FRESH FIGS STUFFED WITH CREAM CHEESE
Rich taste of sweet tasting fresh figs combined with creamy cheese is a perfect summer delight, try it, you are not going to regret it.

Steps:
- 1 Cut off steams from the figs and cut them to 1/3 of height in x shape. Place figs on a baking paper. Incorporate honey into cream cheese. Fill the gap on the figs with one teaspoon of cream cheese. Bake it in oven preheated to 435F (220C). Cook milk and sugar in a sauce pan until start to thickens, then remove from the heat and add the butter. Pure the warm caramel over the figs before serving.

FIG, CREAM CHEESE AND MINT TART

- Preheat the oven to 350 degrees F (180 degrees C).
- Roll out the pastry on a floured counter to the thickness of a 1-cent piece and use it to carefully line the pan. Homemade pastry is short and so will be quite crumbly. Don't be alarmed by this, you can patch it together in the pan. Take a small ball of the pastry (the size of a nickel) and use it to gently ease the dough down into the pan. Press the handle of a wooden spoon against the pastry all round the edges to coax it into the fluted grooves. Trim off the excess around the top and run a thin knife around between the pastry and the edge of the pan to loosen. Put in the refrigerator for about 15 minutes, or until firm.
- Remove the tart from the refrigerator. Take a piece of parchment paper slightly larger than the pan and scrunch it up, then unscrunch it and line the pan with it. Fill it with pie weights or dried beans and "blind bake" in the oven for 20 to 25 minutes, or until the pastry feels sandy to the touch. Remove the paper and bake for an additional 5 minutes. Remove from the oven and set aside.
- For the filling, put the cream in a bowl and whip until beginning to thicken, then fold it into the cream cheese and mix with the honey and Marsala, if using. Put the filling in the tart case, then arrange the figs on top and scatter over the nuts and mint. Serve with a sweet wine such as Asti.
- Figs and mint are delicious, so sprinkling some torn mint leaves over the tart works really well. This tart is best eaten on the day it is made.
FIGS POACHED IN MADEIRA WITH CREAM CHEESE & RICOTTA SAUCE
This is something I created when our local supermarket has beautiful figs from Turkey on sale. While the figs are poaching you can prepare the sauce. This make four servings.

- In a large saucepan place the figs so that they are all standing upright. Sprinkle the figs with the sugar and the cinnamon. Add enough of the Madeira so that it comes about half way up the sides of the figs. Place the pan, covered, over low heat and poach for 40 minutes. Remove the figs from the pan, then return the pan to the stove and on high heat boil down the liquid in the pan until it has thickened somewhat and is glossy-this should take about 10 minutes or so. Pour the reduced liquid over the figs and store them in a covered flat-bottomed storage container in your refrigerator until they are chilled. Meanwhile prepare the sauce.
- Sauce: In your food processor blend the cream cheese, Ricotta cheese, tsp cinnamon, and 4 TBS sugar until well-blended. Store this in the refrigerator until ready to use.
- Final Preparation: Place 3 figs in each serving dish, spoon some of the liquid in which they have been stored over them, then top with some of the cheese mixture.

- Add figs to the container or a food processor; finely chop.
- Add in the cream cheese; process until combined.
- Add in the walnuts and salt; pulse just to blend.
- Scrape mixture into a bowl.
- Add in the scallions, if desired; stir to combine.
- Note--to finely chop figs in a food processor, lightly brush or spray the inside of the processor bowl and metal blade with vegetable oil; if the figs are unusually dry, reconstitute them in boiling water for 10 minutes, drain, and blot dry before chopping.

- Lightly spoon flour into a dry measuring cup; level with a knife.
- In a bowl, combine flour, brown sugar, and salt, stirring well with a whisk.
- Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Press mixture firmly into a 13 x 9-inch baking dish coated with cooking spray.

- Preheat oven to 375°. Cut bacon strips in half crosswise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Cut a lengthwise slit down the center of each fig; fill with 1/2 teaspoon cream cheese. In a small bowl, mix brown sugar, chile blend powder and cinnamon. Dip one side of each bacon piece in brown sugar mixture; wrap each fig with a bacon piece, sugar side out. Secure with a toothpick., Transfer to a greased 15x10x1-in. baking pan.
