PROSCIUTTO WRAPPED FIGS

4 large whole figs (or 16 small mission figs), quartered
Goat cheese
1 (3-ounce) package prosciutto
3 tablespoons honey
1/4 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
  • Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
  • Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
  • In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
  • Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.

Steps:

  • Halve the figs lengthways and put them, cut side down, without oil, in a hot griddle pan (or heavy-based frying pan) for 1 minute until charred. Sprinkle with balsamic vinegar and salt and black pepper to taste, and, while still warm, wrap each half in a little piece of prosciutto.
  • Serve as canapés or a starter, garnished with shaved parmesan and fresh mint or rocket leaves.

12 cups spinach or 12 cups other greens
1/4 cup fresh basil
8 figs, stemmed, quartered
balsamic vinegar (use the good stuff)
truffle oil or extra virgin olive oil

Steps:

  • Preheat oven to 350 degrees F. Place slices of prosciutto flat on parchment paper over a baking sheet. Bake about 13 minutes, or until fairly crisp. Remove from oven and let cool slightly. Break the prosciutto up into pieces and set aside.
  • Assemble salad with the spinach and basil on the bottom. Top with figs and crispy prosciutto, and dress with balsamic vinegar and truffle oil, to taste.

Aged Balsamic Vinegar

Steps:

  • Preheat oven to 425 degrees F.
  • Cut a cross in the top of each of the figs and open slightly.
  • Push a tablespoon of the cheese into the fig, then wrap securely in the slice of prosciutto and secure with toothpicks.

Steps:

  • Preheat the oven to 350°F
  • Stuff a small ball of cheese into the center of each fig half.
  • Wrap the fig halves with narrow strips of prosciutto. The prosciutto will easily stick to itself, so no need to be perfect.
  • Place the fig halves on a baking sheet and bake for about 10 minutes. Remove and allow to cool slightly. Plate, and drizzle with honey and a light sprinkling of sea salt.

8 ounces fresh soft goat cheese
2 teaspoons finely chopped fresh rosemary
Salt and freshly ground black pepper
24 fresh figs, mixed varieties
1/4 pound thinly sliced prosciutto
6 long woody sprigs rosemary
Olive oil for brushing and drizzling

Steps:

  • Combine goat cheese, rosemary, and a pinch of salt and pepper in a small mixing bowl, and stir.
  • Make a small slit in bottom or side of each fig. Fill a pastry bag fitted with a small plain tip with cheese mixture. Pipe cheese into each fig through slit. Fill figs with just enough cheese so they expand slightly.
  • Tear or cut the prosciutto slices into long strips. Wrap a strip of prosciutto around each fig, and skewer 4 figs on each rosemary sprig. Brush figs with olive oil, and season with salt and pepper.
  • Place figs on a moderately hot grill, rotating skewers until figs are very hot and cheese starts to ooze, about 6 minutes. Remove from grill; serve immediately with a drizzle of olive oil and good bread.

1 tablespoon olive oil
2 tablespoons unsalted butter
8 fresh figs, slices, plus more for serving
Salt and freshly ground pepper to taste
2 cups heavy cream
Juice of one lemon
1/3 cup Parmegiano Reggiano.
1 pound farfalle pasta
5 to 6 ounces (about 10 slices) Prosciutto di Parma, thinly sliced (almost paper thin)
1/3 cup pine nuts, toasted
Chopped parsley to garnish

Steps:

  • Start by thinly slicing the prosciutto into strips. Reserve.
  • In a large sauté pan, over medium heat, heat the olive oil and melt the butter. Sauté the fig slices until slightly browned, about 2 minutes, and season with salt and pepper. Then, add the heavy cream and lemon juice and once it starts boiling, lower the heat to medium-low and continue cooking until slightly thickened and the figs begin to break down, about 4 minutes. Keep warm while you cook the pasta.
  • Place a large pot of lightly salted water on to boil. Cook the pasta according to package instructions, until it is "al dente". Drain, reserving about 1/2 cup of pasta water, and transfer the pasta to the sauté pan with the creamy sauce.
  • Toss the pasta with the sauce and transfer to a serving dish. Top with halved (or quartered) fresh figs and prosciutto. Finish off with toasted pine nuts and a sprinkle of chopped parsley.
  • Serve immediately with extra Parmigiano Reggiano at the table.

20 large fresh ripe figs
20 thin slices Italian prosciutto (about 8 ounces)

Steps:

  • Preheat the oven to 425 degrees F.
  • Snip the hard stems off the figs and cut the figs in half lengthwise through the stem. With a small sharp knife, cut the prosciutto lengthwise into inch-wide strips. Wrap a strip of prosciutto around the center of each fig half, with the ends overlapping. Brush with olive oil and arrange cut-side up on a sheet pan.
  • Roast the figs for 10 minutes, until the prosciutto is a little crisp and the figs are warmed through. Serve warm.

  • Preheat oven to 350°F
  • Scoop out a bit of bread from the centre of the bread halves.
  • Mix the oil and basil in a small bowl and drizzle evenly over both bread halves.
  • Arrange the prosciutto evenly over the bottom half of the bread.
  • Gently spread the cheese over the prosciutto and top the cheese with sliced figs. Sprinkle with the lemon juice and black pepper.
  • Cover with the top half of the bread and wrap in aluminum foil, leaving the seam on top open slightly.

  • Preheat oven to 350°F. Toss fresh figs with 2 tablespoons oil in bowl. Arrange figs on rimmed baking sheet. Roast until figs are tender and shiny, about 12 minutes. (Do not roast dried figs.) Cool. Cut figs lengthwise in half.
  • Whisk remaining 1/2 cup oil and vinegar in small bowl to blend. Add cheese and whisk to blend. Season to taste with salt and pepper. (Figs and dressing can be prepared 1 day ahead. Cover separately and refrigerate. Bring to room temperature and rewhisk dressing before using.)
