constantly. Whisk in the wine. Simmer until the sauce reduces by half, stirring occasionally, about 10 minutes. Remove the skillet from the heat. Strain the sauce into a small bowl, pressing on the solids to extract as much liquid as possible. Discard the solids in the strainer and return the sauce to the saucepan and bring back to a slow simmer. Cut the remaining 4 tablespoons of butter into small 1/2-inch chunks and whisk in the sauce a little at a time. Season the sauce, to taste, with salt and pepper.
  • Place filets on each of 6 dinner plates. Drizzle the sauce over the filets and serve.

Two 1-inch-thick filet mignon steaks
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1 shallot, minced
4 ounces sliced mixed mushrooms
1 cup red wine

Steps:

  • Generously season each side of the steaks with salt and pepper. Let stand at room temperature about 20 minutes before cooking.
  • In a cast-iron (or other heavy-duty) skillet, heat 1 tablespoon of the butter over medium heat. Add half of the shallots and saute until tender for a couple of minutes. Stir in the mushrooms and cook until the water has evaporated, about 5 minutes. Season with salt and pepper. Transfer the cooked mushrooms to a dish and set aside. Wipe the skillet clean.
  • Heat another tablespoon of butter over high heat in the skillet. It will bubble and foam, and after it stops, add the steaks. Sear on each side for about 4 minutes. Transfer to a plate and tent with foil.
  • Reduce the heat to medium high. Add the remaining shallots and saute for 1 to 2 minutes. Turn the flame off and add the wine. Turn the flame back on to high, bring to boil and let reduce by half. Whisk in the remaining tablespoon of butter. Stir in the reserved mushrooms.
  • Spoon the sauce over the steaks and serve.

Steps:

  • In a large saucepan, saute onion in 1 tablespoon butter until tender. Add garlic, 1/4 teaspoon salt and oregano; cook and stir 1 minute. Add tomato paste; cook and stir 2 minutes longer., Gradually whisk in wine. Bring to a boil. Reduce heat; simmer until reduced by half. Strain sauce and return to pan. Gradually stir in remaining butter until melted. Add 1/4 teaspoon pepper. Remove from the heat; keep warm., Sprinkle steaks with remaining salt and pepper. Drizzle with oil. Grill, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Cover and let stand for 3-5 minutes. Serve with wine sauce.

1/4 cup fresh shiitake mushroom
3/4 cup cabernet sauvignon wine, divided
5 fluid ounces beef consomme
1/2 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon dried thyme

Steps:

  • In a nonstick frying pan, saute shallots and mushrooms in 1 tbsp butter for about 4 mins, til tender.
  • Add 1/2 cup of red wine and 3 fl. oz consomme. Simmer for about 5 minutes, stirring frequently.
  • Remove the mushrooms from sauce, set aside.
  • Boil sauce over high heat until reduced to 1/4 cup.
  • Combine sauce with mushrooms in bowl. Set aside.
  • Sprinkle filets with pepper to taste. Saute steaks in remaining 1 tbsp butter over medium heat, about 3 minutes per side for a 1-inch thick steak.

2 14 1/2-ounce cans low-salt chicken broth
1 14 1/2-ounce can beef broth
2 tablespoons (1/4 stick) unsalted butter, room temperature

6 6-ounce filet mignon steaks (each about 1 inch thick)
Freshly cracked pepper
1/4 cup chopped shallots

Steps:

  • Boil wine, chicken broth and beef broth in heavy large saucepan over high heat until mixture is reduced to 2 cups, about 1 hour. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Mix butter and flour in small bowl. Heat 1 tablespoon olive oil in heavy large skillet over medium-high heat. Sprinkle steaks with salt and cracked pepper. Sauté steaks until medium-rare, about 4 minutes per side. Transfer to plate. Add shallots, garlic and thyme to skillet; stir 30 seconds. Add 1 1/2 cups reduced wine mixture to skillet (reserve remainder for another use). Bring mixture to boil, scraping up any browned bits. Add butter mixture and whisk until smooth. 1 teaspoon extra-virgin olive oil
1 medium shallot, minced
1 cup dry red wine
1/3 cup pomegranate juice
2 cups beef stock
1/2 teaspoon cornstarch
2 tablespoons water

Steps:

  • Cook steaks in a 10-inch cast-iron skillet over medium heat for 2 minutes. Increase heat to medium-high. Add the steaks and cook 3-4 minutes per side for medium-rare. Transfer the steaks to an ovenproof dish and place in a 200 degree oven. (I include this because the recipe talked about how to cook the steaks, but I'm only interested in the sauce.).
  • Return the skillet to medium heat and add 1 tsp oil and the shallot. Saute until the shallot has softened, about 1 minute. Add the wine and cook for one minute. Add pomegranate juice and the stock, then bring to a simmer and cook until reduced to 1/3 cup. Add cornstarch mixed with water, then cook until thickened.
  • Spoon the sauce over the filets and serve (garnished with freshly chopped chives and pomegranate seeds, if desired).

DH and I had this recipe for dinner last night and loved the spicy cream sauce for our filets. I am posting the recipe as it appears in the Williams-Sonoma "Steak and Chop" book; however, DH and I grilled our steak on the BBQ and DH added a bit of steak fat that he chopped off of the filet to the pan on the stovetop for the cream sauce.

1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon dry mustard
1 tablespoon dried rosemary
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
4 filet mignon steaks, 1 1/2 inches thick
1 tablespoon olive oil
1 tablespoon unsalted butter
1 shallot, minced
2 tablespoons flat leaf parsley, minced
2 tablespoons cognac
1 tablespoon Dijon mustard
2 tablespoons tomato paste
1 cup beef stock
1/2 cup heavy cream
cayenne pepper, to taste
salt, to taste
fresh ground black pepper, to taste

Steps:

  • To make the rub, in a small bowl, mix together the paprika, garlic powder, mustard, rosemary, salt and black pepper. Sprinkle the rub all over the meat, reserving 1 Tb. Let the steaks stand at room temperature for at least 15 minutes or up to 1 hour, or cover and refrigerate overnight. Bring to room temperature, if necessary, before cooking.
  • In a large, heavy frying pan over medium-high heat, heat the olive oil. Add the steaks and cook to the desired doneness, turning once, 3-5 minutes on each side.
  • Transfer the steaks to a platter and let rest, tented loosely with aluminum foil, while you make the pan sauce.
  • To make the sauce, in the same frying pan over medium heat, melt the butter.
  • Add the shallot and parsley and saute until the shallot is softened, 2-3 minutes.
  • Remove the pan from heat and add the Cognac.
  • Briefly return to the heat to warm; then remove from the heat again to ignite the Cognac using a long kitchen match, making sure the overhead fan is off and averting your eyes. Keep a lid handly in case the flame should flare up.
  • When the flame has burned out, return the pan to high heat and whisk in the mustard, tomato paste, reserved 1 Tb rub, and beef stock.
  • Cook, whisking often, to reduce the sauce by half, 4-5 minutes.
  • Remove the pan from the heat and whisk in the cream and cayenne to taste.
  • Add any accumulated juices from the steaks. Season to taste with salt and black pepper.
  • To serve, spoon a generous amount of sauce over the steaks and serve at once. Pass any extra sauce at the table.

20 ounces tenderloins filet mignon
2 tablespoons balsamic vinegar
1 tablespoon sugar
2 tablespoons extra virgin olive oil
1 teaspoon sea salt

2 cups red wine

Steps:

  • Cut fat off filet mignon steaks. Place steaks in large bowl/pan/plate/platter.
  • Drizzle 1 tablespoon of balsamic vinegar on each steak. Flip steaks over and drizzle the other tablespoon of balsamic vinegar.
  • Sprinkle the salt, pepper, and sugar on both side of steaks. Let the steaks sit for 10 minutes at room temperature.
  • Pour red wine into sauce pan over high heat. I suggested 2 cups but make enough sauce to satisfy your taste or number of steaks. Wait until wine becomes thick and syrupy. Turn off heat.
  • Preheat oven to 350°F Also preheat a heavy pan over medium heat on stove.
  • Drizzle 2 tablespoons of extra virgin olive oil over steaks.
  • Sear steaks 1 or 2 minutes on each side on pan. Pour red wine reduction over steaks while cooking. I used a spoon to do this in moderation and avoid getting too much red wine in there.
  • Place pan with steaks into the oven. Let them cook for 8-10 minutes. This will make your steak brown on the outside and pink on the inside (depending on the thickness of the steak and power of the oven). Try cutting a steak with your knife to check the inside.
  • Remove the pan from the oven and let steaks sit in the pan for 5 minutes to let them soak the juices inches.
  • Serve steaks on plate. Take a spoon and drizzle the juice from the pan over your steaks. Make sure to get a lot of juice on there! Enjoy!
  • PS - I served these with cheddar and bacon mashed potatoes. Also try potatoes au gratin or steak fries!

3 shallots, chopped

1 teaspoon crumbled dried thyme
6 (6 ounce) filet mignon
4 cups beef stock or 4 cups canned low sodium beef broth

5 tablespoons chilled butter, cut into pieces

Steps:

  • Whisk first 4 ingredients in a large bowl.
  • Divide steaks between 2 glass baking dishes.
  • Pour marinade over.
  • Cover and refrigerate overnight.
  • Remove steaks from marinade and pat dry.
  • Transfer marinade to a large saucepan.
  • Boil until reduced to 1 cup, about 20 minutes.
  • Add stock and boil until reduced to 1 ¼ cups, about 20-25 minutes longer.

  • Reduce heat to medium-high and cook to desired doneness, about 4 minutes per side for medium-rare.
  • Transfer steaks to warm plates.
  • Tent with foil to keep warm.
  • Add half of sauce to each skillet and bring to boil, scraping up any brown bits.
  • Transfer contents of 1 skillet into the other and bring to slow simmer.
  • Add butter, whisking in one piece until melted before adding the next.
  • Spoon over steaks and serve.

  • Melt 2 tbsp butter in large saucepan over medium heat. Cook and stir shallots 1 to 2 minutes or until crisp-tender.

1/4 teaspoon kosher salt
Ground black pepper
3 teaspoons extra-virgin olive oil, divided
1 meduim shallot, minced
1/3 cup dry red wine
1/2 cup veal demi-glace (see note)
1/3 cup pomegranate juice
2 tablespoons chopped fresh chives
2 tablespoons pomegranate seed, optional

Steps:

  • 1. Preheat the oven to 200 degrees. Season the steaks with salt and pepper to taste. 2. Heat a 10-inch heavy skillet over meduim heat for 2 minutes. Add 2 teaspoons oil and swirl to coat the bottom of the pan. Increase the heat to meduim-high. 3. Add the steaks and cook, 3-4 minutes per side for meduim-rare. Transfer the filets to an ovenproof dish and place in the heated oven(the steaks will cook a bit more in the oven). 4. Return the skillet to medium heat. Add the remaining 1 teaspoon oil and shallot. Saute until shallot has softened, about 1 minute. 5. Add wine and cook for 1 minute. Add demi-glace and pomegranate juice, then increase the heat to high and bring to a boil. Cook, stirring occasionally, until the sauce has reduced by half and thickened. 6. Spoon the sauce over the filets. Garnish with chives and pomegranate seeds, if desired. Note: To substitute for demi-glace, increase the redwine to 1 cup. Add to the skillet with the pomegranate juice in Step 5. Immediately add 2 cups of beef stock, then bring to a simmer and cook until reduced to 1/3 cup.
