FIESTA CHICKEN SANDWICH
This is a copy cat of a sandwich on Eat N Park's menu, one of my favorites! Very quick and easy. Substitute low fat cheese for a healthier version. Also good without the bun for a main course, served with Spanish rice. I use my George Foreman grill to cook the chicken, but you can use an outdoor grill or skillet.

Steps:
- Preheat oven to 350°F.
- Place cooked chicken breasts on baking sheet.
- Spoon desired amount of salsa onto chicken, spread to cover whole breast.
- Sprinkle cheddar cheese on top.
- Place in oven for 5-8 minutes, or until cheese is completely melted.
- While chicken is baking, place buns on broiler rack to gently toast.
- Remove from oven, place on bun. Add dollop of sour cream on top.

Steps:
- Cook chicken in oil in a large nonstick skillet on medium heat 5 to 7 minutes or until no longer pink, stirring frequently.
- Add pasta, hot water, tomatoes with their liquid and the cumin; mix well. Bring to a boil. Reduce heat to medium-low; cover and simmer 10 minutes.
- Stir in beans and contents of the Cheese and contents of the cheese pouch; cook until heated through, stirring occasionally. Sprinkle with onions. Serve with a heaping tablespoon each of sour cream and salsa on the side, if desired.
- NOTE: Use your favorite beans, such as kidney or black beans and you can substitute 1/4 cup chopped fresh cilantro for the green onions.

Steps:
- Cut chicken breasts into 1/2-inch strips.
- Heat 5-qt sauce pan with tight fitting lid over medium-high heat. Spray pan with non-stick spray and add chicken. Cook until chicken is fully cooked, about 5 minutes.
- Add onion, red bell pepper, and chili powder. Mix well and continue to cook 2 minutes more.
- Add rice, water, salsa, and corn. Mix well and bring to a boil. Cover and reduce heat to simmer. Simmer 30 minutes.
- Remove from heat, top with cilantro and keep covered 5 minutes more or until ready to serve.

MEXICAN FIESTA CHICKEN
This can be prepared in a crock pot or on the stove. I would suggest not adding the chicken until the last hr or so to prevent over cooking.

Steps:
- Sweat onions until soft.
- Add jalopenos, continue to cook for a minute or two.
- Add corn, both beans, tomatoes, salsa, seasonings.
- Cook for about an hour over med/low heat (should just be simmering.) Add cilantro, then taste. Adjust seasoning to your preference.
- Add chicken, simmer until chicken is cooked through.
- serve over brown rice. I personally like to put a tortilla in a bowl, then rice then top the rice. Garnish with cheese and sour cream.

FIESTA CHICKEN
Fast, Fast, Fast- This dish takes less than 30 minutes start to finish. My DS loves it. Left over chicken can be used to reduce cooking time even further. We sometimes prepare this with angel hair pasta in place of the spaghetti.

Steps:
- In a large deep skillet, cook chicken breasts in 1 tbsp of oil until cooked through and no longer pink.
- While chicken is cooking --
- Bring 2 quarts of water to a boil and cook spaghetti 11-13 minutes. If substituting a different pasta for the spaghetti, cook according to package directions.
- Drain spaghetti and keep warm.
- When chicken is done, leave in skillet and slightly pull chicken breasts apart into a few larger sized pieces (or bite sized pieces if you prefer) with 2 forks, or use left over chicken cut into bite sized pieces.
- Add salsa to the skillet, stir and heat through.
- Stir in Sour Cream, and 1/2 of the cheddar cheese. Warm a minute longer on low heat.
- Serve over cooked spaghetti, and sprinkle with remaining cheese.

FIESTA BAKED CHICKEN
This recipe is from the Great American Home Baking series and is fairly quick, very easy and quite tasty. I actually never use the onion or olives, but I'll give the full recipe.

Steps:
- Preheat oven to 350°F Lightly spray a 13 X 9 inch baking dish with nonstick spray.
- Combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. Mix well.
- Coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
- Place seasoned chicken in baking dish.
- Remove the seeds from the bell pepper. Cut the bell pepper and onion into 2-3 inch strips.
- Arrange the vegetable strips and olives around chicken. Spoon salsa evenly over veggies.
- Bake until chicken is cooked through and juices run clear; ~20-25 minutes.
- Serve with tortillas and rice.
