I devised this to resolve my southern husband's taste for fried chicken with a HEALTHY, non-deep-fried version, with no wheat, milk, eggs, or processed or artificial ingredients. It's a delicious EASY recipe that works for chicken legs, thighs, or breasts. Make PLENTY in the summer to eat as is, or use leftovers for chicken SALAD!

10 chicken legs (or 3 chicken breasts, bone-in works just fine and is more economical than boneless)
1 tablespoon dried rosemary
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon potato starch
2 tablespoons oats
1 pinch powdered ginger (optional)
canola oil cooking spray
1/2 cup water

Steps:

  • For moistest results soak chicken pieces in a bowl of salted water for 15 minutes before cooking.
  • Line baking tray with foil and spray lightly with oil.
  • Grind dry ingredients in coffee grinder or with pestle and mortar.
  • Pour into a bowl and add water little by little while stirring until a smooth runny paste is achieved. You may need more or less water.
  • Remove chicken from soaking water, and pat dry if necessary.
  • Dip into the rosemary coating until covered, and place on baking tray. This will seal in the juices.
  • Bake at 365º for one hour.
  • Once it's in, put your feet up for at least ten minutes, drink a glass of cold water, breathe deeply - and relax. Your chicken is safe.
  • Suggestions: Serve with brown rice and greens, or if you have cooked breasts or thighs, then serve the chicken chopped into a salad with cucumbers, roma tomatoes and red onion, topped with Chimichurri sauce - a purée of cilantro, lemon juice, olive oil, garlic and salt.

I am a retired caterer. I have used this recipe for many years. Everyone I have served it too seems to just love it and always come back for seconds. Its one of the simplest and easiest fried chicken recipes you will ever prepare. The Ritz cracker crumbs were used many years ago as a last minute substitute for saltines. I think this was a one of my best substitutes ever. Needless to say I never used saltines again. I hope you enjoy!

1 whole broiler-fryer chicken (cut into pieces)
1 cup butter (melted) or 1 cup margarine (melted)
2 cups Ritz crackers (crushed)
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon sage
1/4 teaspoon cumin

Steps:

  • Spray a sheet cake style pan with non stick canola spray.
  • Preheat oven to 400°F
  • Wash chicken thoroughly and lay on paper towels and pat dry.
  • Melt butter in a medium sized dish.
  • Place Ritz cracker crumbs in a large bowl.
  • Mix all seasonings together in a small bowl.
  • Dip chicken pieces in the butter then immediately into the cracker crumbs.
  • Place chicken in the sprayed pan.
  • When all chicken is in the pan, sprinkle chicken evenly with seasoning mix.
  • Bake in a 400°F oven for approx 35 to 45 minute or until chicken is completely cooked. You may be tempted to turn 1/2 way through baking. You can if you want, but it's really not necessary.

3 pounds bone-in chicken parts (with or without skin)
1/3 cup butter

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • In a pie plate or a wide, shallow bowl, combine the flour, paprika, salt, and pepper.
  • Place the chicken in the flour mixture, turning to coat thoroughly. Or combine the flour and seasonings in a paper bag or plastic food storage bag. Add chicken pieces a few at a time and shake gently to coat.
  • Put 1/3 cup butter in a shallow baking pan; place it in the hot oven. When the butter has melted, arrange the chicken in the pan in a single layer, skin-side down.
  • Bake for 30 minutes; turn and bake 15 minutes longer, or until chicken is tender and done (at least 165 F on a food thermometer).

1/4 teaspoon table salt
1/2 teaspoon cayenne pepper (or to taste)
3 ounces buttermilk
3/4 cup corn flake crumbs (leave some big pieces, DO NOT crush the flakes into a fine powder)
1 lb boneless skinless chicken breast (four 4 oz pieces)

Steps:

  • Preheat oven to 365ºF.
  • Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.
  • Combine flour, salt and cayenne pepper together in a medium-size bowl.
  • Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.
  • Roll chicken breast halves in flour mixture and evenly coat each side.
  • Next dip chicken into buttermilk and then corn flakes crumbs.
  • Place coated chicken breasts in prepared baking dish.
  • Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking).
  • NOTE: The first time I made this my chicken breasts were about 6-8 ounces a piece.

2 cups chopped stemmed shiitake mushrooms
1 3/4 cups chopped onions
2 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
3 tablespoons all purpose flour
1/4 cup dry red wine
3 cups chicken stock or canned low-salt chicken broth
2 tablespoons chopped fresh Italian parsley
Chicken
2 cups all purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon dried mustard
1 1/2 teaspoons dried thyme
3 large eggs
12 skinless boneless chicken thighs (about 2 2/3 pounds)
Olive oil (for frying)
Garlicky Mashed Potatoes
Chopped fresh Italian parsley

Steps:

  • For gravy:
  • Sauté chopped bacon in heavy large saucepan over medium heat until crisp, about 5 minutes. Increase heat to medium-high. Add shiitake mushrooms, onions, garlic, thyme, and oregano and sauté until onions are tender, about 5 minutes. Reduce heat to medium. Add flour and stir 1 minute. Stir in wine, scraping up browned bits from bottom of pan. Stir in chicken stock and parsley. Simmer until gravy thickens slightly, stirring occasionally, about 10 minutes. Season gravy to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and chill. Bring to simmer before using.)
  • For chicken:
  • Preheat oven to 400°F. Mix flour, salt, black pepper, chili powder, paprika, dried mustard, and dried thyme in medium bowl to blend. Whisk eggs in another medium bowl to blend. Dredge chicken thighs in flour mixture, coat with egg, then dredge again in flour mixture. Transfer chicken to baking sheet.
  • Add enough olive oil to heavy large skillet to come 1/4 inch up sides of pan. Heat oil over medium-high heat until very hot. Working in batches, fry chicken thighs until brown, about 2 minutes per side. Return chicken to baking sheet. Bake until chicken is cooked through, about 8 minutes.
  • Spoon Garlicky Mashed Potatoes into center of 6 plates. Place 2 chicken thighs atop potatoes on each plate. Spoon gravy over chicken. Sprinkle with parsley and serve.

⅔ cup grated Parmesan cheese
1 ⅓ cups bread crumbs
1 teaspoon poultry seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
1 ½ cups milk
12 ounces chicken tenderloins
1 ½ cups vegetable oil for frying

Steps:

  • In a large plastic bag, combine the flour, Parmesan cheese, bread crumbs, poultry seasoning, onion powder, garlic powder, salt and pepper. Shake to mix.
  • Heat the oil in a large skillet over medium heat until a drop of water evaporates immediately. Dip one piece of chicken at a time into the milk, and then place in the bag with the coating. Shake until fully coated. Place in the frying pan, and continue with remaining chicken.
  • Cook until the edges are browned, then flip and cook until browned on the other side. If some chicken is done sooner, keep on a paper towel lined plate in a warm oven, so that the chicken is all still warm at serving time.

2 -3 boneless skinless chicken breasts
2 garlic cloves, minced
1 cup mushroom, sliced
1 medium onion, minced
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream
1/2 cup thickened cream
1/2 cup chicken broth
1/4 cup cooked bacon, crumbled (optional)
1/2 teaspoon dried Italian seasoning

Steps:

  • In a large non-stick frying pan, heat oil and cook onions until almost soft. Add garlic and mushrooms, cook til mushrooms soften. Set aside and keep warm.
  • Chop chicken into bite sized pieces Brown chicken in hot pan, adding more oil if required.
  • Add onion, garlic and mushroom mixture back to pan. Stir in chicken broth and Italian herbs.
  • Cover and cook for 20 minutes, simmering over low heat.
  • Add sour cream, thickened cream and bacon, stir through until warmed, DO NOT boil as it will separate. Just heat it gently for a few minutes until the flavours blend.
  • For a change, add broccoli pieces in the last few minutes of cooking, or green beans, corn niblets -- serve over pasta if you like or as a dish on it's own. A definite favourite at my house!

4 skinless chicken breast halves (8 ounces each), or 1 whole chicken (3 to 3 1/2 pounds), cut into serving pieces
Shortening for frying
1/2 cup buttermilk
2 large eggs, beaten
1 1/2 cups flour
1 1/2 teaspoons salt
1 teaspoon black pepper
Chicken Velouté

Steps:

  • Rinse chicken and pat dry with paper towels. Place shortening in a large cast-iron skillet and heat to 350°F. Melted shortening should be 1/2 inch deep.
  • In a shallow bowl, whip together buttermilk and eggs. In another shallow bowl, combine flour, salt, and pepper. Dip chicken pieces in egg mixture, then dredge in seasoned flour. Carefully place about half of the chicken pieces in hot shortening. (The temperature of the shortening will drop when you add the chicken; try to maintain a temperature of 325°F.) Fry chicken until golden brown on all sides or until each piece reaches an internal temperature of 160°F, turning the chicken several times to prevent burned spots. This will take about 10 minutes for skinless breasts and 20 minutes for pieces with skin and bones. Drain cooked chicken on a rack, then keep warm in a 200°F oven while frying remaining chicken. Serve with chicken velouté.
