This is one satisfying and flavor-packed cold pasta salad with crunchy veggies, fresh herbs, rustic old-world salami, tangy olives, and mozzarella. A zesty Italian dressing brings it all together.

Steps:
- Cook the pasta in boiling water according to package instructions until the pasta is cooked to al dante (don't forget to salt your water). Drain
- In a large bowl, mix the pasta with the tomatoes, chopped veggies, artichoke hearts, olives, pepperoncini, salami, mozzarella, and fresh herbs.
- In a small bowl or measuring cup, mix the dressing ingredients together.
- Pour the dressing over the pasta and toss to coat.

PESTO BOWTIE PASTA SALAD

Just use store bought pesto as the base to this nearly homemade dressing, bowtie pasta shells and bits of fresh vegetables for a budget friendly summer salad.

Steps:
- Cook farfalle pasta according to package directions. Farfalle pasta is the same thing as bowtie or butterfly pasta and works great to hold heavy pesto dressing.
- Drain pasta completely of boiled water and rinse with cold water to cool before moving on. Make sure pasta has no excess water.
- In a separate bowl, add store bought jarred pesto, mayonnaise, grated Parmesan cheese, water, olive oil and mix dressing well.
- Pour pesto dressing over pasta and mix well to evenly coat all of the pasta sides.
- Add chopped spinach and grape tomatoes and toss again to combine all ingredients.
- Optionally add a little salt and cracked pepper prior to serving.
- Put in fridge for a few hours to get cold.
- Serve pasta salad topped with pine nuts or one of the other suggestions in the recipe.

FARFALLE PASTA SALAD WITH BROCCOLI PESTO
Broccoli pesto? Yes, please! Pulse florets with parsley, pistachios, Parmesan and dressing. It's a great sauce for this pasta dish.

- In a medium saucepan boil broccoli florets with enough water to cover. Approximately 5 minutes. Remove florets with a slotted spoon and place on a plate to cool. Reserve the water to cook pasta in.
- In a food processor, pulse broccoli, parsley, 2 tablespoons pistachios, parmesan cheese and dressing until finely chopped and combined; approximately 30 seconds.
- Cook farfalle pasta according to package. Reserve ½ cup of cooking water. Drain and return pasta to the pot.
- Over low heat, add the pesto and chopped peppers to the pot and ¼ cup of reserved water. Toss to combine. Add more water to thin out pesto if necessary. Cook for 5-7 minutes or until sweet peppers begin to soften.
- Serve with a baby arugula salad dressed with remaining Italian dressing. Sprinkle with remaining pistachios.

FARFALLE AND PESTO SALAD
Here's a simple salad that doesn't take much effort to put together. It would be a good choice for your next potluck.

- Cook the pasta.
- Drain, reserving a couple tablespoons of cooking water.
- Keep the pasta warm.
- Coordinate the cooking so the potatoes are ready at the same time.
- They will probably need to boil in a separate pan of water for 15 minutes.
- Drain.
- Cut the beans in half and boil them in salted water for two minutes.
- Drain.
- While the beans, potatoes and pasta are cooking, tip the pesto into a bowl large enough to hold the finished salad.
- Mix the garlic into the pesto, along with the olive oil and the two tablespoons cooking water.
- Put the pasta, potatoes and beans into the bowl.
- Toss and serve.

BOW TIES WITH PESTO, FETA AND CHERRY TOMATOES
This is just one example of how a good pesto can be used so well in so many ways. People always rave about this combo and I can't blame 'em - it's one of those matches made in heaven. The pesto coats the warm pasta to make a creamy, rich sauce, which is accented by the crumbled feta and contrasted by the sweet and tart cherry tomatoes.

- Bring a large pot of salted water to boil. Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes. Drain the pasta and run it under cold water just until it stops steaming. Bounce the pasta around to get rid of as much water as you can.
- Dump the pasta into a large serving bowl. Stir in the pesto until the pasta is coated. Toss in the cherry tomatoes and the crumbled feta. Taste the salad and season it as you like with salt and pepper. You can make the salad up to about 1 hour before you serve it. Check out the salt and pepper just before you serve the salad. If it's looking a little dry, add some olive oil and stir it around.
- Pesto:
- 5 big handfuls basil leaves (about 2 hefty bunches)
- 1/2 cup pine nuts or 3/4 cup walnuts
- 1/2 cup fresh grated Parmesan or Pecorino cheese
- Juice of 1 small lemon
- 2 cloves garlic, peeled
- Kosher salt
- About 20 grinds freshly ground black pepper
- 3/4 cup extra-virgin olive oil
- Place all ingredients with 1/2 cup of the oil in a blender and blend. Gradually drizzle in the remaining 1/4 cup of oil until pesto is thick and smooth.
- Yield: about 1 1/2 cups
FARRO WITH COARSE PESTO

- Bring the chicken broth to a boil in a large saucepan over high heat. Add the farro and stir to combine. Reduce the heat to low and simmer the farro, covered, until tender, about 25 minutes. Drain farro and set aside in a large bowl.
- Meanwhile, in a food processor combine the parsley, basil, thyme, and garlic. Pulse until the herbs are roughly chopped. Add the olive oil, vinegar, salt, and pepper. Pulse again until the herbs make a coarse mixture.
- Toss the warm farro with the coarse pesto. Transfer to a serving bowl. Using a vegetable peeler on the cheese wedge to make about 1/2 cup of cheese shavings. Top the farro with the cheese shavings and serve.

- 1. Combine the peppers, onion, peas, scallions, and olives in a bowl. Reserve.
- 2. Bring a large pot of salted water to a boil with the olive oil. Cook the pasta according to package directions. Drain, reserving 1/2 cup of the cooking water. Remove the pasta to a bowl and toss with 1/4 cup of the pasta water.

Serve immediately or refrigerate for up to 1 day. Bring to room temperature 30 minutes before serving. Add more pesto and hot water to thin if necessary.
