SWISS STEAK
This classic Swiss steak is made with a thick slice of top round steak slow cooked in tomato sauce until completely tender. One steak will easily feed a whole family.

Steps:
- Sauté onions and garlic: Remove the steak from the pan and set aside. Add onions and garlic to the pan and another tablespoon of oil. Cook the onions and garlic for 3-5 minutes, using a metal spatula to scrape up any steak drippings, mixing them in with the onions. Add half of the herbs to the onions.
- Cover and simmer: Cover the pan with a tight fitting lid. If you have a domed lid that fits, use it. A domed lid will help circulate the steam and moisture from the cooking juices and keep the steak moist. Bring the steak in the tomato purée to a simmer and then lower the heat to the lowest heat possible to maintain a low simmer. (We use the warm setting on our electric range, if using a high BTU gas range you may want to prop the pot up on some balled up foil to give it more distance from the heat.) Cook for 1 1/2 hours.

- Combine flour and onion powder; coat meat. Gently shake off excess flour and reserve.
- Heat dressing in large nonstick skillet on medium-high heat. Add meat; cook 2 to 3 min. on each side or until evenly browned on both sides. Remove from heat.
- Combine tomato paste, excess flour, tomatoes and broth in slow cooker. Add meat and peppers; cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 3 to 4 hours).

- In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. In a small bowl, combine water and remaining flour until smooth; gradually stir into juices. Bring to a boil over medium heat. Cook and stir sauce for 2 minutes or until thickened.

Steps:
- Drain tomatoes, reserving the liquid.
- Chop tomatoes.
- Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
- Cut meat into serving pieces.
- Coat steaks with the seasoned flour and pound until slightly flattened.
- Heat the oil in a large frying pan over medium heat; add steaks and cook until browned on both sides, 10 to 12 minutes in all.
- Add the garlic, onions, peppers, tomatoes with their liquid, and the broth.
- Bring to a boil.
- Cover and reduce heat, simmer until steaks are tender (about 3 1/2 hours).

MOM'S SWISS STEAK
Steps:
- Combine flour, salt and pepper in a flat bowl. Cut steak into serving size pieces, removing any excess fat. Coat the steak with the flour mixture.
- Heat oil in frying pan and add steak to brown both sides. Remove any remaining oil. Cover steak in frying pan with both cans of soup and water. Bring to boil, reduce heat and simmer for 2 to 3 hours. Remove meat from sauce.
- In a small bowl, combine cornstarch and enough water to make a watery paste. Bring liquid in frying pan to a boil and slowly stir in the cornstarch and water mixture to make a gravy. Salt and pepper to taste.

- Preheat oven to 325° F. In a large resealable plastic bag, combine flour, salt, pepper, and granulated garlic. Add steak, a few pieces at a time, and shake to coat.
- On the stovetop, heat oil in a cast-iron Dutch oven (or other heavy, oven-safe pot) over medium-high heat. Brown steak in oil on both sides. Remove steaks to a plate.
- To the same pot, add the onion, celery, bell pepper, and mushrooms. Turn the heat down to medium, and cook and stir for 6-7 minutes, or until vegetables are beginning to soften. If needed, add a little extra oil. Add garlic and tomato paste, and cook for 1 additional minute.
- Stir in diced tomatoes, beef broth, Worcestershire sauce, thyme, sugar, and celery seed. Scrape the bottom of the pot with a spatula to release all of the flavorful bits. Return steaks to the pot, making sure they are covered by the gravy.
