SUPER EASY BREAKFAST CASSEROLE
This is very simple and easy and perfect for when you are "in a pinch"! To spice it up offer hot sauce or salsa. I like to serve it along with biscuits and fresh fruit!

Steps:
- 1. Brown sausage and then drain.
- 2. Beat eggs, add milk, salt and mustard; mixing well.
- 3. Grease bottom of 9x13 baking dish. Place bread cubes on bottom of dish. Then, spoon on sausage and sprinkle with cheese. Pour egg mixture on top.
- 4. Refrigerate overnight.
- 5. Preheat oven to 350 degrees and bake for 45 minutes. Let stand for 5 minutes before cutting.

SUPER SIMPLE BREAKFAST CASSEROLE
This is a recipe we made up, and I have to say, it came out really well! Use whatever meat you have on hand--leftover ham, chicken, or sausage would all be nice. Add some leftover roasted veggies, chopped fine. This recipe is incredibly adaptable.

Steps:
- Preheat oven to 350. Grease 9x13" glass pan. Thaw sausages and chop finely.
- Heat olive oil in medium skillet and saute onions until golden.
- Put potatoes in mixing bowl, add onions and sausages, stir, and add seasonings to taste. Pour into prepared pan. Sprinkle cheese on top of casserole.
- Beat eggs and milk together lightly. Pour over casserole.
- Cover casserole with foil and bake for 45 minutes. Uncover casserole, and bake 15 minutes more, or until casserole is set and cheese is golden.

This is my family's favorite breakfast recipe, always served on holiday mornings. It's great when complemented with fruit and resurrection cinnamon rolls. You can assemble this casserole, cover it with plastic wrap, and refrigerate it overnight before baking, if desired.

- Heat a large skillet over medium-high heat. Cook and stir sausage and water in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray. Spread crescent roll dough out into prepared baking dish to cover the inside of the dish completely. Prick dough all over with a fork.
- Bake in the preheated oven until slightly set, about 5 minutes.
- Beat eggs, milk, salt, and black pepper together in a bowl.
- Spray a large skillet with cooking spray and place skillet over medium heat. Cook and stir egg mixture in hot skillet until eggs are set, 3 to 5 minutes. Break up eggs into small pieces using a wooden spoon. Spread eggs evenly over crescent roll dough, spread sausage over eggs, and top with Cheddar cheese.
- Bake in the preheated oven until crust is browned and casserole is hot, about 25 minutes.

- Preheat oven to 350. Spray a 9x13 inch pan with cooking spray. (I use oil or my butter wrappers instead of cooking spray).
- Combine the eggs, sour cream, milk, cheese, salt, and pepper in a large bowl. Mix on low speed with electric mixers, just until combined.
- Heat a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture.
- Add the bell peppers and onion to the same skillet the sausage was cooked in and saute for 2 to 3 minutes. Add to the bowl with the eggs and stir everything to combine.
- Pour mixture into greased 9x13 inch pan and bake for 35 to 50 minutes or until the edges are set and the center is just barely jiggly.
- Leftover egg casserole can be stored in the fridge and enjoyed within 3 to 4 days.
