3 tablespoons vegetable oil
3 tablespoons Jamaican curry powder, plus more if needed
1 small yellow onion, small diced
5 cloves garlic, peeled and smashed
4 lobster tails, split lengthwise and then crosswise
1 small red bell pepper, diced
2 scallions, roughly chopped into 1-inch pieces
3 sprigs thyme
1/2 Scotch bonnet chile, seeded and julienned
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • Add the oil to a large skillet over medium-high heat. Stir in the curry powder with a wooden spoon until toasted and fragrant, 3 to 5 minutes.
  • While stirring, gradually add the onions. Cook for about 2 minutes, and then add the garlic. Cook until translucent, 4 to 5 minutes. Add the lobster and 2 cups water. Stir to combine the ingredients, then cover the pan and cook for 2 minutes. Remove the lid and add a pinch more curry powder if needed to deepen the color.
  • Remove the cover and add the bell peppers, scallions and thyme. Stir to incorporate all the ingredients and let cook at a low simmer, uncovered, for 3 to 4 minutes. Add the Scotch bonnet, 2 pinches of salt and 1 pinch of black pepper. Add the butter and stir to melt, then remove from the heat and serve.

TURKEY BREAST CURRY KATSU

Neutral oil, for sauteing
2 turkey legs and 2 thighs, skin-on
2 ribs celery, diced (1 cup)
1 large carrot, diced (1 cup)
1 medium onion, diced (2 cups)
1 tablespoon tomato paste
1 tablespoon Japanese curry powder
4 cups turkey stock
4 cloves garlic
1 red apple, cubed
1 inch fresh ginger, peeled
1/2 cup soy sauce
1/3 cup (5 1/3 tablespoons) unsalted butter
1/3 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 tablespoons neutral oil
1/2 onion, finely chopped
1 cup long-grain rice
Pinch kosher salt
1 head napa cabbage, split in half lengthwise
1 bunch mustard greens, leaves chiffonade
1 cup olive oil
1/2 cup red wine vinegar
Kosher salt and freshly ground black pepper
1 turkey breast, skinless
Kosher salt and freshly ground black pepper
3 cups all-purpose flour
4 large eggs, beaten
3 cups panko breadcrumbs
1 cup nori powder
Canola oil, for frying

Steps:

  • For the curry sauce: Add 2 tablespoons neutral oil to a large saute pan over medium-high heat and sear the turkey legs and thighs until browned on both sides, about 3 minutes per side. Remove the seared turkey pieces to a large stovetop pressure cooker and set aside. Add another 2 tablespoons oil to the same large saute pan and add the celery, carrot and onion. Cook, over medium-high heat, until softened, about 3 minutes. Add the tomato paste and saute for an additional few minutes. Add the Japanese curry powder and stir to combine. Deglaze the pan with 2 cups turkey stock and 1 cup water. Carefully pour the contents of the saute pan into the pressure cooker. Add the garlic, apple and ginger and toss to combine. Add the soy sauce, remaining 2 cups turkey stock and more water as needed to come halfway up the sides of the pressure cooker.
  • Bring to a boil, then reduce the heat to low. Seal the lid and bring to pressure, then cook for 45 minutes. Carefully release the pressure and remove the meat.
  • Strain the cooked stock into a large measuring cup with a spout and set aside. Pick the meat from the leg and thigh and reserve. Melt the butter in the bottom of a Dutch oven and add the flour. Stir the roux base and cook for several minutes over medium-low heat until blonde in color. Whisk in the turkey stock, adding the liquid slowly to avoid lumps. Add the picked meat from the leg and thigh. Simmer to thicken the sauce and cook out the raw flour flavor, an additional 10 minutes. Taste and adjust the seasoning with salt and pepper as needed.
  • For the rice pilaf: Heat the oil in a medium saucepan over medium-high heat until hot, then add the onion and saute until softened, about 3 minutes. Add the rice and stir to combine. Allow the rice to toast, about 3 minutes. Carefully pour in 2 cups water and season with salt. Bring the water to a boil, then reduce to simmer and cover with a lid. Allow to cook until the water has fully absorbed, about 15 minutes. Turn off the heat and let stand for 10 minutes before fluffing with fork.
  • For the charred cabbage: Preheat a charcoal grill over medium-high heat.
  • Place the cabbage cut-side down on the grill and allow to sear until charred, about 5 minutes. Place the charred cabbage on a work surface until cool enough to handle. Tear the cabbage apart and add to a large bowl. Add the mustard greens, olive oil and vinegar and season with salt and pepper. Carefully toss to combine and gently wilt the mustard greens. Set aside until ready to plate.
  • For the katsu: Place the breast between two large pieces of plastic wrap. Use a mallet to pound the breast flat to 1/4-inch-thick all over and sprinkle both sides with salt and pepper. Fill three large casserole dishes: the first with the flour, the second with the beaten eggs and the third with the panko and nori powder. Stir to combine the panko and nori powder so that the nori is evenly distributed. Place the pounded breast in each dish to ensure even coating, starting with the flour, then eggs and ending with the breadcrumbs.
  • Heat 2 inches canola oil over medium-high heat in the largest cast-iron skillet or paella pan you have until the oil begins to shimmer. Line a sheet tray with a wire rack. Fry the turkey breast until crisp and golden brown, 3 to 4 minutes on each side. Remove to the wire rack. Once cool enough to handle, slice into 1/2-inch-thick slices.
  • Line the bottom of a very large serving platter with the rice pilaf. Ladle a base of curry sauce over the rice, then top with the turkey katsu breast slices and finish with the charred cabbage salad.

COCONUT RED CURRY WITH SAUTéED BOK CHOY AND JASMINE COCONUT RICE



Coconut Red Curry with Sautéed Bok Choy and Jasmine Coconut Rice image

2 pieces bok choy, stems thinly sliced and leaves left whole
6 tablespoons extra-virgin olive oil, plus more as needed
4 cloves garlic, minced
1-inch piece ginger, grated
1 cup jasmine rice, rinsed and drained
Two 13-ounce cans coconut milk
1/2 cup plus 1/3 cup chicken stock
1 small bunch cilantro, stems minced and leaves chopped, plus more whole leaves for garnish
1/2 yellow onion, sliced
2 scallions, thinly sliced on a bias, whites and greens separated
2 tablespoons red curry paste
2 tablespoons plus 1 teaspoon fish sauce
3 teaspoons palm sugar
Zest and juice of 1/2 lime
Two 5-ounce red snapper fillets, skin on
4 large shrimp, deveined and head on and tail on, but rest of shell removed

Steps:

  • Bring a medium pot of water to a boil and season generously with kosher salt; it should be as salty as the sea. Prepare an ice bath and season generously with kosher salt. Add the bok choy stems and leaves to the boiling water and cook for 1 to 2 minutes, until they're tender but still have a crunch. Remove the bok choy and immediately plunge into the ice bath and set aside. Drain the water - you can reserve the pot for the curry sauce!
  • To a medium saucepan, add 2 tablespoons of the olive oil, half of the garlic and half of the ginger. Turn on the heat to medium and cook, stirring occasionally, until softened and fragrant, 2 to 3 minutes. Add the rice and stir, making sure it's fully coated with the oil, garlic and ginger. Turn up the heat to medium-high and toast the rice for 1 to 2 minutes. Add 1 can of the coconut milk, 1/3 cup of the chicken stock and kosher salt to taste. Bring to a boil, then cover, reduce to a simmer and cook for 18 minutes. Turn off the pan and let sit, without opening the lid, for 10 minutes. Fluff the rice with a fork and fold in the chopped cilantro leaves.
  • To make the curry sauce, heat 2 tablespoons of the olive oil over medium-high heat in the same pot that was used to blanch the bok choy. Add the remaining garlic and ginger, the onion and minced cilantro stems. Cook until softened and fragrant, 2 to 3 minutes. Add the scallion whites, red curry paste, 2 tablespoons of the fish sauce and the palm sugar. Stir to combine and cook for 2 to 3 minutes. Stir in the remaining can of coconut milk and 1/2 cup chicken stock. Bring back up to a boil, then reduce to a simmer and allow to cook for 10 to 15 minutes, until reduced and slightly thickened. Add the lime juice and zest.
  • Pat the skin dry on the red snapper and sprinkle with kosher salt. Heat a large nonstick pan with the remaining 2 tablespoons olive oil over medium-high heat. Place the snapper skin-side down into the sauté pan. Place another oiled pan on top of the fish to weigh it down so the skin gets crispy. Cook until the skin is crisp, about 4 minutes, then remove the oiled pan on top and flip the fish. Cook for another 2 minutes, then remove from the pan onto a sheet tray skin-side up. Add the shrimp and cook 2 minutes per side, until pink, then remove from the pan. Add a bit more olive oil to the pan, then add the bok choy and the remaining 1 teaspoon fish sauce. Stir to combine and sauté for 1 to 2 minutes to warm through.
  • Plate the rice and top with the sautéed bok choy. Place the fish and shrimp over the top of the bok choy. Spoon the red curry sauce around the rice, being careful not to cover the fish skin so it stays crispy. Garnish with the sliced scallion greens and cilantro leaves.

RED CURRY OF LOBSTER AND PINEAPPLE

This lobster curry is doubly rich from the coconut milk and the deep red curry, but the pineapple keeps it from being too heavy and gives a beautiful freshness to the dish.

One 14-ounce can unsweetened coconut milk
2 tablespoons red curry paste
1 1/2 tablespoons fish sauce (nam pla)
1 (packed) tablespoon grated palm sugar (jaggery) or light brown sugar
8 ounces Chinese long beans or green beans, ends trimmed
4 slices peeled fresh ginger
2 makrut lime leaves or grated zest of 1 lime
1 1/2 teaspoons tamarind paste
1 1/2 cups bite-size cubes peeled fresh pineapple (about 1/4 of a pineapple)
Two 8-ounce uncooked lobster tails in the shell, split lengthwise
1/2 cup fresh basil leaves
Salt
Hot steamed rice, for serving

Steps:

  • Simmer 1/4 cup of the coconut milk in a heavy large saucepan over medium heat for 5 minutes, or until the oil separates from the milk. Stir in the curry paste and cook for 1 minute. Add the fish sauce and sugar and cook for 2 minutes, stirring constantly, or until the mixture darkens and thickens. Add the green beans and stir to coat. Add the remaining coconut milk and stir to scrape up the browned bits on the bottom of the pan. Stir in the ginger, lime leaves, and tamarind paste. Add the pineapple and simmer for 3 minutes, stirring occasionally, or until the sauce reduces and thickens slightly and the beans are crisp-tender. Add the lobster and basil leaves and cook for 4 minutes, or until the lobster is just cooked through.
  • Discard the ginger and lime leaves. Season the curry with salt to taste. Transfer one half lobster tail to each warmed serving bowl, and spoon the curry over it. Serve the steamed rice on the side.
