MS. ANGELA'S SMOTHERED CABBAGE
My best friend and I make this every year on New Year's Day, and it's so delicious! We always serve it with homemade cornbread, black eyed peas, Champagne, and ham. Happy New Year, everyone!

Steps:
- Heat oil in a large pot over medium heat. Add onion, green pepper, and garlic. Cook and stir until browned, about 5 minutes. Add pork, Creole seasoning, and salt. Cook until pork is browned, 5 to 7 minutes. Do not drain.
- Arrange cabbage over pork; cover with diced tomatoes. Add lid and reduce heat to medium. Cook, without stirring, until cabbage is wilted, 15 to 20 minutes. Stir and taste for seasoning.

SAUTEED CABBAGE
For a simple side dish, try Ina Garten's Sauteed Cabbage recipe from Barefoot Contessa on Food Network à all you need is shredded cabbage and a little butter.

Steps:
- Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core, as though you were making coleslaw. Discard the core.
- Melt the butter in a large saute pan or heavy-bottomed pot over medium-high heat. Add the cabbage, salt, and pepper and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Season, to taste, and serve warm.
SMOTHERED GREEN CABBAGE
Especially good with smoked pork chops or a pork roast. Also wonderful for lunch with homemade corn bread fresh from the oven.

Steps:
- Melt butter and bacon drippings in large saucepan or Dutch oven.
- Add cabbage; cook and stir over medium heat until cabbage is tender/crisp, about 10 minutes.
- Add garlic, caraway seeds, salt and pepper.
- Stir in soup; heat through and serve.
SMOTHERED GREENS
Steps:
- Heat oil or butter in a wide braising pan or casserole. Add onion and garlic and cook over medium heat for 3 to 5 minutes, stirring and being careful not to get too much color on the onions. Add the greens (be sure to wash carefully as they have a tendency to be gritty) and stir. Cover for about 5 minutes to wilt, then cook over medium low heat for at least 15 to 20 minutes, or until greens are tender and not bitter. Sprinkle with the vinegar, season with salt and pepper, stir, and remove from heat. Serve warm.
SMOTHERED CABBAGE
This is a great twist on traditional fried or smothered cabbage - taken from the Tony's Seafood of Louisiana website (who are quoting a Mulate's recipe). How can we go wrong? YUMMO!! My DH brought me a tee back from Mulate's when he was down helping recovery efforts after Hurricane Katrina - needless to say we love the region and the food - and now I can say I "perk" up a bit when I see Mulate's anywhere. I can't wait to get down there myself just to sample my way around the region! How DO I get one of those traveling shows myself? ;)--

- Add onion and saute for 3 minutes.
- Add cabbage and cover.
- Cook about 50 minutes, stirring occasionally.

VEGAN SMOTHERED CABBAGE
This came from Vegan Soul Kitchen by Bryant Terry. The recipes all look fantastic, but this is the only one I've actually made. It's ridiculously easy and delicious. I made it once from the cookbook and haven't looked at the recipe again in the multitude of times I've made it, so maybe I'm leaving out ingredients. Regardless, it's spicy, comforting, soulful, and oh-so-good-for-you.

WORLD'S BEST BRAISED GREEN CABBAGE
My d.h. HATES cabbage, but I just had to try this. It lives up to it's title! Luscious! AND healthy. He even agrees. Yee ha! It originates, I believe, from Molly Stevens' "All About Braising..." by way of the Atlanta Journal Constitution. There is nothing to it and after you make it once you don't need the recipe.

Steps:
- Heat oven to 325'. Oil a large baking dish (9"x13"). Discard ragged outer leaves from cabbage and cut into 1/8s, removing most of core. Arrange wedges in dish with no- or minimum overlapping.
- Thickly slice onion and cut carrot into 1/4" rounds.
- Scatter onions and carrot over cabbage; drizzle with oil and stock, salt and peppers. Cover tightly with foil and bake till tender, about 2 hours May turn the cabbage after an hour. At this point you can add a bit of water if dish seems too dry.
- When tender, remove foil, raise temp to 400' and roast another 15 minute or so till veggies are beginning to brown. Serve warm or at room temperature.

- Chop off the hard core of cabbage and discard rinse the cabbage well and slice thinly.
- Put the onion in the olive in a medium saucepan and cook gently until a good golden colour.
- Add the garlic cook 1 minute, then add the fennel seeds and cabbage.
- Cook until the cabbage has wilted turning often with tongs, then season with salt and pepper and pour over the vinegar.
- Cover with lid and cook very gently for 45 minutes turning often.
- If the cabbage dries up add 1 tablespoon of water.

- Fry bacon in a large skillet over medium-high heat until crispy, about 5 minutes. Remove bacon from skillet and drain on a plate lined with paper towels; reserve bacon grease in the skillet. Crumble bacon into a bowl when cool and set aside.
