A sure crowd pleaser, this recipe uses nacho cheese tortilla chips, tomatoes with green chile peppers and cream of mushroom soup. And for the finicky eater, you can use cream of celery soup instead. Serve with sour cream, or the toppings of your choice.

1 pound ground beef
salt to taste
ground black pepper to taste
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) bag nacho-flavor tortilla chips
6 ounces processed cheese food, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over high heat, brown the ground beef and season with salt and pepper to taste; drain fat. Stir in diced tomatoes with green chile peppers and condensed cream of mushroom soup.
  • Cover the bottom and sides of a 9x13 inch baking dish with nacho-flavor tortilla chips. Pour in the meat mixture. Top with remaining tortilla chips and about 12 slices of processed cheese food, or enough to cover the entire surface of the dish.
  • Bake in the preheated oven 15 to 20 minutes, or until cheese is lightly browned.

Woah, baby! I have this snack pretty frequently with multiple variations because I use whatever is available in my fridge -- last night I hit the el-primo combination. I will definitely use this combo over and over from now on. I hope you like this great brunch (or midnight) snack as much as I did, my friends!

3 cups nacho chips (I like the white ones best)
1/2 cup monterey jack cheese, shredded
1/4 cup sharp cheddar cheese, shredded
1/2 cup black olives, sliced
1/4 cup jalapeno pepper, canned, sliced
1 tomatoes, finely diced
1/2 teaspoon Tabasco sauce
1 cup salsa (for dipping)

Steps:

  • Lay out the chips on a microwave-proof plate.
  • Add all the toppings except for the salsa and Tabasco, layering the cheese on last.
  • Microwave on the high setting for one minute.
  • Sprinkle on the Tabasco and spoon the salsa on to the gooey chips as you eat them. I use medium hot salsa and I prefer the Bellview brand to all others (except for home made.).

¼ cup chopped red onion
4 tomatoes, seeded and finely chopped
½ cup chopped fresh parsley
¼ cup olive oil
1 lime, juiced
1 pinch salt and black pepper
1 (8 ounce) package tortilla chips
2 cups shredded Cheddar cheese, divided
½ cup sour cream
½ cup guacamole

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix together the onion, tomatoes, parsley, olive oil, lime juice, salt and pepper in a bowl.
  • Spread tortilla chips in a single layer onto a baking sheet, and spoon about 1 teaspoon of the tomato salsa onto each chip. Spread 1 cup of Cheddar cheese over the nachos, top the chips with another teaspoon or so of salsa, and top with the remaining 1 cup of cheese.
  • Bake the nachos in the preheated oven until the cheese is bubbling, about 5 minutes. Serve hot with sour cream, guacamole, and any remaining salsa on the side for dipping the chips.

2 tablespoons cheddar cheese powder
1 ½ teaspoons chili powder
1 teaspoon onion powder
1 teaspoon kosher salt
6 dried lasagna noodles, cooked according to package instructions and drained, still warm
1 tablespoon avocado, or canola oil
1 teaspoon hot sauce
salsa, for serving

Steps:

  • In a small bowl, stir together the cheddar cheese powder, chili powder, onion powder, and salt until evenly combined.
  • In a medium bowl, toss the warm lasagna noodles with the avocado oil and hot sauce until well coated. If any noodles stick together, separate them and make sure all sides are coated in oil.
  • Preheat the air fryer to 390˚F (200°C) for 5 minutes.
  • Layer three of the lasagna noodles to the air fryer basket. Cook for 6 minutes, tossing every 2-3 minutes and watching carefully to avoid burning, until the pasta is beginning to brown and crisp.
  • Add the cooked pasta chips to the same medium bowl and tear into smaller pieces. Toss with half of the spice mixture. Repeat with the remaining lasagna noodles. Let the lasagna chips cool slightly before serving, about 5 minutes. The chips will continue to crisp as they cool.
  • Serve the pasta chips with salsa for dipping.
