This richly flavorful Smoked Salmon Fettuccine Alfredo is a shining example of simple ingredients combining to make extraordinary dishes! 8 oz fettuccine pasta
2 cups heavy cream
1/2 cup butter ((1 stick of butter, or 8 tablespoons))
1/2 tsp garlic powder ((or 1 teaspoon minced garlic))
1 cup Parmesan cheese ((grated))
1/4 cup Romano cheese ((grated))
4-6 oz smoked salmon ((4 ounces if mixed in, 6 ounces if you'd like to garnish with more when serving))
dill weed ((optional))

Steps:

  • Boil the pasta in a large saucepan or pot of salted water according to the package instructions. For perfectly al dente pasta, check the pasta texture 1-2 minutes before the full cooking time (per boxed instructions). Remove from heat when done, drain pasta, and set aside.
  • In a large frying pan or non-stick skillet, warm the heavy cream over medium heat. Once the cream is warmed (and has formed a skin over the top) add the butter and melt into the cream.
  • Add the grated Parmesan and Romano cheeses (you can also use Parmesan cheese, or a Parmesan and Romano blend) stirring until the cheese is fully melted. Add the garlic powder, taste, and add salt and pepper if desired.
  • Add the smoked salmon (flaked or cut into small pieces) into the sauce once the cheese is melted and simmer for 2 minutes, or until the alfredo sauce thickens slightly.
  • Toss the pasta in the alfredo sauce, either in the skillet with the sauce, or add the sauce to the saucepan of pasta. Coat thoroughly and serve immediately.
  • Portion out the smoked salmon fettuccine alfredo and garnish with more smoked salmon, fresh dill weed, and freshly grated Parmesan cheese.

1/2 large sweet onion (like Vidalia or Walla-Walla, diced)
1 tablespoon butter
1 large bunch of dill (de-stemmed and chopped)
8 ounces cold smoked salmon
1 cup heavy cream
1-2 tablespoons lemon juice
8 ounces linguini

Steps:

  • Cook the pasta in plenty of water until it is done. Consider not adding salt to the water this time, since the salmon sauce may be on the salty side.
  • To make the salmon dill cream sauce, sauté the onion in butter over medium high heat until golden brown. Reduce heat a bit and add the dill, salmon and cream. Gently heat until the cream is infused and stir until the salmon flakes. Add the lemon juice and stir.
  • Gently toss the pasta in the warm sauce and voila! Ready to serve.

9 oz (255 g) fettuccine
1 carton (480 mL) CAMPBELL'S® Stock First™ Cream Stock
3 Tbsp (45 mL) vodka
2 Tbsp (30 mL) fresh dill, chopped
3 oz (85 g) smoked salmon, sliced into strips
4 cup (300 g) fresh baby spinach, whole

Steps:

  • Cook fettuccine according to directions on box.
  • Gently simmer stock over medium heat in a large heavy bottom sauce pot and stir in vodka and dill. Cook the sauce for 3-4 minutes.
  • Add cooked, drained pasta, smoked salmon and spinach, gently stir to coat pasta.
  • Divide evenly on pasta plates or serve in warmed serving bowl.

1/2 lb dry fettuccine pasta
1 (8 ounce) package cream cheese
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
1 pinch ground nutmeg
red pepper, cut
1 tomatoes, seeded and cut
mushroom, cut
smoked salmon, broken into little pieces

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 mis or until al dente; drain.
  • In a medium saucepan, combine cheeses, margarine, milk, garlic powder, basil and stir over low heat until smooth and creamy about 10 to 15 minutes.
  • Toss sauce vegetables, smoked salmon, sauce and pasta in a large bowl.
  • Sprinkle with nutmeg.

Over the years I have tweeked it to the recipe it is today. I have used fresh salmon in place of smoked salmon when I have not been able to get smoked salmon, and it was very good as well. Served with a salad it makes a very lovely meal.

1/4 cup olive oil
1 cup mushroom, sliced
2 shallots, sliced thinly
1 garlic clove, minced
1 pinch cayenne
1/3 lb smoked salmon, cut into 2-inch pieces
1/4 cup white wine
1 cup heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest, grated
3 tablespoons capers, drained
1 teaspoon parsley
1 lb linguine or 1 lb spaghetti
1/2 cup parmesan cheese, freshly grated
salt and pepper

Steps:

  • Cook Pasta as directed. Drain.
  • Meanwhile, in a large skillet, heat oil. Add mushrooms, shallots, garlic and cayenne. Saute until veggies are tender.
  • Add white wine and bring to boil. Add cream and bring to boil. Let simmer for 3minutes.
  • Add lemon juice, lemon zest and salmon. Bring to boil and let simmer 1 to 2 minutes.
  • Add capers, parsley, salt and pepper. Mix well.
  • Pour salmon mixture onto hot drained pasta. Toss to mix. Add Parmsean and toss well. Let set for 2 minutes as pasta will absorb any extra liquid.
  • Serve.

  • Heat the butter and olive oil together in a frying pan and fry the onions until golden.
  • Add the peas and cook for 3 minutes.
  • Add the salmon, season with salt and freshly ground black, pepper and cook for a further 2 minutes.
  • Stir in the cream and cook for a further 2-3 minutes.
  • In the meantime, cook the pasta in plenty of boiling, salted water until al dente. Drain, and then then add to the sauce.

Serve with a big loaf of garlic bread and your guests will be in heaven. It serves 4 people (well, normal people- my husband can eat more than half of this himself) but you can easily double for a larger crowd.

1 lb bow tie pasta (farfalle)
3 tablespoons butter
3 tablespoons purple onions, diced
2 teaspoons garlic, minced (or more)
8 ounces smoked salmon, flaked into chunks
4 -6 ounces vodka (start with 4 the first time and adjust up if you like more next time)
3 cups heavy cream
3/4 cup tomato sauce
1 teaspoon dried basil
salt and pepper

Steps:

  • Boil water and cook pasta according to package directions. DO NOT ever add oil to the water! It will make the sauce slide off the pasta later.
  • In a medium saucepan, melt butter and add onion and garlic. Cook over medium heat until onion starts to sweat and soften. Add salmon and cook until it starts to cook a little, about 2-3 minutes. Add vodka and flame off alcohol.
  • Add the cream, tomato sauce, basil, salt and pepper. Bring sauce to a boil and simmer, reducing until it is thick, about 8 minutes or so.
  • Serve over pasta and enjoy! Pass the grated cheese on the side.
