CHIPOTLE MAYO BLT

8 slices thick-cut bacon
1/2 cup mayonnaise
1/4 to 1/2 cup chipotle peppers in adobo sauce, chopped
8 slices bread, toasted
4 slices romaine lettuce
1 large tomato, sliced 1/4-inch-thick
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a rimmed baking sheet with parchment paper and spread the bacon evenly on top. Bake until crispy, about 20 minutes. Transfer the bacon to paper towels to drain the oil.
  • Mix the mayonnaise with the chopped chipotle peppers in a bowl (see Cook's Note). Spread the chipotle mayo on each slice of toast. Arrange the lettuce on four of the toast slices and top with tomato. Sprinkle with salt and pepper. Top with bacon. Place the remaining toast slices on top of the bacon. Cut the sandwiches in half on the diagonal and serve immediately.

16 ready-to-serve fully cooked bacon strips, warmed if desired
8 flour tortillas (8 inches), room temperature
4 cups chopped lettuce
2 cups chopped tomatoes (3 small tomatoes)
2 cups shredded cheddar cheese
1/2 cup ranch salad dressing

Steps:

  • Place 2 bacon strips across the center of each tortilla. Top with lettuce, tomatoes and cheese; drizzle with salad dressing. Fold 1 side of the tortilla over filling and roll up.

1 tbsp vegetable oil
1 onion , finely sliced
1 garlic clove
2 chicken breasts , sliced into strips
2 tbsp chipotle paste
400g can chopped tomatoes
400g can black beans , drained
4 large corn or flour tortilla wraps
½ avocado , stoned, peeled and sliced
½ Baby Gem lettuce , shredded
1 lime , halved

Steps:

  • Heat the oil in a frying pan over a low-medium heat. Toss in the onion and cook for 10 mins until softened. Crush in the garlic and stir for 1 min before adding the chicken. Turn up the heat and brown the chicken all over. Spoon over the chipotle and stir to coat for 1 min. Pour in the tomatoes and bring to the boil. Season well and reduce the heat to a gentle simmer.
  • Cook for 5-6 mins or until the chicken is cooked through and any excess liquid has evaporated. Stir the beans through until warmed, then remove from the heat. Warm the wraps following pack instructions.
  • Divide the mix between the wraps, top with the avocado and shredded lettuce, and squeeze over the lime. Roll up and cut in half before serving.

3 cups chopped romaine
2 plum tomatoes, finely chopped
8 bacon strips, cooked and crumbled
1/3 cup reduced-fat chipotle or regular mayonnaise
4 flour tortillas (8 inches), warmed

Steps:

  • In a large bowl, combine romaine, tomatoes and bacon. Add mayonnaise; toss to coat., Spoon about 1 cup romaine mixture down center of each tortilla. Fold bottom of tortilla over filling; fold both sides to close. Serve immediately.
