This is not your grandma's cheese ball. It has all the flavor of an everything bagel without all the carbs and with just 3 ingredients! Want to emphasize the bagel taste? Serve it with bagel chips and some raw veggies for dipping to keep things healthy.

8 ounces reduced-fat cream cheese, softened
1 ½ cups shredded Cheddar cheese
4 tablespoons everything bagel seasoning, divided

Steps:

  • Stir cream cheese, Cheddar and 2 tablespoons seasoning together in a medium bowl.
  • Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then wrap completely in plastic. Refrigerate for at least 1 hour.
  • Just before serving, pour the remaining 2 tablespoons seasoning into a shallow dish. Roll the cheese ball in the seasoning, pressing to adhere.

2 teaspoons prepared horseradish
1 cup sharp New York cheddar

2 scallions

6 slices bacon
cooked and chopped
1/4 cup dehydrated onion
1/4 cup poppy seeds
1/4 cup sesame seeds
1/4 cup garlic flakes
Coarse sea salt and freshly cracked black pepper
Bagel chips
for serving

Steps:

  • In a bowl, mix together cream cheese, sour cream, horseradish, cheddar, scallions and bacon
  • Form the cheese mixture into a ball and wrap in plastic wrap to chill for at least 1 hour
  • In a small bowl, mix together the onion, poppy seeds, sesame seeds, garlic flakes, salt and pepper
  • Once cheeseball is set, roll the cheese ball in the everything bagel seasoning mix and plate with some bagel chips alongside

Steps:

  • In a bowl, add softened cream cheese, sharp cheddar, parmesan, worcestershire sauce, and one tablespoon of everything bagel seasoning. Mash ingredients together until evenly incorporated.
  • Form cheese mixture into a ball using plastic wrap or wax paper. Refrigerate for about 2 hours, or until firm.
  • Pour remaining 2 tablespoons of everything bagel seasoning onto a plate. Unwrap cheese ball and gently roll in seasoning until evenly coated.

1 teaspoon active dry yeast
4 cups all-purpose flour, plus more for rolling
1 teaspoon kosher salt
1/3 cup olive oil, plus more for the bowl
16 ounces cream cheese, softened
1 1/2 cups grated Cheddar cheese
1 1/2 cups diced ham
2 teaspoons toasted sesame seeds
2 teaspoons poppy seeds
1 1/2 teaspoons flaked sea salt
1 teaspoon dried onion flakes
1 teaspoon dried garlic flakes
1/2 teaspoon coarsely ground black pepper
1 tablespoon honey
Nonstick cooking spray, for the baking sheet

Steps:

  • For the dough: Sprinkle the yeast over 1 1/2 cups warm water (not over 110 degrees F) and allow it to bloom. When it has bloomed, the mixture will bubble a bit.
  • In the bowl of a stand mixer fitted with a paddle attachment, combine the flour and salt. With the mixer running on low, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until a dough forms.
  • Drizzle roughly 2 tablespoons of olive oil in a medium bowl and coat the sides of the bowl with it. This will prevent the dough from sticking. Tip the dough into the oiled bowl, form a ball with it and gently coat it lightly with the residual olive oil on the sides. Cover the bowl tightly with plastic wrap and allow the dough to rise in a warm place until roughly double in size, at least 1 hour.
  • For the filling: Combine the cream cheese, Cheddar and ham in a large mixing bowl. Stir until well combined. Set aside.
  • For the everything bagel seasoning: Mix together the sesame seeds, poppy seeds, sea salt, onion flakes, garlic flakes and pepper in a small bowl. Set aside.
  • Preheat the oven to 425 degrees F. Add the honey and 10 cups water to a large pot and bring to a boil.
  • Once the dough has risen, divide it into 16 pieces. Roll each piece into a ball. Lightly flour a work surface and use a rolling pin to roll each ball into a 4-inch circle roughly 1/4 inch thick. Top each circle with 3 tablespoons of the filling. Pull the dough up and around the filling, pinching the seam at the top. Make sure you fully encase the filling. Place the finished bombs seam-side down on a greased baking sheet.
  • Add the bagel bombs to the boiling water in batches of 4; boil for 1 minute, flipping halfway through. Remove to a separate baking sheet and top each with a generous pinch of the everything bagel seasoning blend.
  • Once all of the balls of dough have been boiled, transfer them to another greased baking sheet and bake until golden brown, about 25 minutes. Enjoy!
  • Freezer Directions: Follow the steps above and allow the bagel bombs to cool completely after baking, roughly 45 minutes to 1 hour. Place in the freezer, uncovered, for 20 minutes. Remove and individually wrap each bomb in foil. Return them to the freezer to fully freeze.
  • When ready to eat, remove a bagel bomb (or more) from the freezer. Remove the foil and wrap the bomb in a paper towel. Microwave for 90 seconds or until cooked through. Allow it to sit for 1 minute before taking out of the microwave. Unwrap and enjoy!

I have been making these for years from a recipe I clipped from a magazine and they are always a hit. Cook time is chill time.

2 cups shredded swiss cheese
2 cups shredded cheddar cheese
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/2 cup chopped onion
1 (2 ounce) jar pimiento
2 tablespoons sweet pickle relish
10 slices bacon, crisp-cooked, drained, and crumbled
1/2 cup finely chopped pecans
1 dash salt
1 dash pepper
1/4 cup snipped parsley
1 tablespoon poppy seed
assorted cracker

Steps:

  • Let swiss and cheddar cheeses come to room temperature.
  • In a large bowl beat together cream cheese and sour cream till fluffy.
  • Beat in swiss cheese, cheddar cheese, onion, undrained pimiento, pickle relish, half of the bacon, 1/4 cup of the pecans, salt and pepper.
  • Cover and chill till firm.
  • Shape into 1 large or 2 small balls on wax paper.
  • In a small bowl combine remaining bacon, pecans, parsley, and poppy seeds.
  • Turn mixture out onto clean clean sheet of waxed paper.
  • Roll cheese balls in seed mixture to coat.
  • Wrap and chill.
  • Let stand 30 minutes at room temperature before serving.
  • Serve with crackers.
