20-MINUTE CHICKEN AND RICE SKILLET DINNER RECIPE

Steps:
- Heat a large skillet over medium-high heat. Add oil to pan, swirl to coat. Add chicken; cook 5 minutes or until browned, stirring occasionally. Add bell pepper, rice, water, pepper and salt. Stir together.
- Add broccoli to top of chicken and rice without stirring; cover and allow to sit for about 2 minutes. Stir broccoli into chicken/rice mixture. Continue to cook until rice is fully cooked and broccoli is tender-crisp. Remove from heat, Sprinkle with Parmesan cheese and serve.
GRILLED CHICKEN PARMESAN
Steps:
- Preheat an outdoor grill to medium-high. Make sure the grates are clean so the chicken doesn't stick.
- Arrange a chicken breast between two sheets of plastic wrap. On a work surface, using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4-inch (6 millimeters) thick. Remove the plastic wrap and transfer to a baking sheet; repeat with the remaining chicken breasts. Brush both sides of each chicken cutlet lightly with oil.
- Combine the salt, pepper and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken cutlets. Place the chicken cutlets on the grill and cover the grill. Cook for 3 to 4 minutes. Flip and spread a few tablespoons marinara sauce over each cutlet and top with a couple pieces of mozzarella and 1 tablespoon Parmesan. Cover the grill and cook until the cheese is melted and the chicken is cooked through, 3 to 4 minutes longer. Serve hot.

- A favorite with cheese lovers, this 20 Minute Parmesan Chicken and Rice Dinner is comforting, quick-cooking and will bring a smile to everyone at your table. Step 1
- Heat oil in a large, nonstick skillet over medium-high heat. Add chicken and cover. Cook for 4 minutes on each side, or until cooked through. Step 2
- Remove chicken from skillet. Add water or milk and soup to skillet and stir to combine. Bring to a boil. Step 3
- Add rice, peas and cheese to skillet and mix well. Top with chicken and cover. Step 4
- Cook on low heat for 5 minutes. Season with black pepper, if using. Recipe Tips If you don't have a nonstick skillet, increase oil to 2 tablespoons to help prevent the chicken from sticking to the pan. If you want to add more flavor to this dish, try adding 1/2 teaspoon of dried and crushed oregano leaves to the soup when adding it to the skillet. If peas aren't your thing, sliced mushrooms, red peppers or asparagus make a great substitution here.
CHICKEN WITH GARLIC PARMESAN RICE

Steps:
- Heat olive oil over medium heat in a large skillet. Season chicken with salt and pepper and garlic powder. Sauté chicken tenders until nicely browned and just cooked through. Remove from skillet and set aside.
- Add butter, garlic, pepper flakes and 1/2 teaspoon of salt to the empty skillet and sauté garlic for a couple of minutes on medium heat.
- Turn heat to medium high and add white wine. Cook and stir for about 5 minutes. Remove and set aside 3 tablespoons of pan sauce to use later.
- Add uncooked rice to skillet with remaining butter sauce. Stir well - make sure it's completely covered. Add chicken broth and remaining 1/2 teaspoon of salt. Bring mixture to a low boil then reduce heat to medium-low, cover pan and simmer for 20 minutes or until rice is tender. Stir several times while it's cooking
- Sprinkle parmesan over rice then arrange chicken tenders in skillet over rice. Cover, remove from heat then let stand for 5 minutes.
- Drizzle reserved 3 tablespoons of pan sauce over chicken tenders when serving and garnish with parsley.

- Cut off a 1 1/2-inch piece of the baguette and pulse in a food processor to make breadcrumbs. Add the tomatoes and 1/4 teaspoon salt and pulse until the tomatoes are finely chopped but not pureed. Heat 1 1/2 tablespoons olive oil in a medium skillet over medium heat; add the garlic and cook until just golden, about 1 minute. Add the red pepper flakes and tomato mixture and bring to a simmer; cook until the sauce thickens slightly, 8 to 10 minutes.
- Meanwhile, preheat a grill to medium high. Toss the chicken with the remaining 1/2 tablespoon olive oil, the oregano and 1/4 teaspoon salt. Split the remaining baguette in half lengthwise and then cut in half to make 4 pieces.
- Grill the bread, cut-side down, until lightly toasted. Grill the chicken until cooked through, about 5 minutes per side, topping with the mozzarella and covering during the last 2 minutes.
- Spoon some tomato sauce onto the bread pieces and top with half of the parmesan. Top each with a chicken breast, then the remaining sauce. Sprinkle with basil and the remaining parmesan.

- In a saucepan, bring broth and lemon juice to a boil. Stir in rice and onion; return to a boil.
