Pasta with Roasted Tomatoes image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 11

1 1/2 pounds plum tomatoes
1/2 cup extra-virgin olive oil
Kosher salt
1 zucchini, cut into 3/4-inch chunks
Freshly ground pepper
12 ounces campanelle pasta (or other short pasta)
4 cloves garlic, thinly sliced
1 to 2 hot pickled cherry peppers, stemmed, seeded and thinly sliced
1 tablespoon tomato paste
1/2 cup fresh basil, chopped
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 475 degrees F. Quarter the tomatoes, then scoop the seeds and pulp into a sieve set over a bowl (reserve the tomatoes). Press on the seeds and pulp to extract the juice (you should have about 1/2 cup). Chop the tomatoes and toss with 3 tablespoons olive oil on a rimmed baking sheet; season with salt. Toss the zucchini with 3 tablespoons olive oil on a separate baking sheet; season with salt and pepper. Roast, switching the position of the pans halfway through, until tender and browned in spots, 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta as the label directs; reserve 1 cup cooking water, then drain.
  • Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the garlic; cook 2 minutes. Add the cherry peppers; cook 1 minute. Stir in the tomato paste, then the reserved tomato juice and 1/2 cup cooking water. Bring to a boil; simmer until reduced by half, 5 minutes. Add the pasta, vegetables, basil and parmesan to the skillet; season with salt. Cook, tossing, 1 minute, adding more of the reserved cooking water as needed to loosen.

ROASTED TOMATO AND BASIL PASTA

Roasted tomato and basil pasta image

Roasted tomato and basil pasta is a simple and quick vegan meal that tastes delicious thanks to the brilliant combination of roasted tomatoes and basil.

Provided by Ania

Categories     large plates

Yield serves 2-3

Number Of Ingredients 12

200 g / 7 oz grape, plum or cherry tomatoes (10 tomatoes)*
2-3 tbsp / 30-45 ml extra virgin olive oil
½ tsp dried basil
salt and pepper to taste
200 g / 14 oz spaghetti (GF if needed)
2 tbsp pine nuts
2 garlic cloves, diced very finely
2 medium ripe tomatoes (or ½ can), peeled and diced finely
a few sprigs of fresh basil
2 tbsp capers in brine, chopped
¼ cup / 60 ml white wine (optional)
a pinch of chilli flakes (optional)

Steps:

  • Preheat the oven to 200° C / 390° F and get a medium size baking tray ready.
  • Halve the tomatoes and arrange them on the prepared baking tray, cut side up. Brush the exposed flesh with a little olive oil, sprinkle with dried basil, salt and pepper. Bake for about 20 minutes, until soft and juicy.
  • Cook the pasta al dente following the packet instructions.
  • Heat up a small frying pan on low-medium heat. Once hot, add the pine nuts and dry-roast them until golden, stirring them regularly as they tend to burn easily. Remove them from the pan and set aside.
  • While the pine nuts are toasting, heat up 2 tbsp of olive oil in a large pan on a very low heat.
  • Throw in the diced garlic and fry it on a very low heat, stirring frequently, until the garlic releases its aroma, but do not allow it to brown as it will taste bitter.
  • Add the diced tomatoes, a couple of sprigs of basil, capers and white wine (or water if not using wine).
  • Simmer gently for about 15 minutes so that the tomatoes to cook a little and excess moisture cooks out. Add a splash of more liquid (water or pasta cooking water) if the pan starts to look too dry while the tomatoes are still raw.
  • Season with a pinch of chilli and black pepper and salt, but be careful, as, depending on the brand, the capers may provide enough saltiness. Remove the wilted basil from the sauce at the end of simmering.
  • Once the sauce is ready, add the cooked pasta and oven roasted tomatoes to the pan. Toss the pasta in the sauce. Taste and adjust the seasoning.
  • Serve topped with toasted pine nuts and shredded basil leaves.

CHERRY TOMATOES BASIL PASTA

Cherry Tomatoes Basil Pasta image

This savory Cherry Tomatoes Basil Pasta dish is brimming with desire and screams of summer. Fresh Genoese basil, rustically torn or sliced, combined with sun gold and cherry tomatoes, for a sauce that bursts with flavor. It's garlicky, zesty, easy to make and gorgeously topped with purple basil leaves for garnish

Provided by Florentina

Categories     Main Course

Time 20m

Number Of Ingredients 8

4 cups cherry tomatoes halved ((a mix of sun gold, red and chocolate cherry))
1/3 cup fresh basil (thinly sliced)
7 cloves garlic (grated)
4 tbsp extra virgin olive oil + more as needed
1 lemon (juiced)
1 pinch red chili flakes
S & P to taste
3/4 lb whole wheat capellini or thin spaghetti noodles

Steps:

  • Preheat a medium size skillet over medium low heat. Add a drizzle of olive oil ( or a splash of water, veggie stock or white wine for WFPB & Plantricious compliance) and sautee the garlic for about 30 seconds or so, just until it starts to release its aroma. Take good care not to burn it.
  • Add the chili flakes and sliced tomatoes to the pan and hit them with a pinch of sea salt. Stir to combine. Cover with a lid and let them simmer until they start to burst and collapse.
  • Squeeze the lemon over the tomato sauce and remove from heat. Season to taste or sea salt and stir in the fresh basil and remaining olive oil. (Remember to omit all oil for WFPB & Plantricious compliance).
  • Meanwhile cook the pasta until al dente according to directions on the package. Make sure the pasta water is seasoned generously with sea salt and you do not overcook the noodles. Depending on the brand the capellini could be done as soon as it collapses in the water so make sure to test one right away.
  • Drain the capellini and add them to the pan with the cherry tomato sauce. Using kitchen tongs make sure to coat them well without breaking.
  • Serve with extra fresh basil on top + extra lemon wedges for garnish.

SPAGHETTINI WITH ROASTED TOMATOES, FRESH BASIL, AND TOASTED GARLIC BREADCRUMBS

Spaghettini with Roasted Tomatoes, Fresh Basil, and Toasted Garlic Breadcrumbs image

Roasted Tomato Pasta with Basil and Toasted Garlic Breadcrumbs. This quick, easy, and flavorful spaghettini is tossed with roasted tomatoes, fresh basil, and topped with crazy delicious toasted garlic breadcrumbs! A delicious summer meal.

Provided by Laura / A Beautiful Plate

Categories     Pastas, Risottos, and Grains

Time 40m

Number Of Ingredients 15

2½ lbs small heirloom tomatoes or large cherry tomatoes
2 tablespoons extra virgin olive oil
6 large cloves of garlic (smashed)
kosher salt
freshly ground black pepper
2 tablespoons extra virgin olive oil
1 medium shallot (finely chopped)
½ cup panko breadcrumbs
1 garlic clove (finely chopped)
kosher salt
freshly ground black pepper
¾ lb (12 oz) dried spaghettini pasta (otherwise known as 'thin spaghetti)
extra virgin olive oil
2 ounces fresh basil leaves (sliced into ribbons, plus more for garnishing)
grated parmigiano-reggiano cheese (for serving)

Steps:

  • Roast Tomatoes: Preheat the oven to 450°F (232°C). If your oven runs hot, I recommend reducing the temperature by 25°F or so, or reducing the cook time and watching the tomatoes carefully.
  • Bring a large pot (8 quarts or larger) of salted water to a boil for the pasta. Rinse the tomatoes and pat them dry. Place the tomatoes and smashed garlic cloves on a half sheet pan, drizzle with olive oil, and season with kosher salt and pepper. Spread them out evenly. Roast the tomatoes for 20 to 25 minutes, flipping them every 5 to 10 minutes or so, until they are soft and have just begun to collapse. Meanwhile, prepare the breadcrumb topping.
  • Prepare Garlic Breadcrumb Topping: In a small skillet, heat the olive oil over medium-low heat. Add the chopped shallot and sauté for 1 to 2 minutes, stirring frequently, until the shallots have softened and become translucent. Add the panko breadcrumbs and chopped garlic. Reduce the heat to low and toast the breadcrumbs for 2 to 3 minutes, stirring constantly to prevent the breadcrumbs from burning - or until golden and fragrant. Remove from heat and place the breadcrumbs in a small bowl. Season to taste with salt and pepper, and set aside.
  • Cook the Pasta: While the tomatoes finish roasting (and the breadcrumbs are prepared), boil the pasta until al dente. Reserve ½ cup of the starchy pasta cooking water and drain the pasta. Place the pasta back into the pot and drizzle with a glug of olive oil, and gently toss to coat. Add the warm, roasted tomato and garlic mixture as well as the basil ribbons, and toss gently until combined. Add reserved pasta water as needed to help loosen the pasta until the sauce coats the noodles evenly.
  • Garnish each pasta serving with basil, torn or sliced into thin ribbons, and a generous sprinkling of toasted garlic breadcrumbs. Serve with freshly grated parmigiano-reggiano cheese.

PASTA WITH ROASTED TOMATOES, GARLIC AND BASIL

Pasta with Roasted Tomatoes, Garlic and Basil image

Provided by Roz Corieri Paige

Number Of Ingredients 15

4 cups cherry tomatoes, preferably freshly-picked from the garden
5 -7 large garlic cloves; 2 slices minced (and 4 -5 cloves SLICED, and set aside to be used later in the sauce)
2 -3 Tbsp. olive oil
freshly-cracked sea salt
Thin Spaghetti/Spaghettiini (half of a box for two servings)
Tall pot of boiling water
Freshly-cracked sea salt
Roasted tomatoes (from above)
3 Tbsp. olive oil
4 -5 garlic cloves, sliced (that was set aside from above)
½ cup freshly-grated Parmesan (Parmiggiano) cheese
2 cups freshly-picked basil leaves
sugar, if the tomatoes are too tangy for you.....careful, sprinkle on only to the point of taking any tang out of them.
Freshly-cracked sea salt and black pepper to taste
½ - 1 cup freshly grated Parmesan (Parmiggiano) cheese (to your taste preference)

Steps:

  • In a 450 degree oven, roast cherry tomatoes in olive oil and minced garlic until slightly browned and squished (keep an eye on this process).
  • Remove from oven and either use immediately or refrigerate for no more than 2 days.
  • In a large heavy pan, pour the olive oil and heat on medium-hot heat, and never on a hot setting (olive oil burns easily).
  • Add the slices of garlic and cook briefly until golden . . . making sure that the garlic does not burn.
  • Add the roasted tomatoes.
  • Add freshly-grated parmesan cheese, about a handful or ½ cup.
  • Add freshly-cracked sea salt to taste.
  • Simmer on low heat while pasta cooks.
  • In a tall pot, boil water with about 2 Tbsp. sea salt.
  • Add thin spaghetti (spaghettini) noodles and cook until 'al dente', no more than 7 minutes.
  • Do not throw away the pasta water!
  • With a hand-held strainer, remove the pasta from the water, tapping against the side of the pan, and place in the roasted tomato-garlic-Parmesan sauce.
  • Add adding the pasta to the tomato-garlic sauce, add some of the hot pasta water (½ cup or so) to the tomato-garlic sauce and pasta to help 'cream' it.
  • Add more grated Parmesan cheese (about 1 cup).
  • Add freshly-picked basil leaves (about 1 cup).
  • Blend gently.
  • Salt and pepper according to your taste preferences.
  • Add more Parmesan cheese to your taste preferences.
  • Prepare ahead of time, your favorite Italian meatballs or purchased high-quality pre-made frozen Italian meatballs.
  • Heat meatballs and immediately add to the sauce mixture while the pasta is cooking.

ROASTED CHERRY TOMATO PASTA

Roasted Cherry Tomato Pasta image

Roasting enhances the flavors of any vegetable, but seems to add a wonderful, rich sweetness when done with cherry tomatoes. This recipe takes that sweetness, complements it with fresh herbs and a touch of heat from red pepper flakes, with some low-fat ricotta to smooth it all out. I topped it with some salty, nutty Pecorino cheese.

Provided by Scott Koeneman

Time 1h5m

Yield 6

Number Of Ingredients 15

2 pounds red cherry tomatoes, halved
½ pound tomatoes, roughly chopped
3 cloves garlic, thinly sliced
3 tablespoons chicken broth
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon red pepper flakes
¾ teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup julienned fresh basil leaves
2 tablespoons chopped flat-leaf parsley
1 tablespoon chopped fresh oregano
12 ounces whole wheat linguine
½ (16 ounce) container low-fat ricotta cheese
½ cup finely shredded Pecorino Romano cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine all tomatoes, garlic, chicken broth, olive oil, balsamic vinegar, red pepper flakes, salt, and pepper in a large, glass baking dish; toss to coat.
  • Roast in the middle of the preheated oven, stirring regularly, until tomatoes are tender, about 45 minutes. Remove from the oven and stir in basil, parsley, and oregano.
  • When the tomatoes have been roasting for about 35 minutes, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, 5 to 7 minutes (cook for 2 minutes less than package directions.) Drain and return to the pot.
  • Add the roasted tomatoes and herbs to the linguine and cook over medium-low heat for 2 minutes. Add ricotta cheese and stir until melted and smooth.
  • Serve topped with Pecorino Romano cheese.
