RICE PUDDING FOR ONE
I'm passing this along for all the seniors and singles. I haven't tried it myself, but plan to soon as it sounds easy and tasty.

Steps:
- Bring water to a boil and add rice.
- Cover and simmer for 20 minutes.
- Preheat oven to 350F degrees.
- Whisk milk and egg together, then whisk in sugar and vanilla.
- Stir into the hot cooked rice and then stir in raisins.
- Pour rice mixture into a small greased casserole dish and bake, uncovered, for 20 minutes.
- Serve warm with pouring cream.
RICE PUDDING (FOR ONE)
A simple recipe with the sweet creaminess of rice pudding but without the need to slave over the stove top for it. This was done using leftover brown rice that had been frozen.

Steps:
- Combine rice, milk and cream in a microwave bowl and stir.
- Spoon a few tablespoons of the liquid out and stir in cornstarch in a small bowl until no lumps are present. Add the cornstarch mixture and stir.
- Microwave on medium high for about 3 minutes, or until desired thickness is reached. Add cinnamon and honey and serve warm.
KHEER - INDIAN RICE PUDDING (SLOW COOKER)
From "The Indian Slow Cooker" by Anupy Singla. This recipe makes a somewhat thin rice pudding, with the delicious taste of cardamon. The slow cooker makes it easy. The original recipe called for vegetable oil, but I used ghee instead. The recipe is vegan if you use soy milk. To make half the recipe, use a 3 1/2 quart slow cooker.

Steps:
- Coat the bottom and sides of a 5 quart slow cooker with vegetable oil.
- Put the rice, sugar, cardamon seeds, raisins and milk in the slow cooker. If using agave nectar, add it towards the end, as it will make the dish pinkish-brown in color. Note: I used only half of the cardamon seeds and that was plenty flavorful for me.
- Cook on HIGH for 3 hours, stirring once or twice. Be careful not to let it overcook, as the milk will separate. (I found mine a bit too thin at the end of three hours and cooked another 30 minutes with the top off, but I have an old slow cooker).
- Sprinkle with chopped nuts and serve, hot or cold. It will thicken as it cools.

Steps:
- Bring rice, water and salt to a boil over med-high heat.
- Simmer covered until water has been absorbed (approximately 15 minutes).
- Stir in milk and sugar and cook uncovered over medium heat for 30-40 minutes, stirring frequently--especially towards the end of cooking.
- The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency.
- DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.
- Remove from heat and stir in vanilla.
- Turn into a bowl or cups.
- You can sprinkle cinnamon on the top if you like.
- COVER with plastic wrap directly on surface "IF" you don't want a skin.
- COOL.

Steps:
- Boil the milk with sugar.
- Prepare the custard by adding a little cold milk to the custard powder in a big-sized bowl.
- Once the milk has boiled, remove from flame.
- Allow it to cool for 15-20 minutes .
- In the meantime, take a serving dish.
- Spread a layer of cake slices in it.
- Now, mix the milk into the custard-milk bowl.
- Pour some of this on the cake slices.
- Now pat this with a layer of biscuit crumbs.
- Repeat till 2-3 layers are made in this manner.
- Decorate with grated chocolate.
- Chill and serve after dinner!

- In a medium saucepan, add the water and bring to a boil. Stir in the rice and salt. When the rice seems done and most of the water has been absorbed, remove from heat and let the rice steam for 10 minutes before serving. This makes about 4 cups rice -- more than is needed for the pudding recipe.
- In a small pan, combine the rice with the milk and raisins or other dried fruit. Bring to a simmer over medium-high heat, then reduce the heat to maintain a gentle simmer. While the rice is cooking, stir in the saffron threads, cardamom, honey and salt. Cook until most of the milk has been absorbed, 10 to 15 minutes, stirring frequently.
- Transfer the rice to a pretty bowl, and garnish it with a drizzle of honey and the chopped pistachio nuts. If your rice absorbed all the milk and you want more liquid, add more milk or consider adding a few spoonfuls of yogurt.
