Easiest Ever MOIST Apple Cake image

A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

2 cups flour (, plain / all purpose (Note 1))
3/4 tsp baking soda ((bi-carb soda) (Note 1))
3/4 tsp EACH salt, cinnamon and ground cloves
1/2 tsp ground nutmeg ((or 1/4 tsp freshly ground))
1 1/4 cups white sugar ((Note 2))
1 cup vegetable oil
2 eggs (, large, at room temperature (55-60g/2oz each))
1 1/2 tsp vanilla extract
2 cups apple ( , peeled, cored and cut into 8mm/ 1/3" cubes (~2 large, 3 small) (Note 3))
1/2 cup flaked raw almonds
Icing sugar . confectioners sugar, for dusting

Steps:

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

1/4 cup fresh lemon juice
5 Granny Smith apples, peeled, cored and sliced into 1/8-inch wedges
One 15.25-ounce box white cake mix
1 1/4 cups apple cider
1/3 cup sour cream
3 large eggs, whisked
Nonstick cooking spray, for the pan
2 1/2 cups packed light brown sugar
1 cup all-purpose flour
1 teaspoon cinnamon sugar, plus more for dusting
2 sticks (1 cup) salted butter, frozen for 20 minutes
Sunny's Bourbon Whipped Cream, recipe follows
1 cup heavy cream
1 tablespoon bourbon
1 tablespoon granulated sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • For the apples: Add the lemon juice and 2 cups of water to a large bowl and stir. Add the apple wedges. Set aside.
  • For the batter: Add the cake mix to a large bowl. Whisk together the cider, sour cream and eggs in a separate bowl. Add the wet ingredients to the cake mix and stir until combined.
  • For the streusel: Add the brown sugar, flour and cinnamon sugar to a large bowl. Stir to combine. Using a box grater, shred the chilled butter into the bowl. Use a pastry cutter or fork to mix and toss the mixture until crumbly. Place back in the refrigerator if needed while preparing to bake.
  • To assemble: Spray the bottoms and sides of a 9-inch springform cake pan with cooking spray. Place a circle of parchment paper on the bottom and spray again. Pour half of the cake batter in the pan. Sprinkle the top with half of the streusel mixture, then add half of the apple slices in a circular fanning pattern. Repeat the layers and dust the top with cinnamon sugar.
  • Bake until a wooden skewer inserted in the center of the cake comes out clean, 1 hour 30 minutes to 1 hour 45 minutes. Cool on a rack for 30 minutes before releasing the spring form.
  • For serving: Serve the cake slices with Sunny's Bourbon Whipped Cream.
  • In a large bowl, whisk the heavy cream until light and soft. Add the bourbon and granulated sugar and continue to whisk until soft, lazy peaks form when the whisk is removed from the bowl. Refrigerate and serve cold.

1/3 cup butter, cut up
1/3 cup packed brown sugar
6 small red baking apples, halved, stems removed, cored (1-1/4 to 1-1/2 lb.)
1 1/3 cups all-purpose flour
2/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2/3 cup milk
1/4 cup butter, softened
1 egg
1 teaspoon vanilla
vanilla ice cream (optional)

Steps:

  • Preheat oven to 350°F
  • Place 1/3 cup butter in a 9x9x2-inch baking pan.
  • Place in oven 5 minutes or until butter melts.
  • Sprinkle brown sugar over butter; stir. Arrange 9 apple halves in mixture, cut sides down.
  • Bake in oven 10 to 15 minutes or until bubbly.
  • Meanwhile, peel remaining apples.
  • Coarsely shred; set aside.
  • In bowl combine flour, granulated sugar, baking powder, ginger, and cinnamon.
  • Add shredded apple, milk, 1/4 cup butter, egg, and vanilla.
  • Beat with electric mixer on low until combined; beat on medium 1 minute. Spoon over apples, spread evenly (apple may be exposed; some butter may come to surface).
  • Bake 35 minutes or until wooden toothpick inserted near center comes out clean.
  • Cool in pan on wire rack for 5 minutes. Loosen edges; invert onto platter. Spoon any topping in pan over top.
  • Cool 20 minutes; serve with ice cream.
  • Makes 9 servings.

This is by far the best cake, one of my faves. and it's so easy. You can top it with cream cheese or cool whip, or serve it with a scoop of ice cream, but I prefer it by it's self. FYI the longer the cake sits the better it is.

4 cups chopped apples (usually about 6 Granny Smiths)
1 cup chopped pecans
2 cups flour
1 cup sugar (may want to add more depending on what kind of apple using)
1 cup oil
1 tablespoon sp. cinnamon
1 tablespoon sp. vanilla
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Preheat oven to 350. Mix all the dry ingrediants together, stir in eggs and oil. Then stir in apples and pecans. Mixture will be extremely thick.
  • Pour in a floured/greased 13x9 pan.
  • Bake for 45 - 55 minutes.
