SALMON WITH LEMON-HERB MARINADE
Here's one of the easiest ways to entertain: broil or grill a large salmon fillet, then adorn it with lemon wedges and rosemary sprigs. This recipe marinates the rich salmon in lemon juice, soy sauce and herbs. Serve it with a sharply flavored potato salad (like this one, with red Bliss potatoes and watercress in a yogurt-horseradish dressing) and a large bowl of greens.

Steps:
- Wipe salmon fillet dry with paper towels. Combine remaining ingredients (except lemon wedges and rosemary sprigs) in small bowl and mix well. Pour mixture over salmon, making sure it is coated on both sides. Marinate for at least an hour before cooking.
- Preheat broiler or grill. Cook salmon, turning once - five to six minutes each side for medium rare.
- Place salmon on serving platter and garnish with lemon wedges and sprigs of rosemary.

- In a large, nonreactive container, blend the olive oil, red wine vinegar, white wine, lemon juice, garlic, and onion. Season with tarragon, parsley, and pepper. Place lamb chops in the mixture. Cover, and marinate in the refrigerator about 2 hours.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Grill lamb chops on the prepared grill 5 minutes per side, to an internal temperature of 145 degrees F (63 degrees C). Discard remaining marinade.

MARINATED PAN- ROASTED DUCK BREASTS
I prepare this on special occasions such as a romantic New Year's Eve dinner or my husband's birthday. Though I prefer tarragon, you could use basil leaves or rosemary instead. I keep it simple, serving with oven roasted herbed-potatoes (over which the sauce is excellent) and fresh asparagus.

- For marinade: Combine wine, soy sauce, garlic, tarragon and pepper in a shallow bowl large enough to contain both breasts side by side.
- Marinate the breasts overnight.
- Just before cooking, strain marinade liquid into saucepan.
- Heat a large saute pan without any oil.
- Score the fatty side of each breast several times.
- Pan-roast breasts, FAT-side down for about 2 minutes.
- Turn to flesh side, and cook another 10 minutes.
- Remove from saute pan to cutting board.
- At the same time as you are cooking the breasts, bring marinade to boil, adding butter and sherry.
- Boil vigorously 5 minutes or until slightly reduced and beginning to thicken.
- Slice breast thinly on the bias, away from the fat.
- Return the slices BRIEFLY to the hot saute pan to brown.
- By this I mean literally lay each slice in the pan, immediately turn it over, and remove.
- This will cook the duck medium rare.
- Serve with sauce.

TARRAGON CHICKEN MARINADE
I love tarragon. This recipe uses that wonderful herb from my herb garden. I guess it could be used on seafood and steamed veggies as well. Easy and delish!

- In med bowl whisk together first 5 ingredients.
- Continue whisking and whisk in oil slowly and continuously
- Marinade chicken 2 hours or more.
- Store in fridge up to 1 week. Shake before using.
TARRAGON SOY MARINADE
Steps:
- Put all ingredients (except meat) into blender, blend and reserve a small amount of marinade for basting or for dressing. Make three or four long cuts 3/4 of the way to one end of the chicken breasts resulting in a piece resembeling a 3 or four fingered hand. Put meat in marinade and refrigerate for and hour or two ocasionally agitating to cover all the meat. Grill over a hot fire till done. Rest a few minutes. Slice and serve. Any left-over meat can be chilled, cut up and mixed with the mayo/marinade dressing to make a great meat salad, adding chopped celery & chopped scallions.
ROAST PORK TENDERLOIN WITH MUSTARD-TARRAGON SAUCE

- Mix wine, garlic, oil, rosemary, thyme, and allspice in large resealable plastic bag. Add pork and turn to coat. Marinate at least 30 minutes and up to 1 hour, turning bag occasionally.
- Preheat oven to 375°F. Remove pork from marinade and place on rack on rimmed baking sheet; discard marinade. Spread 3 tablespoons mustard all over pork. Roast until thermometer inserted into thickest part of pork registers 145°F, about 25 minutes. Transfer pork to platter and let stand 10 minutes.
- Meanwhile, boil cream, broth, tarragon, and remaining 2 tablespoons mustard in heavy medium saucepan until reduced to 1 cup, whisking occasionally, about 10 minutes. Season sauce to taste with pepper.
- Slice pork crosswise into rounds and serve with sauce.
