4 pounds beef top sirloin steak, cut into 1/2-inch cubes
4 cups chopped onions
1/4 cup butter
4 quarts hot water
4 cups sliced carrots
4 cups cubed peeled potatoes
2 cups chopped cabbage
1 cup chopped celery
1 large green pepper, chopped
8 teaspoons beef bouillon granules
1 tablespoon seasoned salt
1 teaspoon dried basil
1 teaspoon pepper
4 bay leaves
6 cups tomato juice

Steps:

  • In two Dutch ovens, brown beef and onions in butter in batches; drain. Add the water, vegetables and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Add tomato juice; cover and simmer 10 minutes longer or until the beef and vegetables are tender. Discard bay leaves.

CLASSIC BEEF AND BARLEY SOUP



Classic Beef and Barley Soup image

Hearty and delicious beef and barley soup, with tender beef, barley and lots of vegetables. A great dinner soup!

Number Of Ingredients 18

1 lb. stewing beef cubes
4 cups water
3/4 tsp Kosher salt
2 1/2 Tbsp red wine vinegar
1 Tbsp olive oil
1 clove garlic (roughly chopped)
1/2 cup onion (diced)
1 cup celery (finely diced)
1 cup carrots (diced or thinly sliced)
1/3 cup red wine (optional, can omit)
1/3 cup tomato paste (1/2 of a small can)
Beef (from above)
4 cups beef broth (plus more, as needed)
1/3 cup pearl barley
1 bay leaf
Dash Worcestershire Sauce
3-4 Tbsp fresh parsley (finely chopped)
Salt and pepper (as needed, to taste)

Steps:

  • Pre-cook the beef: Combine the water, beef, red wine vinegar and salt in a large pot. Bring to a boil, then reduce heat to low and gently simmer for 1 1/2 hours. Drain, discarding liquid and reserving the beef. Allow to cool slightly, then chop into desired size for soup (or make ahead and refrigerate until needed).
  • For the soup: In a large soup pot, heat the oil over medium heat. Add the garlic, onion, celery and carrots to the pot and cook, stirring, for 6-7 minutes. Add red wine to the pot and allow to cook until mostly evaporated. Add the tomato paste and stir in. Cook the tomato paste with the vegetables for about 1 minute. Add the beef broth, cooked beef pieces, pearl barley and bay leaf. Stir to combine.
  • Bring mixture to a boil, then reduce heat to medium low and allow soup to simmer gently for 60-75 minutes. Watch the soup as it cooks and stir regularly. As the barley cooks, it will absorb the liquid. You may find that you need to add additional beef broth to the pot as the soup cooks. You don't want the soup to get too dry or the barley will sink to the bottom of the pot and may scorch. Ideally, add a bit of broth more often, rather than adding a lot all at one time, so you don't end up with too much broth in the pot and a thinner soap than you want.
  • Taste test the soup to make sure the barley and carrots are tender. If not, cook a little bit longer. If soup is too thick, add a bit more broth at the end of cooking to thin it as desired. Stir in the Worcestershire sauce and parsley. Taste soup for seasoning and add additional salt and some freshly ground pepper, to taste.

2 to 3 pounds beef shanks
8 cups beef stock (unsalted or low sodium)
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1/4 teaspoon pepper (coarsely ground)
1 bay leaf
Kosher salt (to taste)
2 (14.5-ounce) cans tomatoes (diced)
2 cups cabbage (shredded)
1 1/2 cups green beans (fresh cut or frozen)
1 1/2 cups potatoes (diced, raw)
1 cup carrots (thinly sliced)
2 teaspoons Worcestershire sauce
Optional: 1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • In a large stockpot or Dutch oven , combine the beef shanks, beef stock, onion, pepper, bay leaf, and salt. Cover the pot and bring it to a boil over medium-high heat. Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
  • Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
  • Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

I know it sounds like a really odd combination, but it turns out to be delicious. The blackberries give the soup a fantastic kick. I've also heard of blueberries being used instead of the blackberries, but I haven't tried it yet.

2 tablespoons vegetable oil
1 lb beef steak (a nice, tender cut preferrably)
2 medium onions, sliced thinly
2 tablespoons butter
32 ounces beef broth
1/2 teaspoon kosher salt
1 cup fresh blackberries, mashed
1 tablespoon honey

Steps:

  • Heat the oil in a large saucepan. Add the steak and cook over medium-high heat, browning it on both sides, then remove it and set it aside.
  • Turn the heat down to low and add the butter and onions to the pan. Stir frequently, scraping up the meat juices to mix with the onions. Cook for about 10 minutes, until the onions are soft.
  • Add the broth and bring to a boil, still stirring frequently. Add the mashed berries and honey and simmer for about 20 minutes. Meanwhile, cut the steak into bite-sized strips. Add the steak to the soup near the very end of cooking and allow to simmer for about 30 seconds or so, stirring constantly, then serve hot.

1 tablespoon canola oil
3 cans (14-1/2 ounces each) beef broth

1/3 cup medium pearl barley
3/4 teaspoon salt

1/2 cup chopped celery
1/4 cup chopped onion
3 tablespoons minced fresh parsley
1 cup frozen peas

Steps:

  • In a large saucepan, heat oil over medium heat. Brown beef on all sides; drain. Stir in broth, water, barley, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots, celery, onion and parsley; cover and simmer until meat and vegetables are tender, 30-40 minutes. Stir in peas; heat through.

1/4 cup (1/2 stick) butter
2 cups chopped onions
1 cup chopped peeled turnip
1 cup cauliflower florets
1 cup broccoli florets
1 cup chopped peeled yams (red-skinned sweet potatoes)
1 cup chopped peeled potatoes
1 cup chopped celery
5 cups beef stock or canned beef broth
5 cups chicken stock or canned low-salt chicken broth
1 cup pearl barley
1 1/2 tablespoons chopped fresh thyme
1 1/2 tablespoons chopped fresh oregano
1 1/2 pounds filet mignon, cut into 1/2-inch pieces
1/4 cup chopped fresh parsley

Steps:

  • Melt butter in heavy large pot over medium heat. Add vegetables; sauté 10 minutes. Add both stocks; bring to boil. Reduce heat and simmer 20 minutes. Add barley, thyme and oregano. Simmer until barley is tender, stirring occasionally, about 35 minutes. (Can be made 1 day ahead. Chill uncovered until cold, then cover and keep chilled. Return to simmer before continuing.)
  • Add beef to soup; simmer until just cooked, about 10 minutes. Mix in parsley. Season with salt and pepper.

3 tablespoons bacon drippings or 3 tablespoons vegetable oil
4 1/4 cups beef stock
1 cup green onion, chopped
1 cup blackberry (use blueberries,or saskatoons if they are more readily available)
3 teaspoons honey
2 teaspoons salt
3 teaspoons pepper
3 teaspoons flour

Steps:

  • Heat the bacon drippings (veggie oil) in a heavy saucepan and brown the buffalo meat.
  • Add stock, green onions, berries, salt, pepper& honey, Simmer for 1 hour or until the meat is tender.
  • Mix flour with six tbsp of the soup& add it to the soup to thicken the soup slightly.

3 1/2 cups blackberries, divided
1/2 cup water
6 tablespoons sugar, divided
1 tablespoon kirsch (cherry brandy)
2 cups sliced peeled peaches

Steps:

  • Combine 2 1/2 cups blackberries and water in a medium nonaluminum saucepan. Bring to a simmer; cover and cook 15 minutes or until blackberries are very soft.
  • Press blackberry mixture through a sieve over a small bowl, reserving liquid; discard seeds. Combine blackberry liquid, 3 Tbs sugar, and kirsch; cover and chill for at least 2 hours.
  • Combine 3 Tbs sugar and peaches; toss gently to coat. Spoon 1/4-1/3 cup blackberry mixture into each of 4 to 6 shallow soup bowls. Arrange 1/3 cup peach slices and about 2 1/2 Tbs blackberries over each serving.

From Cheney, Kansas, Julian Ann Hillman shared the recipe for this chilled soup that stars a bounty of berries. "I have several blackberry bushes, and they yielded an abundance of berries one year," she writes. "I came up with this recipe by adapting another fruit soup recipe I hand on hand."

4 cups frozen blackberries, thawed
1 cup pear juice
1/2 cup honey
1/4 cup water
1 lime or lemon wedge
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
Dash ground nutmeg
1 cup (8 ounces) fat-free vanilla yogurt

Steps:

  • In a heavy saucepan, combine the first eight ingredients. Cook, uncovered, over low heat for 20 minutes or until berries are softened. Remove and discard lime wedge. Strain berry mixture, reserving juice. Press blackberry mixture through a fine meshed sieve; discard seeds. Add pulp to juice. Cover and chill., Set aside 2 tablespoons yogurt for garnish. Combine blackberry mixture and remaining yogurt in a food processor or blender; cover and process until smooth. Ladle into soup bowls. Dollop with reserved yogurt.
