Here's a wonderful present for drop-in visitors, the kids' teachers or neighbors. One batch makes six adorable mini loaves-and you might add some butter or cream cheese for an extra-special present.

Yield 6 mini loaves.

Number Of Ingredients 11

4 large eggs, room temperature
2 cups sugar
2 cups cold mashed sweet potatoes
3/4 cup vegetable oil
2 cups all-purpose flour
1-1/2 cups whole wheat flour
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon salt
2/3 cup water

Steps:

  • In a large bowl, beat the eggs, sugar, sweet potatoes and oil. Combine the flours, cinnamon, baking soda, nutmeg and salt; add to sweet potato mixture alternately with water., Pour into 6 greased 5-3/4x3x2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1/2 cup sweetpotato puree
1 cup packed brown sugar
1 cup apple juice
3/4 cup raisins
1-1/2 tablespoons vegetable oil
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 325º F.
  • In a large saucepan over high heat, combine sweetpotatoes, brown sugar, apple juice, raisins, oil, cinnamon, nutmeg, cloves and allspice. Bring to a boil; lower heat and simmer for 2 minutes. Set aside to cool.
  • Sift together flour, soda and baking powder. Add to the cooled sweetpotato mixture; stir well. Fold in walnuts.
  • Spoon batter into 3 greased mini (approximately 3-by 6-incloaf pans. Bake on lowest rack in oven for 60 minutes or until a wooden pick inserted into center comes out clean. Cool in pans for 10 minutes then turn out and transfer loaves to wire rack to cool completely.

1/2 cup north carolina sweet potato, cooked and mashed
1 cup brown sugar
1 cup apple juice
3/4 cup raisins

1/2 teaspoon ground cloves
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to 325. In a large saucepan, combine sweet potatoes, brown sugar, apple juice, raisins, oil, cinnamon, nutmeg, cloves and allspice. Bring to a boil over high heat. Lower heat and simmer 2 minutes. Cool.

3 large sweet potatoes, peeled and cut into 1-inch cubes (about 6 cups)
2 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • In a large resealable plastic bag, combine sweet potatoes and oil. Add remaining ingredients; toss to coat. , Transfer to a greased 11x7-in. baking dish. Bake, uncovered, at 400° for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.

1-3/4 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
2 eggs
1-1/2 cups mashed sweet potatoes (about 2 medium)
1/2 cup canola oil
6 tablespoons orange juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, combine first eight ingredients. In a small bowl, whisk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in walnuts and raisins (batter will be thick). Transfer to two greased 9x5-in. loaf pans. , Bake at 350 ° for 65-70 minutes or until a toothpick inserted in the center comes out clean.   • Peel the sweet potatoes and chop them into 1-inch sized chunks. Place chunks in a large, shallow microwave-safe bowl. Add 3 tablespoons water, cover with plastic wrap, and cook on high power for 15 to 17 minutes, or until potatoes are very fork-tender. Pour off any water. Mash sweet potatoes with a fork. Allow them to cool momentarily so you don't scramble the eggs.
  • To the sweet potatoes, add the eggs, oil, buttermilk, vanilla and whisk until combined; set aside. (I used buttermilk powder and added 1 tablespoon powder to the dry ingredients and 1/4 cup water to this wet mixture)
