4 -5 cups pecans
1/2 cup butter
1 tablespoon Worcestershire sauce
seasoning salt (I use McCormick's Season-All)

Steps:

  • Melt butter in a 9x13 pan.
  • Add Worcestershire sauce and pecans.
  • Stir approximately every 15 minutes.
  • Bake at 250 Fahrenheit for about 1+ hours until pecans are done (baked completely through).
  • Drain on paper towels.
  • Sprinkle to taste with seasoning salt.

1 egg white
1 tablespoon water
2 ¼ cups pecan halves
½ cup white sugar
¼ teaspoon salt
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
  • Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
  • Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

1/4 cup bourbon whiskey
1/4 cup dried cherries
2 tablespoons brown sugar
1 teaspoon kosher salt
1/ 4 teaspoon freshly ground black pepper
1/8 to 1/4 teaspoon cayenne pepper
2 cups raw pecan halves
2 tablespoons unsalted butter
1 tablespoon zest from 1 small orange

Steps:

  • Combine the bourbon and the dried cherries in a small bowl and set aside to soak for 30 minutes. In another small bowl, combine the brown sugar, salt, black pepper, and cayenne pepper and stir until well-combined. Set aside.
  • Place the pecans in a large non-stick skillet over medium heat. Cook, stirring frequently, until they just start to brown and smell toasted, 3 to 4 minutes. Add the butter to the pan and stir until the butter is completely melted and the pecans are coated.
  • Add the sugar and spice mixture to the pan and stir to combine. Turn off the heat and immediately pour in the cherries and bourbon. Stir for 1-2 minutes more, off heat, until everything is well incorporated.
  • Return the pan to medium heat and continue to stir everything in the pan until the liquid thickens and a glaze forms on the pecans, 1 to 2 minutes longer. Transfer the pecans to a parchment-lined rimmed baking sheet.
  • Using a spatula or wooden spoon, separate the pecans and spread them into an even layer on the parchment paper. Allow the pecans to cool completely. Once the pecans have cooled, zest the orange over the pecans. Transfer the pecans to a large bowl and serve

2 dashes Angostura Bitters, plus more to taste
1 half dollar-sized slice orange peel, including pith
2 ounces good-quality rye or bourbon
1 maraschino cherry

Steps:

  • In old-fashioned glass, combine simple syrup and bitters. Fill glass halfway with ice, then stir about a dozen times. Add enough ice to fill glass. Squeeze orange peel over glass to extract oils, add peel to glass, and add whiskey. Stir just until drink is cold and alcoholic bite has softened, about a dozen times. 1/4 cup Bourbon
1/4 cup dried cherries
2 tablespoons brown sugar
1 teaspoon kosher salt

1/8-1/4 teaspoon cayenne
2 cups raw pecan halves
2 tablespoons unsalted butter
1 tablespoon orange zest (from 1 small orange)

Steps:

  • Combine bourbon and dried cherries. Set aside to soak at room temperature for 30 minutes.
  • Combine brown sugar, salt, pepper, and cayenne. Stir until well-combined.
  • Toast pecans in large non-stick skillet over medium heat until browned and just beginning to smell toasted, 3-4 minutes. Stir and shake frequently to prevent burning. Add butter to pan. Stir and toss until completely melted and pecans are thoroughly coated.
  • Add sugar and spice mixture; stir and toss until pecans are evenly coated. Turn off heat and add cherry/bourbon mixture. Stir, off-heat, 1-2 minutes, until everything is well combined.
  • Return pan to medium heat; stir constantly until liquid thickens and pecans are thoroughly glazed and shiny, 1-2 minutes. Spread mixture in one layer onto parchment-lined rimmed baking sheet, separating nuts so they don't stick together. Allow to cool completely. Sprinkle nuts with orange zest. Transfer to a bowl and serve.

1 cup maple syrup
1 cup light brown sugar (packed)
1/2 cup heavy cream
1 tablespoon molasses
4 tablespoons unsalted butter, cut into 1/2-inch pieces
1/2 teaspoon salt
6 large egg yolks, lightly beaten
1 1/2 cups pecans (toasted and chopped)
1 (9 inch) unbaked pie shells, chilled in pie plate for 30 minutes (see note)

Steps:

  • Make Filling: Adjust oven rack to lowest position and heat oven to 450 degrees. Heat sugar, syrup, cream, and molasses in saucepan over medium heat, stirring occasionally, until sugar dissolves, about 3 minutes. Remove from heat and let cool 5 minutes. Whisk butter and salt into syrup mixture until combined. Whisk in egg yolks until incorporated.
  • Bake Pie: Scatter pecans in pie shell. Carefully pour filling over. Place pie in hot oven and immediately reduce oven temperature to 325 degrees. Bake until filling is set and center jiggles slightly when pie is gently shaken, 45 to 60 minutes. Cool pie on rack for 1 hour, then refrigerate until set, about 3 hours and up to 1 day.
