2 tablespoons extra-virgin olive oil
2 long sweet red peppers, stemmed, seeded and chopped
1 1/4 cups crumbled feta
4 ounces cream cheese
Crackers, for serving

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat olive oil over medium-high. Add peppers; cook, stirring, until tender, about 7 minutes. Transfer to a food processor with feta and cream cheese; pulse. Spread into a 6-inch ovenproof skillet. Bake until bubbly, about 10 minutes. Serve with crackers.

1/4 cup extra-virgin olive oil

Steps:

  • Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and quarter peppers. Puree peppers, oil, garlic, and cheese in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

3 tablespoons kosher salt, plus more to taste
2 pounds russet potatoes, cut into wedges
3 tablespoons unsalted butter, melted
Freshly ground black pepper
One 8-ounce jar roasted red bell peppers (see Cook's Note)
2 ounces feta, coarsely chopped
3/4 cup toasted walnuts or almonds
2 tablespoons olive oil
1 tablespoon honey
2 teaspoons lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper
1 clove garlic
Kosher salt and freshly ground black pepper

Steps:

  • For the fries: Dissolve the salt in a large bowl of cold water and add 1 cup of ice cubes. Submerge the potato wedges and soak for 20 minutes.
  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and set aside.
  • Drain the potatoes and pat them dry. Toss them in the butter and season with salt and pepper. Transfer them to the prepared baking sheet and bake, tossing halfway through, until browned, about 1 hour. Add additional salt and pepper if desired.
  • For the feta-red pepper dip: Combine the bell pepper, feta, nuts, olive oil, honey, lemon juice, cumin, crushed red pepper, garlic, a pinch of salt and a few turns of black pepper in a food processor and blend until smooth. Taste and adjust seasonings as desired.
  • Top the fries with the feta-red pepper dip and serve.

1 fresh chili pepper, seeded and minced, or 1/2 teaspoon dried red pepper flakes
1 clove garlic, peeled and minced
1 1/2 cups crumbled soft feta cheese
2 grilled or roasted red bell peppers, peeled, cored, seeded and coarsely chopped

Steps:

  • Heat oil in a small skillet over medium heat. Add chili and cook for 1 minute. Stir in garlic and remove from heat. Let cool for about 3 minutes.
  • Place the feta and the red peppers in a food processor and process until smooth. Add the chili-oil mixture and process until well combined. Scrape the spread into a bowl and serve.

1/2 cup mayonnaise
1/2 cup pickled pepper, sliced

  • Blend feta, cream cheese and mayonnaise in a food processor until smooth, scraping the sides of processor a couple of times to make sure it all gets blended.
  • Put blend in bowl and fold in peppers, scallions, lemon zest and black pepper.

  • Combine the first five ingredients in the food processor and process until smooth.

230 grams Greek Anthotyro or Ricotta cheese
1 teaspoon lemon juice fresh
4 tablespoons extra virgin olive oil
1 large roasted red pepper
1 teaspoon chopped chili peppers

Steps:

  • Cut the feta cheese into small cubes and add to a food processor together with the Anthotyro cheese (or Ricotta), 2 tablespoons of olive oil, and fresh lemon juice. Blend well for at least 5 minutes until completely smooth and creamy.
  • Transfer to a large bowl.
  • Now add to the food processor (no need to wash it) the roasted red pepper, chili peppers, and the 2 remaining tablespoons of olive oil. Blend until almost smooth.

6 ounces roasted red pepper, drained and dried
1/2 teaspoon Calabrian chile paste
1/4 teaspoon kosher salt
1 clove garlic, grated
8 ounces French feta (or other good-quality feta)

Steps:

  • Add the roasted red pepper, Calabrian chile paste, salt and garlic to the bowl of a food processor. Pulse until the mixture is chunky and evenly chopped. Using your hands, break the feta up into large chunks and add it to the food processor. Pulse the mixture until the feta is incorporated into the pepper mixture. (The mixture should remain slightly chunky.) Refrigerate for at least 30 minutes for the flavors to come together. Serve with crackers, veggies, on sandwiches or burgers.
