Out Of This World Pasta Salad Food
OUT OF THIS WORLD CAESAR PASTA SALAD
This is a recipe I adapted from a salad a friend brought to a pot luck we had one summer. I tweaked it a little bit and now I am requested to bring this to every get together. Very simple and inexpensive to make.

Steps:
- Cook pasta according to package directions.
- Drain and rinse pasta under cold water until cold throughout. Toss pasta with
- olive oil making sure to coat well. Believe it or not it prevents the pasta from
- absorbing all of the dressing, thus becoming dry.
- Add the rest of the ingredients and toss with dressing.
- I like to garnish the top with more sliced green onions.
- Add grilled chicken breast and this salad goes from a side dish to an entree.

EASY PASTA SALAD
To bring this tangy, vegetable-packed pasta salad together in a snap, we used jarred roasted red peppers and store-bought Italian dressing. The dish takes mere minutes to make, but the longer it sits in the refrigerator, the better it tastes!

- Bring a large pot of salted water to a boil. Cook the pasta according to package directions for al dente.
- Add the cucumbers, broccoli, tomatoes, red peppers, Parmesan, pasta, 1/2 teaspoon salt and a few grinds of black pepper to a large bowl. Pour the Italian dressing over the top and toss until well combined. Cover and refrigerate until the pasta is cold, about 2 hours and up to overnight.

- Cook the Orzo Pasta (1 pound) according to the directions in the pot of boiling water. Make sure to add a large pinch of salt to the water. Drain and transfer to a large bowl.
- Add Extra-Virgin Olive Oil (6 tablespoon), Balsamic Vinegar (6 tablespoon), Sun-Dried Tomatoes (2/3 cup), and Kalamata Olives (2/3 cup). Stir to combine with the cooked orzo.
- Set aside to cool. If you choose to refrigerate before serving, make sure to bring it up to room temperature before proceeding to the next steps.
- Toast the Pine Nuts (1 cup) in a dry skillet over medium heat for 2-3 minutes, stirring constantly, until they start to turn golden brown in spots.
