This is really a take off from my previous sauce of mine Berginie Linguine Sauce for two. Looking in the fridge & cupboard forced me to come up with a variation . I like this one better.

Ingredients

250 g whole wheat linguine or 250 g other pastas, of your choice
6 slices bacon, chopped
12 medium mushrooms, sliced
3 hot chili peppers, seeded,deveined and chopped
1 teaspoon dried basil
6 sun-dried tomatoes packed in oil, drained & chopped
3/4 cup mild salsa, your choice
salt & pepper
parmesan cheese

Steps:

Cook Pasta according to instructions, plan to have it ready just as the sauce is finished.
Fry chopped bacon until almost crisp, drain fat.
Add mushrooms and saute for apprx 5 minutes.
Add Chilies, basil, sundried tomatoes and saute until heated through apprx 5 minutes.
Add salsa heat until bubbling.
Pour over drained cooked pasta & toss.
Sprinkle with parmesan cheese & I hope enjoy.

A delicious quick recipe that all ages will enjoy. There are plenty of options to consider with this recipe to customize. I found this on the back of a Hunt"s can but couldn't find the recipe on their website.

Ingredients

olive oil flavored cooking spray
1 -1 1/4 lb chicken breast
1 (26 1/2 ounce) can pasta sauce with mushrooms
1 (14 1/2 ounce) can diced tomatoes with mushrooms
1 (9 ounce) package refrigerated fettuccine pasta
1/4 cup heavy cream
2 tablespoons of grated parmesan cheese (recipe called for this-I used alot more!!)

Steps:

Spray large skillet with cooking spray. Cook Chicken breasts until browned on both sides, and no longer pink. About 8-10 minutes. Remove from skillet: keep warm.
Stir together spaghetti sauce and tomatoes in skillet. Add pasta. Bring to a boil. Reduce heat: simmer over low heat 10 minutes or until pasta is tender.
Add cream and stir until blended. To serve, portion pasta onto individual serving plates, Slice each chicken breast into strips, place on top of pasta. Sprinkle with cheese.
