Vegetable oil cooking spray
2 tablespoons extra-virgin olive oil
2 medium fennel bulbs, outer layers removed, chopped
1 medium onion, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
One 28-ounce can diced tomatoes
One 15-ounce can cannellini beans
One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces
1 cup low-sodium chicken broth
4 turkey or chicken Italian sausage links

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a grill pan with vegetable oil cooking spray.
  • In a Dutch oven, heat the oil over medium-high heat. Add the fennel, onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly, until the vegetables are soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight fitting lid and transfer to the oven. Cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes.
  • While the stew is cooking, place a grill pan over medium-high heat or preheat a gas or charcoal grill. Add the sausages and grill, turning occasionally, until cooked through, about 20 minutes. Cool and cut into 1/2-inch-thick slices.
  • Remove the pan from the oven and add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt. Spoon the stew into bowls and serve.

2 (19 ounce) packages Johnsonville Mild Italian Sausages
2 cups dried cannellini beans, sorted and rinsed
7 cups water
10 fresh sage leaves, divided
1 medium roma tomato, cored and cut in half
1/4 cup olive oil
3 garlic cloves, minced
1 cup finely chopped onion
2/3 cup finely chopped carrot
2/3 cup finely chopped celery
1/8 teaspoon red pepper flakes
1 (15 ounce) can crushed tomatoes
1 1/2 cups chicken stock
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup mascarpone, cheese*

Steps:

  • In a large bowl, pour beans, add water to a level of 3 inches above beans and soak for 6 hours or overnight.
  • Drain.
  • Place beans in a soup kettle or Dutch oven; add 7 cups of water, 5 sage leaves and tomato. Bring to a boil; reduce heat and simmer uncovered for 1-1/2 to 2 hours or until beans are almost tender.
  • Drain and reserve beans; discard liquid, sage and tomato.
  • In a large saucepan, heat oil over medium heat.
  • Add garlic, remaining sage, onions, carrots, celery, red pepper flakes and sauté until tender. Add beans, crushed tomatoes, stock, salt and pepper.
  • Cover, reduce heat to low, continue to cook for 15-20 minutes.
  • Meanwhile in a large skillet, prepare sausages according to package directions.
  • Drain.
  • Cut sausage links into thirds.
  • Just before serving, gently stir mascarpone cheese into beans. Spoon prepared beans into individual bowls and top with sausage pieces.
  • Garnish with additional fresh sage. Serve.
  • *1/3 cup cream cheese, cubed, may be substituted for mascarpone cheese.

1 (22 1/2 ounce) can cannellini beans, drained
2 tablespoons extra virgin olive oil
3 cloves garlic, lightly crushed and peeled
1 tablespoon fresh sage leaf
1 1/4 cups canned whole peeled tomatoes, coarsely chopped (with their juice)
salt
freshly ground black pepper
1 lb sweet Italian sausage link, thickly sliced

Steps:

  • Put the olive oil and garlic in a heavy saucepan that will hold the sausage in a single layer.
  • Place it over medium-high heat and saute the garlic cloves until lightly browned on all sides.
  • While garlic is browning, coarsely chop the fresh sage.
  • When the garlic has browned, discard it.
  • Add the sage to the pan and cook, stirring, for about 1 minute.
  • Add the tomatoes and beans.
  • Season with salt and pepper.
  • Add the sausage.
  • When tomatoes begin to bubble, turn the heat down to medium-low.
  • Cover the pan and cook at a gentle simmer until the sausages feel tender when pricked with a fork, about 20 minutes.
  • Check the pan occasionally and add a little water if all the liquid evaporates before the sausages are done.

1 lb hot Italian sausage links or 1 lb sweet Italian sausage link
1 tablespoon olive oil
2 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
1 (16 ounce) can cannellini beans, drained
1/2 small onion, finely diced
3/4 cup heavy cream
1/2 cup freshly grated parmesan cheese, divided
1 teaspoon lemon rind, freshly grated
1 tablespoon fresh lemon juice
1/4 teaspoon nutmeg
salt and pepper
1/3 cup dry breadcrumbs
1 garlic clove, minced
4 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Brown sausages in oil till done, drain and slice into rounds.
  • In large bowl, combine sausage, spinach, beans, onion, cream, 1/4 cup of the Parmesan cheese, lemon peel and juice, nutmeg, and salt and pepper.
  • Turn mixture into a greased 2 qt casserole.
  • In small bowl, mix bread crumbs, remaining 1/4 cup cheese, garlic and melted butter.
  • Sprinkle on top of casserole.
  • Bake uncovered 35 minutes, or until heated through.

1 tablespoon olive oil
2 pounds mild Italian sausage links, casings removed
1 small onion, chopped
2 tablespoons garlic, minced
1 (32 ounce) carton beef stock
2 cups water
4 cubes beef bouillon
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can cannellini beans, drained and rinsed
1 (15.5 ounce) can dark red kidney beans, drained and rinsed
1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 (14.5 ounce) can cut green beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (14.5 ounce) can sliced carrots, drained
½ (6 ounce) can tomato paste
1 (1.25 ounce) package beefy onion soup mix
1 ½ cups shredded cabbage
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon ground black pepper, or to taste
1 teaspoon salt, or to taste
1 cup shell pasta
¼ cup shredded Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, onion, and garlic; cook and stir until sausage is browned and crumbly and onion is translucent, 8 to 10 minutes.
  • Pour beef stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add water and bouillon cubes.
  • Add tomato sauce, cannellini beans, kidney beans, garbanzo beans, green beans, diced tomatoes with juice, carrots, tomato paste, soup mix, cabbage, garlic powder, Italian seasoning, pepper, and salt. Reduce heat to medium and simmer for 40 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain.
  • After soup has cooked for 40 minutes, add cooked shells. Simmer for another 5 minutes. Ladle into bowls and top with shredded Parmesan cheese.

This is total comfort food at it's best! You can sub the rotini pasta for medium shells but rotini is better. This recipe is made with roasted garlic, so if you are planning to make this wonderful dish, roast your garlic bulb way in advance or even a day ahead and refrigerate, I roast my garlic and store it in the freezer in small containers. You can use turkey sausage for this in place of Italian sausage.... This is a fantastic Italian-style dish. Cooking time does not include roasting the garlic.

1 large bulb of garlic (roasted and skins removed)
3 large garlic cloves, thinly sliced
1 lb Italian sausage, casings removed
1 onion, chopped
1 jalapeno pepper, seeds removed and finely chopped (or use 1/4 teaspoon hot pepper flakes)
1 (14 ounce) can diced tomatoes with juice
1 (19 ounce) can cannellini beans, drained and rinsed
2 cups chicken broth
1 cup white wine (or use 3 cups chicken broth)
3/4 lb rotini pasta (cooked al dente, drained, then tossed with 3 tbsp oil)
1 teaspoon dried basil (or to taste) or 1/4 cup fresh basil (or to taste)
1/4 cup chopped fresh parsley (or to taste)
1/3 cup grated parmesan cheese (or to taste) or 1/3 cup romano cheese (or to taste)

Steps:

  • Squeeze the roasted garlic from skins and mash with a fork in a small bowl.
  • Heat about 3 tablespoons olive oil in a skillet over medium heat.
  • Cook sausage meat, stirring and breaking up with a fork until browned (about 4-5 minutes).
  • Add in sliced fresh garlic, onion, dried basil and jalapeno or crushed red pepper flakes and cook, stirring until onions are soft (about 2 minutes).
  • Stir in tomatoes with juice, drained beans, roasted garlic puree, stock and wine; simmer uncovered, stirring occasionally for about 25-30 minutes or until slightly thickened and reduced by almost half (could take longer or shorter that 30 minutes until the liquid is reduced).
  • Toss the pasta with the cooked sausage mixture, fresh chopped parsley, Parmesan cheese (and salt to taste) in a large bowl, or until well combined.
  • Sprinkle with more Parmesan cheese.
