2 Tbsp. plus 2 tsp. sugar, divided
2 Tbsp. kosher salt
4 bone-in pork chops (1-1/2 lb.), 1/2 inch thick
1 Tbsp. paprika
2 tsp. onion powder
1/2 tsp. ground black pepper
1/2 cup KRAFT Original or Thick & Spicy Barbecue Sauce

Steps:

  • Mix water, 2 Tbsp. sugar and salt until sugar and salt are dissolved. Pour over chops in resealable plastic bag. Seal bag; turn to evenly coat chops with brine. Refrigerate 1 hour. Meanwhile, mix remaining sugar and seasonings.
  • Heat grill to medium-high heat. Remove chops from brine; discard bag and brine. Coat chops evenly with seasoning mixture.
  • Grill 5 to 6 min. on each side or until done (145ºF), brushing with barbecue sauce for the last few minutes. Remove from grill. Let stand 3 min.

6 pork chops (1/2 to 3/4 inch thick)

1 cup BBQ sauce, you favorite recipe or brand

Steps:

  • Prepare the grill for high direct heat, preheating until it is ready. Oil the grates.
  • Trim off excess fat and salt and pepper both sides of the pork chops.
  • Add to grill over direct high heat with lid closed. Cook for 2 minutes.
  • Turn pork chops over and continue grilling, lid closed, for another 1 minute.
  • Reduce grill to medium low with a gas grill or move chops to a cooler portion of the charcoal grill.
  • Brush a liberal amount of barbecue sauce on the chop and flip. Brush barbecue sauce on the upward side as well, so that all sides have been sauced.
  • Cook for another 1 minute or until the internal temperature of the chop is 145° F.
  • Remove from grill and let rest for about 5 minutes.

These have a really good sweet onion BBQ sauce on them. At first I thought that 1/4 c. would be way too much onion, but it cooks in really well, and the sauce isn't overpowered by them at all. The original recipe called for this amount of sauce on 5 chops, but I usually only put in 3 chops (I'm not a fan of left-over meat and I'm only cooking for 2). If you were to make 5 chops, I would suggest doubling the sauce. Also, depending on the type of chop, you may not need to cook as long (I've used small boneless loin chops and they only took about 1 hr 15 min)

homemade barbecue sauce:
2 tablespoons butter
1/2 cup finely chopped onion
two cloves garlic, crushed
3/4 cup catsup
three quarter cup prepared chili sauce
1/4 cup apple cider vinegar
2 tablespoons yellow mustard
1 tablespoon soy sauce
1 tablespoon worcestershire sauce
1 tablespoon louisiana hot sauce
juice of one half lemon
1/2 teaspoon black pepper
1/2 cup brown sugar
six center cut pork loin t-bone chops, 1 1/2 inches thick
tasty pork chop seasoning, as desired, recipe follows

Steps:

  • 1. to make the barbecue sauce, in a medium pan over medium heat, melt the butter. Add the onion and garlic and cook for about four minutes, stirring often, until the onion is very soft. Add the catsup, chili sauce, vinegar, mustard, soy sauce, Worcestershire sauce, hot sauce, lemon juice, and pepper. Mix well and bring to a simmer. Reduce the heat to low and add the Brown sugar. Mix well and cook for five minutes, stirring often. Remove from the heat. Divide the sauce equally between two bowls, one for brushing on the chops as they grill and one for serving at the table.
  • 2. Season the chops liberally on both sides with tasty pork chop seasoning
  • 3. prepare the grill for cooking over direct medium-high heat. Place the chops directly on the cooking grate. Cook for three minutes. Flip and cook for another three minutes. Brush with sauce and continue cooking, flipping, and brushing with sauce for another six minutes total for slightly pink and juicy or to your desired degree of doneness. Discard the sauce that you've been brushing with. Remove the chops to platter and serve with a second bowl of sauce on the side. Serves six.
  • 4. Feel free to doctor it to your liking with a little extra heat, or a little extra sweet, or whatever your favorite addition maybe. Of course, your favorite might come from a bottle or maybe an old family recipe, so go ahead and substitute yours in this recipe as well.These would go very well served with potato salad and baked beans.

  • Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
  • Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
  • Serve with remaining bbq sauce. Enjoy!

1 tablespoon low sodium soy sauce
1 tablespoon olive oil
2 teaspoons packed brown sugar
2 teaspoons balsamic vinegar

  • Move oven shelf is about 8-inches/20cm from the top heat element. Preheat oven to 430°F (220°C) for standard oven, or 390°F (200°C) for fan forced/convection.
  • Lightly grease a baking sheet/tray with oil. Line with foil or parchment paper, set aside.
  • Combine together Bbq sauce, soy sauce, olive oil, brown sugar, balsamic vinegar, Worcestershire Sauce, minced garlic, salt and cayenne pepper in a bowl, Mix well, set aside.
  • Rub pork chops with salt, pepper, garlic powder, onion powder and paprika. Arrange chops onto prepared baking sheet.
  • Take two-thirds of the marinade to slather each chop generously all over. Reserve the rest for basting later.
  • Bake for 15 minutes. Remove from oven. Flip pork over and baste each chop with the reserved marinade, brushing all over to evenly coat (or spread using the back of a spoon).
  • Change oven setting to broil (grill) on medium-high heat setting. Broil until edges are caramelized, about 7-10 minutes (please make sure oven shelf is about 8-inches/20cm from the top heat element).
  • Remove from oven. Flip once more and baste all over with the pan juices. Return to broiler for a further 1-3 minutes until nice and golden.

2 pounds THICK-CUT (1 1/4- to 1 1/2-inch-thick) boneless pork chops or bone-in pork chops*
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 recipe homemade bbq sauce
1 small yellow onion (thinly sliced)
2 tablespoons cornstarch (mixed with 2 tablespoons water to make a slurry)
Chopped green onion (optional for serving)

Steps:

  • In a small bowl, stir together the garlic powder, onion powder, salt, and pepper. Sprinkle on both sides of the pork chops.
  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. Spread a thin layer of BBQ sauce over the bottom, then scatter the onions over the sauce. Add the pork chops, overlapping somewhat as needed. Spoon the remaining sauce over and in between the chops so that each has a nice amount of sauce on top. Cover and cook on LOW (this recipe does not work well on high) for 1 1/2 to 2 1/2 hours for boneless chops. (If using bone-in chops, your time could be up to 5 or 6 hours on LOW.) Pork chops can dry out easily, so be sure to check them early, especially if it is your first time making pork chops in the slow cooker. Remove the pork to a plate and cover with foil to keep warm while you thicken the sauce.
  • To thicken the sauce in the slow cooker: Add the slurry to the slow cooker with the remaining sauce. Whisk to combine, cover the slow cooker, and set to high. Let cook, stirring occasionally, until the sauce thickens, about 45 minutes to 1 hour depending upon your slow cooker.
  • To thicken the sauce more quickly: Transfer the sauce to a medium saucepan. Whisk in the slurry, and then cook on the stovetop over medium heat, stirring often until the sauce thickens, 5 to 10 minutes. (If your slow cooker insert is stovetop safe, you can remove it from the slow cooker and place it directly on the burner. Do not do this unless you are POSITIVE your insert is stovetop safe or it may crack).
  • Serve the chops hot, topped with the thickened sauce and a sprinkle of green onion.

For the classic barbecue sauce:
2 tablespoons vegetable oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 lemon
1/2 cup/100 g brown sugar
1/4 cup/60 ml vinegar
1/2 cup/125 ml tomato ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce, or to taste
1/4 teaspoon chili powder, or to taste

Steps:

  • Make the barbecue sause:
  • heat the oil in a frying pan and sauté the onion and garlic until soft and lightly browned, 4-5 minutes. Grate the zest from the lemon and squeeze the juice. Add the lemon zest, half the lemon juice, the sugar, vinegar, ketchup, Worcestershire sauce, Tabasco sauce and chili powder to the onion and simmer gently, 5 minutes. Taste, adjust the seasoning and let cool.

However, I can show one of my absolute favorites, and the one that I think every home cook needs to know – Pan Roasting. A pan roasted pork chop (assuming you use the right techniques) has a great sear on the outside which creates little caramelized bit and pieces that have a ton of flavor. At the same time, the center of the pork chop is just cooked through, and remains both tender and juicy. And, with a pan roasted pork chop, you get the side benefit of pan drippings with which you can make a killer sauce.   • Buy the right Pork Chop Before you even start cooking, you need to make sure your starting with the right meat. Buy a nice, thick pork chop. At least 1 inch thick, 2 or more is even better. Thin chops are easy to dry out and overcook…and generally more trouble than they are worth Brine & Season the Pork Chop Brining adds a ton of flavor and moisture to the chop, and lessens the risk of drying out the chop while you cook it.
