Steps:
- Place the slices of sweet potatoes into a microwave safe dish, and add just enough water to cover. Cook for 10 minutes in the microwave, or until starting to become tender.
- Preheat the oven's broiler. Place the sweet potato slices onto a greased broiler pan. Slice the feta cheese the best you can, and place a piece on top of each potato slice. Drizzle balsamic vinegar over all.
- Place under the preheated broiler for about 6 minutes, or until cheese is lightly browned.

- 1. Peel red skin potatoes and add to a large pot, cover with water, add 1 tablespoon of kosher salt, and bring to a boil and cook about 15-20 minutes, until tip of a knife can be inserted into the center and easily released.Drain in colander, set aside to cool and can be sliced as needed. MAY ALSO USE 2 % MILK INSTEAD OF EVAPORATED MILK IF DESIRED.
- 2. While potatoes are cooling add olive oil to a large skillet then add in the sliced onions and mini pepper rings, saute until onions become translucent and begin to wilt slightly. Remove and set aside.
- 3. Preheat oven to 350 degrees F. Spray a 9 X13 size casserole dish with non stick cooking spray. Then slice enough cooled potatoes to cover the bottom of the casserole dish. Top with 1/3 of the cooked peppers and onions, then top with about 1/3 of the feta cheese.
- 4. To make the sauce, add the butter to a large skillet or pot, then add in the wondra or all purpose flour, and stir or WHISK till flour and butter is blended together evenly over medium high heat. Add in the milk and water, and spices, whisk until mixture begins to thicken, & will coat the back of a spoon. Pour about 1/3 of sauce over the first layer of potatoes, then top with 1 cup of shredded cheddar cheese.
- 5. Repeat until you have used all of the cheeses, peppers and onions, sauce & potatoes to fill the casserole dish.
- 6. Top with French Fried Onion Rings, then place in preheated 350 degree F. oven and bake for 35-40 minutes until potatoes are hot throughout, and bubbly along edges, and cheese is melted on top.NOTE: TO PREVENT ONION RINGS FROM OVER BROWNING, ADD THEM ON TOP DURING THE LAST 15 MINUTES OF BAKING IN OVEN IF DESIRED.

- Preheat the oven to 400°F. Scrub, rinse and dry the sweet potatoes. Pour a little olive oil on to your palms and rub this over the unpeeled sweet potatoes.
- Next, rub in some coarse salt. Pierce the sweet potatoes a few times on all sides using a small sharp knife, then wrap them in tin foil and bake for an hour (or a little longer, if necessary) until done. Use half of them immediately and leave the rest to cool.
- Place the sweet potato(es) on a plate and open the foil. Cut in half lengthways, then press on the outside of the halves so that the fluffy flesh bulges out slightly. Crumble the feta over the sweet potato(es), top with the olives, chile pepper and cilantro, and drizzle generously with olive oil.

- 1. Start with a large non stick skillet, I used a 16 inch size.
- 2. Add 1/4 cup of butter plus 2 tablespoons of olive or canola oil. Turn fire to medium high heat.
- 3. Peel wash & cube potatoes.
- 4. Chop onions and add potatoes, chive & onions to skillet. If using fresh chive do use more than a tablespoon full.
- 5. Season Potatoes with spices, more if you prefer, I tend to use less salt because the feta tend to be a bit salty, but use your own judgement.
- 6. Add both chopped peppers and garlic to skillet. May need to add a small amount of water to prevent potatoes from sticking.
- 7. Stir potato mixture to blend together. Continue to cook over medium high heat, till potatoes and peppers are tender about 15 to 18 minutes or so.
- 8. Add the crumbled Feta and shredded mozzarella if using and stir to blend with the potatoes. Cover with lid and allow cheeses to melt slightly. Add your favorite Entree.
- 9. Add your favorite Entree.
- 10. Serve and enjoy your dinner.

- Preheat the oven or toaster oven to 375 degrees F. Line a small sheet pan with parchment paper or foil and set aside.
- Poke the sweet potatoes all over with a fork. Microwave the sweet potatoes until they feel soft when gently squeezed, 5 to 6 minutes. Allow to cool slightly. Cut in half lengthwise, creating oblong shapes. Select the nicest two halves for using as the base. Scoop them with a teaspoon, leaving a 1/4-inch border and placing the pulp in a mixing bowl. Place the bases on the lined sheet pan. Scoop out the other two halves completely and add the pulp to the mixing bowl, discarding the skins. Add the white scallions, coconut oil, paprika, 1/8 teaspoon salt and some freshly ground black pepper. Mash with a fork until smooth. - Peel the potatoes, cut into chunks and boil until tender.
- Drain and mash (without butter or milk) until smooth and leave to cool for a few minutes.
- Meanwhile, put a little of the oil in a frying pan and when it is heated, add the red pepper and salmon fillet.
- Use a fork to break the salmon into pieces, then cook the fish until it is flaky and the red pepper until it is soft, about five minutes.
- When the mash is cool, season it generously with black pepper and then sift the flour over the top.
- Use a wooden spoon to mix the flour in until it disappears.
- Whisk the egg and add it to the mixture, stirring well.
- Crumble the feta over the top and snip the chives into the bowl.
- Finally add the red pepper and salmon and stir again to mix evenly.
- Dust your hands with flour and form the mixture into patties.
- You can make 12 cookie sized patties or 6 larger cakes.
- Add the rest of the oil to the frying pan and, when very hot, lay out some of the potato cakes but be careful not to overcrowd the pan.
- Fry for three minutes to form a thin, crisp layer, then carefully turn to cook the other side.
- Keep warm in the oven while you finish cooking.
- Serve dusted with parmesan and sprinkled with a few extra chives.
- By the way, if you find forming the patties difficult, you can also just drop the potato mixture into the pan for more irregular but less messy fish cakes.

We took inspiration from the wildly popular baked feta pasta recipe of TikTok fame and reimagined it to create a big-batch thanksgiving side dish. The best part is no more boiling water and crowding your stovetop. Instead, we put all the ingredients together in one dish and then bake it in the oven. Cooking the dish covered helps simmer and steam the potatoes at the same time, making them smooth and fluffy when mashed. The baked feta bubbles and melts into the potatoes to lend a subtle and delicious tanginess.

- Preheat the oven to 400 degrees F. Grease a 9-by-13-by-2-inch (3.75-quart) casserole dish with butter.

- To prepare these amazing potato gratin recipe, finely chop the onion and garlic. Into a hot pan, add 2 tbsps of olive oil and sauté the onion and garlic, until tender. Add the honey and oregano and stir. Set aside.
- For the béchamel sauce, melt 2 tbsps of butter into a deep pan, over medium heat. Add the flour and whisk to make a paste. - Cover with aluminium foil and bake in preheated oven at 180C for 1 hour 30 minutes. Remove the foil the last 30 minutes, so that the potatoes are nicely coloured.
