ITALIAN-STYLE MEATLOAF

1 tablespoon olive oil
3 cloves garlic, minced
1 medium yellow onion, minced
1 red bell pepper, minced
Pinch crushed red pepper, optional
2 pounds ground beef (I use 80/20)
1 cup grated Parmesan
3/4 cup breadcrumbs
1/4 cup minced fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
16 fresh basil leaves, chopped
2 large eggs, lightly beaten
1 cup marinara sauce
6 tablespoons unsalted butter, at room temperature
6 soft sub rolls, split
Garlic salt, as needed
1 cup marinara sauce
1 pound sliced mozzarella

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
  • In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup marinara.
  • Bake until the meat loaf is firm, 45 minutes to 1 hour (depending on the shape of your loaf). Let set for about 5 minutes before slicing.
  • For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
  • Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

  • Preheat oven to 350 degrees F (175 degrees C).

1 egg
2/3 cup dried breadcrumbs

1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients in a large bowl, mix well.

  • Return to oven and bake for 5-10 minutes.
  • Leave in pan for 10-20 minutes, this will prevent the meatloaf from falling apart when cut.

1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

1 pound ground pork
1 large egg

Steps:

  • Preheat oven to 350° and line a baking sheet with parchment paper or foil.
  • Place the slice of bread in a small bowl and pour milk over the top of it. Set aside.
  • In a large bowl, combine the remaining ingredients. Add in milk soaked bread and mix together with hands until ingredients are incorporated. Do not over mix.
  • Turn mixture out onto prepared baking sheet and shape into loaf.
  • Bake meatloaf in preheated oven for about 20 minutes. Top with italian gravy and continue to bake for an additional 10-15 minutes, or until the internal temperature reaches 155°.
  • Remove meatloaf from the oven and let rest for 5-10 minutes before slicing.

An easy recipe for Italian flavored meatloaf. It has all the flavors of your favorite Italian meatballs. Makes a great entree for an Italian dinner!

2 lbs 85/15 ground beef
2 fresh garlic cloves, minced
.7 oz packet of Italian Dressing Mix (I use Good Seasonings brand)
1 cup panko bread crumbs
1/3 cup milk
2 eggs, lightly beaten
1/2 cup fresh grated parmesan cheese
24 oz jarred marinara
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 400°
  • In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
  • In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
  • Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
  • Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
  • Let cool for about 5 minutes and then slice and serve!

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

POLPETTONE - ITALIAN MEATLOAF

Nothing more comforting than a classic Italian meatloaf (polpettone) made with all the traditional flavors. Perfect for a weeknight meal!

600 g beef mince (or a mix of beef and pork)
2 eggs
5 tbsp Parmesan cheese (finely grated)
5 tbsp milk
3 tbsp Italian breadcrumbs (or breadcrumbs, or panko.)
80 g provolone cheese (cubed)
1 tbsp extra-virgin olive oil

Steps:

  • In a large bowl mix all the ingredients together besides the provolone cheese and olive oil. The mixture should be soft, perfectly blended together, and should not stick to the sides of the bowl. Add a little more breadcrumbs or milk if necessary.
  • Place the mixture on a sheet of kitchen paper and form a rectangle. Arrange the cubed cheese onto the center.
  • Roll the meat with the help of the parchment paper to form a log. Make sure it's well sealed on all sides. Roll it in the parchment paper and twist the ends to form a large candy.
  • Transfer the meatloaf in the fridge and let it rest for 15 minutes.
  • Preheat oven to 350°F (175°C) and arrange the oven tray onto the middle shelf.
  • Transfer the meatloaf onto a baking sheet and bake it in the oven for 30 minutes. After this cooking time, the meatloaf will have released some liquid, but it's totally ok.
  • Remove the parchment paper, drizzle the top of the polpettone with olive oil, then place it back in the oven for a further 10 minutes.
  • Check if the meat is done with a meat thermometer, if it reaches 155°F/68°F you can safely remove it from the oven. Let the polpettone rest for about 15 minutes, then slice it and serve with your favourite sides.

  • Bake for 55-60 minutes, or until the meatloaf is cooked through. The meatloaf's internal temperature should reach 165°F at the thickest spot.
  • Once out of the oven, let rest for 5-10 minutes before slicing and serving with your favorite sides.

1 medium onion (diced)
1 medium red pepper (diced)

  • Preheat oven to 350°F (177°C)
  • Heat 2 tablespoons of the oil in a heavy skillet over medium heat. Add the onions and pepper and cook until soft, about 5 minutes. Add the garlic, cook another minute or two, stir in the Italian herbs, and remove heat.
  • In a small bowl, whisk the eggs well - season with salt and pepper, and whisk to combine.
  • Put the beef in a large bowl, add the egg mixture, add the remaining 2 tablespoons olive oil, the Worcestershire, 2 tablespoons of balsamic, and ½ cup of marinara sauce. Add the parmesan, mozzarella and bread crumbs, and onions, then mix it with your hands until just combined - do not over mix.

1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
6 ounces button mushrooms, finely chopped
1 tablespoon dried Italian seasoning
4 slices bacon, chopped
1 pound ground beef, preferably chuck
1/2 pound ground pork
1/4 cup heavy cream
2 teaspoons soy sauce
1 teaspoon Worcestershire sauce
2 eggs, beaten
2 teaspoons kosher salt
2 teaspoons ground black pepper
For the Glaze:
1/2 cup catsup
2 tablespoons sherry vinegar
1 tablespoon Dijon mustard

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Finely chop the bread in a food processor . Set the breadcrumbs aside.
  • Heat the butter in a large skillet over medium heat. Add the onion, carrot, celery, mushrooms, and Italian seasoning and cook, stirring until soft and the liquid has evaporated, about 10 minutes. Set aside and let cool slightly.
  • Add the cooled vegetable mixture to the food processor along with the bacon, beef, and pork, and pulse until finely chopped-not puréed.
  • Add the mixture to a large bowl with the breadcrumbs, cream, soy sauce, Worcestershire, eggs, salt, and pepper. Using your hands, gently mix everything together until well combined.
  • Mold the meat mixture into a 9-inch-by-5-inch-sized loaf shape on a buttered, parchment-lined baking sheet.
  • Bake until a meat thermometer inserted in the center reads 135 F, 40 to 45 minutes.
  • Raise the heat to 500 F. In a small bowl, mix together the glaze ingredients.
