Steps:
- Preheat the broiler. If using fresh jalapeños, cut them in half and remove the seeds, then place cut side down on a baking sheet. Broil them for 1-2 minutes, until the skins blacken and bubble. Remove from the broiler. When cool enough to handle, peel off and discard the outer skin, then dice the peppers. Set aside.
- Turn the oven to 400˚F (200˚C).
- In a medium bowl, mix the cream cheese and sour cream. Add the cheddar cheese, ¾ of the Parmesan, and the diced jalapeños. Mix well.
- In a separate medium bowl, mix the bread crumbs, melted butter, the remaining Parmesan cheese, and the parsley.
- Spoon the jalapeño mixture into an 8x8-inch (20x20-cm) baking dish or a medium cast iron pan, spreading evenly. Sprinkle the bread crumb topping evenly on top.
- Bake for 20 minutes, or until hot and the bread crumbs are golden brown. Serve with bread or crackers.

- Cover the cashews with cold water by 1 to 2 inches in a medium saucepan and bring to a boil. Cook until the cashews are doubled in size, about 15 minutes. Remove from the heat, drain and rinse.
- Put the cashews in a blender or food processor along with the cilantro, 1 jalapeño, the garlic, 1 cup water, the lemon juice and 1 tablespoon salt. Blend until creamy and smooth. Add more salt, jalapeño and/or lemon juice to taste and reblend if necessary.
- Refrigerate the dip until cold. Serve alongside crudités and/or tortilla chips. Provecho!

- No need to drain the cans of chillies or jalapenos, it is a personal option. Spread the dip into a greased casserole dish.
- In a bowl, combine the panko breadcrumbs, the additional 1/2 c Parmesan cheese and melted butter. Sprinkle crumb mixture evenly over the dip and bake in a preheated 375 degree oven for about 20 minutes until the top is browned and its bubbling around the edges.

Steps:
- Mix the dry ranch dip packets, salt, and can of green chilis into the sour cream.
- Finely chop the jalapenos, garlic and cilantro. (I combined this step and the following one with a blender / food processor which can work very well depending on the type of blender you have. The key is to chop the mixture, not to liquefy it.).
- Mix the chopped mixture into the sour cream mixture.
- Refrigerate the dip to thicken.
