MOCK APPLE PIE
Apple pie flavor without the apples. Fun to make and sure to please, but should be served warm! Enjoy.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a saucepan over medium high heat, combine the water, sugar and cream of tartar; bring to boil.
- Drop in whole crackers and boil for 5 minutes. Pour mixture into pie shell; sprinkle with cinnamon and lemon juice.
- Mix together the crushed crackers, brown sugar, cinnamon and butter; sprinkle over pie filling.
- Bake for 15 minutes and reduce heat to 375 degrees F (190 degrees C) and continue to bake for 15 to 20 minutes longer. Serve warm.

My GF (Dolly) had given me this recipe and of course I had to give it my touches(tweaked). This is a great way to use all those extra zucchini you have growing out in that garden of yours! Steps:
- Preheat oven to 425 degrees.
- Cook zucchini slices in boiling water until barely tender, about 2 minutes.
- Remove from stove and drain very well and cool.Remove as much moisture as you can with paper towels.
- In a bowl, toss zucchini with sugars, cinnamon, nutmeg, cardamom, cream of tartar, cornstarch or flour, and salt until well coated.
- Place lightly floured pastry in a 9-inch, pan.
- Fill with zucchini mixture.
- Dot with butter, drizzle with vinegar.
- Top with crust.
- Brush top crust lightly with water and sprinkle crust with sugar.
- Bake for 15 minutes at 425.
- Reduce heat to 350 and bake about 45 minutes.
- Serve hot with a scoop of vanilla ice cream.
- Or serve chilled.

FAUX APPLE PIE
This is a delicious, easy, and quick alternative to a traditional apple pie! This recipe came from a book titled "Totally Apples Cookbook". Serve it with a scoop of vanilla ice cream if you wish and you have yourself a yummy dessert or snack for any time of day! Quick note, the topping isn't crunchy if you have leftovers and reheat in the microwave, but it is still great!

Steps:
- Preheat oven to 375 degrees.
- Lightly butter round pie plate or cake pan.
- Slice each apple into quarters, and then each quarter into thirds so you have nice size slices.
- Place the apples in a bowl and sprinkle with lemon juice (or brandy) and set aside.
- In another bowl, mix flour, oatmeal, brown sugar, cinnamon, and salt.
- Pinching or rubbing with fingers, work the butter into the dry mixture until crumbly mixture is formed.
- Lightly mix in the nuts of your choice.
- Layer apples into prepared pan. Cover the apples with the crumble mixture and bake about 40 minutes, until top is brown and apples soft.
- Serve and enjoy! Try it with vanilla ice cream!

- Place 1.5 cups water, two cups sugar, flour, cream of tartar, cinnamon, and allspice in a medium sized saucepan over medium high heat and cook, stirring constantly, until it comes to a boil.
- Once it reaches a boil, reduce heat and simmer for five minutes. Remove from heat. Add in lemon juice, 3 tablespoons butter, and vanilla. Stir. Set aside and allow to cool slightly.
