12 medium beets, trimmed
2 tablespoons grated orange peel
1 tablespoon Dijon mustard
1 tablespoon fennel seeds, crushed
1/3 cup balsamic vinegar
1 cup olive oil
6 fennel bulbs, trimmed (fronds reserved), halved lengthwise, thinly sliced crosswise
12 large navel oranges
1 1/2 cups halved pitted Kalamata olives

Steps:

  • Preheat oven to 400°F. Wrap beets in foil. Place on baking sheet. Roast beets until tender, about 1 1/2 hours. Cool. Peel beets; cut into rounds.
  • Mix orange peel, mustard and fennel seeds in bowl. Whisk in vinegar. Gradually whisk in oil. Season with salt and pepper. (Beets and dressing can be made 1 day ahead. Cover separately; chill. Bring dressing to room temperature before using.)
  • Place fennel slices in bowl. Toss with enough dressing to coat. Cut peel and white pith from oranges. Cut oranges into rounds. Alternate beets and oranges along edge of platters, overlapping. Spoon fennel slices into center; sprinkle with olives. Drizzle remaining dressing over beets and oranges. Chop fronds; sprinkle over salad.

2 heads fennel, halved lengthwise, cored and thinly sliced lengthwise, and 1 tablespoon roughly chopped fennel fronds
3 navel oranges
3/4 cup pitted kalamata olives, halved
1 tablespoon sherry-wine vinegar
1 teaspoon shallot, minced
3 tablespoons extra-virgin olive oil
Pinch of coarse salt
Pinch of freshly ground pepper

Steps:

  • Remove peel and pith from the oranges using a sharp paring knife. Working over a bowl to catch the juice, carefully cut between membranes, to remove segments. Squeeze remaining membrane to extract juice, reserving 1 tablespoon.
  • In a medium bowl, combine orange segments, fennel, fennel fronds, and olives; set aside.
  • In a small bowl, whisk together reserved orange juice, vinegar, shallot, oil, salt, and pepper. Drizzle over salad, tossing gently to combine. Serve immediately.

2 tablespoons chopped fresh mint
1 tablespoon chopped cilantro
2 tablespoons lemon or lime juice

2 pounds fennel bulbs
3 to 4 oranges
1/4 cup good olive oil
2 lemons, juiced
Kosher salt
1/4 teaspoon freshly ground black pepper
2 ounces arugula

Steps:

  • Cut the fronds from the fennel bulbs and reserve some of the feathery leaves for later. Cut each fennel bulb in half and remove the cores with a sharp knife.
  • Fit a food processor with the thinnest slicing blade. Cut the fennel bulbs into wedges and place horizontally into the feed tube. Process in batches. Peel each orange, remove the pith with a knife, and slice. Set aside.
  • For the dressing: Whisk together the oil, juice, 1 teaspoon salt and the pepper in a small bowl. Place the fennel slices, oranges slices and arugula in a large bowl. Pour the dressing over the salad and toss together. Sprinkle with salt and add some fennel fronds for decoration.

Roasted Beet and Fennel Salad With Black Olives & Pine Nuts image

Adapted from a recipe by Andrew Carmellini. This is a festive salad that can be also be served over pasta. I simplified the recipe and changed some of the ingredients to make a milder tasting salad. The beets can be roasted and refrigerated for up to 3 days prior to serving. Use gloves during beet preparation to avoid staining your hands. Great for gatherings, The salad components can be prepared up to 3 hours in advance and combined before serving, and the salad keeps well at the table for buffet.

3 -4 beets
1 large fennel bulb
4 garlic cloves
1/2 red onion
1/2 lemon
1/2 teaspoon rosemary
1 tablespoon balsamic vinegar
3 tablespoons extra virgin olive oil
1/2 cup black olives
3 tablespoons pine nuts
1/4 cup pecorino romano cheese
salt
pepper

Steps:

  • Pre-heat oven to 350. Cut the tops off the beets and reserve for another use or discard. Rinse the beets and wrap each in aluminum foil. Place the beets on a baking sheet and roast for 1 hour. Allow to cool and refrigerate in the foil for up to 3 days before use.
  • Remove beets from the foil, cut off the stems and tail and slide off the peel. Cut the beets into a rough julienne = 1/8" x 1 1/2".
  • Mince the garlic and rough chop the rosemary. Finely slice the onion. Toss the beets in a bowl with the onion, 1/2 of the garlic, the rosemary, the balsamic vinegar and 1 tbs olive oil. Salt and pepper to taste and put aside.
  • Remove the top from the fennel bulb and put aside for another use or discard. Slice the bulb finely and place in a bowl with ice water for a moment to crisp then drain and spin in a salad spinner to dry.
  • Place the fennel in a bowl and zest the lemon over the top. Add the juice of 1/2 the lemon and 1 tbs olive oil and toss together. Salt and pepper to taste.
  • Slice the olives, Toast the pine nuts in a dry skillet for 2 - 3 minutes until lightly browned.
  • To serve, toss the beets lightly with the fennel. Top with the olives and pine nuts, and using a vegetable peeler, shave the Romano Cheese over the top and drizzle with remaining Olive Oil and enjoy!

1 medium fennel bulb

½ cup crumbled goat cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Place beets in medium roasting pan, add water to cover bottom of pan; cover with foil. Roast 40 to 45 minutes or until beets are tender and can be pierced with a fork or knife.
  • Cool slightly; remove skin from beets and cut into wedges.
  • Trim off fennel leaves and stalk; cut into very thin slices.
  • Combine salad, mandarin oranges, mint, beets and fennel in large bowl. Pour dressing over salad; toss to evenly coat.
  • Sprinkle cheese over salad.

This is one of my favourite Summer salad recipes.....the vibrant colours are amazing, as are all the mingling flavours! The baby fennel bulbs are roasted until charred and then simply served with fresh oranges, black olives, red onion, fresh mint and a divine orange vinaigrette! I serve this alongside grilled, roast or barbequed Duck or Lamb - it is also great when served with a good grilled Steak.

8 small fennel bulbs, trimmed & fronds kept for garnish
4 tablespoons olive oil
2 large oranges, peeled and cut into segments
2 tablespoons fresh orange juice
1 red onion, peeled, halved and thinly sliced
100 g black olives
salt
fresh ground black pepper
2 tablespoons of fresh mint, roughly chopped

Steps:

  • Pre-heat oven to 200C/400F/Gas 6.
  • Trim the feathery green fronds form the fennel and reserve for the garnish.
  • Remove the stalks from the fennel and cut each fennel bulb into 4 or 6 wedges, depending on the size.
  • Place into a well-oiled baking tin or tian - and drizzle over 2 tablespoons olive oil.
  • Roast them for about 40-45 minutes or until tender, caramelised and charred on the edges. (Turn them once or twice during cooking.).
  • Allow them to cool.
  • Peel and slice the oranges into segments, making sure there is no membrane or pith on them. Add the finely sliced red onion and olives to the orange segments.
  • Whisk the remaining oil with the orange juice and season well.
  • Add half of the chopped mint leaves to the vinaigrette, mix well.
  • Pour half the dressing over the orange mixture and gently mix.
  • When you wish to assemble the salad, build up the salad by layering the orange mixture and roast fennel bulbs in alternate layers.
  • Drizzle with the remaining dressing and scatter the remaining chopped mint over the top.
  • Finely chop the reserved fennel fronds and scatter them over the top, as the final flourish!
  • Great served with barbequed poultry or meats, especially Duck or Lamb.
