BLUE CHEESE AND TOMATO SALAD
My husband and I love blue cheese dressing and I modeled this salad on a Blue Cheese and Tomato Salad that we were once served in a resturant. We love it! You can also use bottled Chunky Blue Cheese Salad Dressing, but this homemade dressing is better!

BACON LETTUCE TOMATO (AND MORE) SALAD WITH BLUE CHEESE DRESSING
Second place winner in the 2009 Craze-E Contest. Part BLT, part cobb salad, this meal in a bowl combines the best of both. I almost called it Blobb Salad or CobBLT, but neither sounded very appetizing--LOL!

MARINATED TOMATO, AVOCADO AND BLUE CHEESE SALAD
This is an irresistible combination of summery, spicy, tangy and creamy flavors that compliments picnics perfectly. If you are not a blue cheese fan, you can easily substitute feta, queso blanco or any other crumbly cheese.

TOMATO AND BLUE CHEESE SALSA
Another of my favorites, also out of a newspaper years ago. This is fantastic on steaks cooked on the grill, and as a dressing on baked potatoes. Use your imagination!!! I'm sure this would be just as good with other vegies, and chicken or fish.

RHAPSODY IN BLUE CHEESE TOMATO SALAD
This is another recipe from Cooks Country Magazine posted in response to a request for tomato recipes. Tossing the blue cheese into the salad after it's dressing helps keep the cheese from breaking apart too much. As with the other recipes posted in response to this request, it can be made with regular, cherry, or grape tomatoes.

PUTTANESCA CHICKPEA-TOMATO SALAD
This recipe turns tomato salad into a meal by marrying creamy beans with some of the briny, salty ingredients found in pasta puttanesca, like tomatoes, capers, olives and garlic. While Parmesan isn't traditional to puttanesca, coarsely chopped pebbles of it add bursts of umami to this salad. Feel free to omit the cheese for a vegan dish, or embellish the mix with fresh or dried chile, tinned fish or more vegetables. This recipe is not only adaptable but also improves as it sits: The tomato juices mingle with the oil, olives and capers - and the beans drink it all up.
