This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
- Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

I recently got hooked on the whole foil cooking method for fish and have been scouring the internet to add more of these to my arsenal of delicious, moist and super tasty fish recipes. Here's a true winner! Super healthy, super moist, super delicious. We love it. Even my 2 and 4 year old. I HIGHLY recommend you use fresh tomatoes in this recipe rather than the optional canned. MUCH better flavor. NOTE: I USE THIN FILLETS AND WOULD ONLY COOK ABOUT 15 MINUTES IF USING THIN FILLETS.

- DO NOT PRE-HEAT YOUR OVEN. This is the trick.
- Lightly spray a cookie sheet with cooking spray. Or line pan with tin foil.
- Place Salmon fillet skin side down on pan.
- Drizzle with Olive Oil, and season with the salt, pepper, and dill weed. All seasonings are to your liking.
- Place salmon in a cold oven, set oven to 400 degrees F; bake salmon 25 minutes.
- You should have perfectly cooked salmon.
- For Tartar Sauce:.
- Combine all ingredients in a small bowl. Chill until ready to use.

- Lay a piece of silver foil, large enough to wrap the salmon in a very loose parcel, on a baking tray.
- If the salmon is to be served hot, grease the foil with the butter, or use the oil if serving the salmon cold.
- Thinly slice the lemon and put about half on the foil.
- Put the salmon on top, with a few slices of lemon inside with onions, if using, and lay the rest of the lemon along the top of the salmon.
- Season generously and wrap loosely, making sure the edges are securely folded together so that no steam can escape.
- Put into a medium oven, 450F (180C), for 10 minutes per pound.
- If serving hot, take it out of the oven and let it stand for a further 10 minutes.
- If serving cold, leave the salmon in the foil for two to three hours.
- To serve: Unwrap the fish and gently pull off the skin.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine 1/2 cup olive oil, lemon juice, garlic, brown sugar, oregano, thyme, salt, and pepper in a bowl.
- Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Place salmon in the middle of the foil, skin-side down. Drizzle with olive oil mixture. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges.

SALMON FILLETS BAKED IN FOIL
This is one of my favourite ways to cook salmon now! It's so easy and foolproof... I usually make a whole bag of frozen fillets at a time. Whatever isn't eaten right away gets crumbled up on salads or mixed into pasta later on. Yum! (Measurements are approximate because I generally just eyeball it as described.) NOTE: Prep time includes minimum marinade duration!

- Place fillets in a glass dish large enough that they can all lie flat. Mix the water and soy sauce together (if you want it saltier, don't water the soy sauce down) and pour over the fillets. However many fillets you choose to make, just make sure the marinade comes up about halfway on each fillet.
- Dust the top of each fillet with garlic powder, then pepper them generously. It's okay to almost cover the tops with pepper, if you like.
- Marinate a minimum of two hours in the fridge, covered--I usually use frozen fillets and let them defrost in the marinade overnight.
- Preheat oven to 350 degrees.
- Place each fillet on a piece of aluminum foil large enough to fold into a sealed packet, but before you seal it, add a couple of splashes of fresh soy sauce.
- Bake sealed packets in an uncovered glass casserole dish (for convenience) for 30-40 minutes or until salmon flakes easily when prodded with a fork.
- Unwrap and serve!

- Preheat oven to 450. Place a baking sheet in oven to heat while you prep the salmon.
- Tear two pieces of foil (big enough to wrap salmon with some overlapping).
- Place foil pieces one on top of the other.
- Put about 2 teaspoons olive oil in center of top piece of foil and lay salmon on top of oil.
- Spread each piece of salmon with about 2 teaspoons basil pesto.
- Arrange sliced tomatoes over pesto so they cover the top of the salmon.
- Wrap salmon securely in foil, doubling over the seam and ends several times.
- Place salmon packet on heated baking sheet and cook 15 minutes.
- Remove from oven after 15 minutes and let sit 2 to 3 minutes.

GARLIC SALMON IN FOIL (BAKED OR GRILLED)
This Garlic Lovers Salmon is easy to make on the grill or in the oven, it's cooked with the most heavenly lemon butter garlic sauce, and it's always a crowd favorite!

- Heat oven to 375°F. Or heat a grill to medium heat.
- Line a large baking dish with a large piece of aluminum foil.
- In a small saucepan, heat butter over medium-high heat until melted. Stir in the garlic and cook for 1-2 minutes until fragrant. (You want the garlic to be partly- but not fully-cooked.) Remove from heat and stir in the white wine and lemon juice.
- Using a pastry brush, brush a tablespoons of the butter mixture on the foil until it is evenly covered. Lay the salmon out on the foil. Then pour the remainder of the butter-garlic mixture on top of the salmon and brush it around until it evenly covers the salmon. Season the salmon evenly with a few generous pinches of salt and pepper.
- Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. (If your sheet of foil is not large enough, just place a second sheet of foil on top and fold the edges so that it forms a sealed packet.
- TO COOK IN THE OVEN: Bake for 14-15 minutes, or until the salmon is almost completely cooked through. (Cooking times will vary on the thickness of your salmon, so I recommend checking it a few minutes early if you have a thinner cut of salmon.) Remove the salmon from the oven and carefully open and pull back the aluminum foil so that the top of the fish is completely exposed. (Be careful, lots of hot steam will be released!) Change the oven setting to broil, then return the fish to the oven and broil for 3-4 minutes, or until the top of the salmon and the garlic are slightly golden and the fish is cooked through. (Keep a close eye on the salmon while broiling, though, to be sure that the garlic does not burn.).
- TO COOK ON THE GRILL: Carefully transfer the packet of salmon to the grill, and grill for 12-14 minutes, or until the salmon is almost completely cooked through. (Cooking times will vary on the thickness of your salmon, so I recommend checking it a few minutes early if you have a thinner cut of salmon.) Carefully open and pull back the aluminum foil so that the top of the fish is completely exposed. (Be careful, lots of hot steam will be released!) Continue cooking for 3-4 minutes, or until the top of the salmon and the garlic are slightly golden and the fish is cooked through.
- Remove salmon from the oven or grill. Sprinkle the top of the salmon evenly with parsley and green onions, and serve immediately.
MEDITERRANEAN SALMON FILLETS BAKED IN FOIL
Those who have cooked fish in foil in the past will know what a great method this is and for those who haven't may want to give it a try to see what you are missing!---you will need heavy-duty foil for this, for the best flavor I would recommend not to omit or substitute any ingredients you may adjust all amounts to suit taste.

- Rinse each fillet well under cold water then pat completey dry using paper towels.
- Spray one side of each piece of foil with cooking spray. then place one salmon fillet onto each piece coated foil.
- This is only optional; brush the top of each fillet with a light coat of olive oil.
- Sprinke each fillet with lemon pepper, salt and dried dill (to taste).
- Top each fillet starting with the chopped sun-dried tomatoes, then olives, feta and sprinkle about 2 tablespoons toasted pine nuts on top.
