ESCAROLE SALAD



Escarole Salad image

This simple side salad is delicious paired with roasted chicken and vegetables.

2 cups walnuts, divided
1/2 cup extra-virgin olive oil
1 clove garlic, smashed
1/4 cup red-wine vinegar
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper
1 head escarole, chopped
1/2 small red onion, thinly sliced
3 ounces Pecorino Romano cheese, shaved

Steps:

  • Preheat oven to 350 degrees. Place 1 cup walnuts on rimmed baking sheet and toast in oven 10 minutes. Cool to room temperature and coarsely chop.
  • Finely chop remaining walnuts and place in small saucepan with olive oil and garlic. Bring to bare simmer over medium heat. Remove from heat, cool to room temperature, and strain oil into medium bowl. Whisk vinegar, salt, and black pepper into oil.
  • Spread escarole over a large platter. Sprinkle coarsely chopped walnuts and red onion over escarole and drizzle dressing over salad. Shave Pecorino Romano on top and serve immediately.

  • Make lemon-basil oil:
  • Mix 1/3 cup olive oil, a strip of lemon zest, 8 torn basil leaves and a pinch of salt; infuse 2 hours. Soak 1/2 thinly sliced red onion in water for 10 minutes to mellow the bite. When ready to serve, toss 1 head chopped escarole, the onion slices, 2 sliced celery stalks, 3/4 cup chopped green olives and a few tablespoons olive juice, 2 segmented lemons and 1/4 cup each toasted pine nuts and golden raisins in a serving bowl. Discard the zest from the infused oil, drizzle over the salad and season with salt and pepper.

  • Puree 1/4 cup apple cider vinegar, 3 tablespoons chopped walnuts, 2 teaspoons dijon mustard, 1 teaspoon honey and 1/2 teaspoon kosher salt in a blender until smooth. Slowly add 1/3 cup olive oil with the motor running; blend until creamy. Combine 1 torn head escarole, 1 thinly sliced fennel bulb, 2 thinly sliced apples and/or pears, 1 cup fresh parsley, ½ cup chopped walnuts and 1/4 cup minced chives in a large bowl. Add the dressing, season with salt and pepper and toss.

2 tablespoons EVOO, plus more for drizzling
3/4 pound ground beef sirloin (80 percent lean)
3/4 pound hot Italian sausage, bulk or cut from casing
1 small to medium onion
4 cloves garlic
4 sprigs of fresh rosemary
Salt and pepper
2 tablespoons sun-dried tomato paste
1/2 cup red vermouth or red wine
Two 15-ounce or one 28-ounce can Italian cherry tomatoes or San Marzano tomatoes
1 1/2 cups passata (tomato puree) or cherry tomato passata
1 pound fusilli lunghi (long fusilli), fusilli short pasta curls or cavatappi (hollow pasta corkscrews)
Grated pecorino, to serve
Bruschetta with Ricotta and Walnuts, recipe follows
Escarole and Fennel Salad, recipe follows
1/3 cup walnut halves
A few stems of fresh thyme (a small handful)
1 small lemon
About 1 1/2 cups of fresh ricotta cheese (sheep's milk or cow's milk)
2 cloves of garlic
Salt and pepper
EVOO, for liberal drizzling
Crusty peasant-style white bread, sliced for bruschetta (1/2 inch thick)
Flaky salt, for sprinkling
1 head escarole, cleaned
1/2 bulb fennel
1 small red onion
3 ribs celery with leafy tops
1 lemon
EVOO, about 3 tablespoons
Shaved pecorino, for serving
Salt and pepper

Steps:

  • Place water on to boil for pasta. Gather ingredients.
  • Heat Dutch oven or deep skillet with lid over high heat, add EVOO, 2 turns of the pan, then add meats and brown and crumble the meat. Meanwhile, peel and finely chop onion, slice or grate garlic and strip and chop rosemary (2 to 2 1/2 tablespoons once chopped). Add onions to meat and stir, then season with salt and pepper. Add garlic and rosemary, partially cover and cook 5 minutes, stirring occasionally. Add tomato paste and stir, then add red vermouth or wine and let it absorb. Add tomatoes and passata and reduce heat to low. Partially cover and simmer 15 minutes.
  • Salt water and cook pasta a minute less than package directions, reserving 1/2 cup starchy cooking water. Toss drained pasta with three-quarters of the sauce and a couple handfuls of pecorino and the pasta water to combine, add a fat drizzle of EVOO, optional. Serve in shallow bowls or on platter topped with remaining meat sauce. Serve with Bruschetta with Ricotta and Walnuts and Escarole and Fennel Salad.
  • Toast nuts on small pan in hot oven or in a skillet over moderate heat until browned and fragrant. Cool a bit, then grind in food processor.
  • Strip the thyme and chop, about 3 tablespoons. Zest about 2 teaspoons of lemon zest and halve the lemon.
  • In a small bowl combine the cheese, walnuts, 1 clove of grated or pasted garlic, lemon zest, juice of half the lemon (reserve the other half for another use) most of the thyme, salt and pepper, and a fat drizzle of EVOO (about 2 tablespoons). Transfer to serving bowl and top with remaining thyme.
  • Char bread under hot broiler on high or over open flame on stove. Rub with cut clove of garlic, then drizzle bread with EVOO and sprinkle with flaky salt.
  • Coarsely chop escarole. Very thinly slice or mandoline-slice fennel and red onion. Thinly slice celery on bias. Place salad in bowl and dress with lemon juice and EVOO, pecorino, salt and pepper.

Pleasantly bitter escarole and buttery walnuts replace the romaine and croutons in this twist on the iconic salad.

1 head escarole, leaves separated
2 garlic cloves, peeled and smashed
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter, melted
1 1/2 cups walnut halves
1 cup finely grated Parmigiano-Reggiano cheese (3 1/2 ounces)
5 oil-packed anchovy fillets
2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1 large egg yolk
1/3 cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Submerge escarole leaves in a large bowl of ice water for 10 minutes. Then thoroughly dry in a salad spinner or colander, and place in a single layer on a paper towel-lined dish cloth. Roll up cloth; refrigerate until lettuce is crisp and completely dry (any water clinging to leaves may cause the dressing to break), at least 2 hours and up to 2 days. Tear the leaves into bite-size pieces.
  • Place garlic in a large wooden bowl, add 1/4 teaspoon salt, and mash to a paste with a fork. Transfer half of paste to a rimmed baking sheet; set bowl aside. With the fork, stir butter into garlic paste on sheet. Toss with walnuts to evenly coat. Sprinkle with 1/4 cup cheese, season with salt and pepper, and toss again to evenly coat. Spread into a single layer. Bake, stirring halfway through, until toasted and golden, 12 to 15 minutes. Let cool to room temperature on sheet.
  • Add anchovies to bowl with garlic paste and mash to a paste with a fork. Whisk in lemon juice, Worcestershire, Dijon, and egg yolk. Season with 1/4 teaspoon each salt and pepper. Slowly add oil in a thin stream, whisking constantly. Add lettuce and toss to evenly coat, then toss with remaining 3/4 cup cheese and walnuts. Serve immediately.

1 large blood orange
1 medium head escarole, outer leaves discarded, remaining leaves torn into 1 1/2-inch pieces (about 10 cups)
2 celery stalks, cut 1/4 inch thick diagonally
1/2 cup celery leaves, preferably tender inner leaves
1/3 cup walnut halves, coarsely chopped
2 teaspoons extra-virgin olive oil
2 teaspoons champagne vinegar
1/2 teaspoon coarse salt
1/8 teaspoon freshly ground pepper

Steps:

  • Cut ends off orange, then cut off peel, pith, and outer membrane following the curve of the fruit. Cut between each membrane to remove whole segments, and place in a small bowl. Squeeze juice from membranes into another bowl. (You should have about 2 tablespoons juice.) Discard membranes.
  • Cut each orange segment in half, and toss with escarole, celery stalks and leaves, and walnuts in a large bowl. Add reserved juice, oil, vinegar, salt, and pepper, and toss to coat. Serve immediately.

4 teaspoons extra-virgin olive oil
Coarse salt and ground pepper
1/4 cup chopped toasted walnuts
1/4 cup crumbled blue cheese
Fresh lemon juice (optional)

Steps:

  • Cut escarole into 1 1/2-inch wedges, leaving base intact. In a large skillet, heat 2 teaspoons olive oil over medium; add a few wedges and cook, turning, until escarole is wilted and light brown on all sides, 3 minutes total. Season with salt and pepper and transfer to a platter. Repeat twice with more oil and remaining escarole. Top with walnuts and blue cheese; drizzle with lemon juice, if desired.

2 tablespoons rice vinegar
6 tablespoons olive oil
1 shallot, peeled and sliced very thin
1 -2 garlic clove, crushed

1 -1 1/2 lb escarole, trimmed and cut into thin crosswise slices
6 ounces Fontina cheese, cut into small cubes
1 cup walnuts, lightly toasted & finely chopped

Steps:
