CRANBERRY SAUCE EXTRAORDINAIRE
I got this recipe from the Allrecipes site. I made it last Thanksgiving and it was so amazing. I'm craving it right now as I write this! If you love cranberry sauce combined with oranges, pecans and a variety of other delicious fruits you must try this! It's primo!

Steps:
- Boil the water and sugar in a medium saucepan until dissolved.
- Reduce heat.
- Add the rest of the ingredients and simmer (with the lid on) for 30 minutes, stirring occasionally.
- Remove from heat and allow to cool to room temperature before serving or storing.
THE BEST CRANBERRY SAUCE
Our classic cranberry sauce has the ideal texture of tart whole berries suspended in a sweet jammy sauce; we added citrus peel for a little extra brightness. Don't be tempted to skip the salt and and pepper at the end. It may seem a bit odd, but salt brings out the fruitiness of the berries while pepper gives the sauce a warm and spicy finish.

- Empty the cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add the sugar, zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Remove the citrus peel. Add sugar, salt and pepper to taste. Cool to room temperature before serving.

Steps:
- Place the sugars, orange juice, water, and cinnamon in a heavy saucepan, and stir to dissolve the sugar. Add the cranberries and bring the mixture to a boil. Cook over medium heat until the berries pop, about 10 minutes. Mash the mixture with a spoon to pop any unpopped berries and help thicken the sauce, if desired, and reduce heat to low and simmer until the sauce is the desired thickness, up to 10 more minutes.
- Remove from the heat, pour the sauce into a bowl, and chill until serving time. Sauce will thicken as it cools.
