1 tablespoon salt
2 teaspoons chile powder
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1 chicken, cut into 10 pieces, backbone removed
1 tablespoon olive oil
Neutral oil, for oiling grill grates
2 cups BBQ sauce (your favorite store-bought or homemade)
1/4 cup low-sodium chicken broth

Steps:

  • Preheat the oven to 350 degrees F. Prepare a grill to medium-high heat.
  • In a small dish, combine the salt, chile powder, garlic powder and black pepper. Brush the chicken with the olive oil and sprinkle on all sides with the spice mixture.
  • Brush the grill with oil. Place the chicken skin-side down on the grill and cook for 5 minutes. Turn and cook an additional 5 minutes. Transfer the chicken to a baking dish in a single layer.
  • In a medium bowl, stir together the BBQ sauce and chicken broth. Pour the sauce over the chicken and cover the baking dish tightly with foil. Bake until the chicken is cooked through and fork-tender, an additional 40 minutes.

6 potatoes, cut into bite-sized chunks
1 onion, chopped
½ cup ketchup
6 tablespoons brown sugar
¼ cup Worcestershire sauce
¼ cup white vinegar

2 tablespoons lemon juice
2 teaspoons dry mustard
2 teaspoons salt
2 teaspoons paprika
2 teaspoons chili powder
1 pinch red pepper flakes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange chicken breasts, potatoes, and onion in a large baking dish.
  • Mix ketchup, brown sugar, Worcestershire sauce, vinegar, margarine, lemon juice, dry mustard, salt, paprika, chili powder, and red pepper flakes in a saucepan. Bring sauce to a boil, stirring constantly to dissolve brown sugar and salt. Pour the sauce over chicken and vegetables. Cover dish with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink, the juices run clear, and the sauce has thickened, about 2 hours. An instant-read meat thermometer inserted into the center of a breast should read at least 160 degrees F (70 degrees C).

6 sweet potatoes
3 boneless, skinless chicken breasts
2 cups BBQ Sauce
1 cup shredded Mozzarella cheese
½ red onion (diced)
4 Tablespoons cilantro (chopped)

Steps:

  • Scrub the outside of each potato and remove any blemishes.
  • Poke the outside of each sweet potato multiple times with a fork then place on a baking sheet and place on the middle oven rack.
  • Heat oven to 425 degrees and bake for 45 minutes, or until a fork easily presses into the center.
  • Meanwhile, spray a 9 x 13 inch baking dish with nonstick cooking spray.
  • Place chicken breasts in prepared pan and cover with BBQ sauce.
  • Bake at 375 degrees for 25-30 minutes, or place in the oven with the sweet potatoes for the last 20 minutes of cooking. Make sure chicken is cooked all the way through.
  • Remove chicken and sweet potatoes from the oven.
  • Shred cooked BBQ chicken.
  • Cut each sweet potato down the middle and fill with shredded chicken.
  • Divide mozzarella cheese, red onion and chopped cilantro evenly between each potato and put on top of each baked potato.
  • Broil on high for 2-3 minutes, or until cheese is completely melted.
  • Serve hot.

1 cup ketchup (or Australian/UK tomato sauce)
1/4 cup apple cider vinegar
2 tsp Worcestershire Sauce
4 tbsp brown sugar
2 tsp mustard powder
2 tsp onion powder

1 cup water
1.5 kg / 3 lb chicken thighs (bone in skin on), drumsticks or wings ((Note 2))
Fresh parsley, chives or finely chopped green onions (, for garnish)

Steps:

  • Preheat oven to 200°C/390°F.
  • Sauce: Mix all Sauce ingredients in a ceramic/glass baking dish (Note 3), then mix in water.
  • Add chicken and turn to coat. Place chicken skin side down.
  • Bake for 20 minutes. Remove from oven, turn chicken, spoon over Sauce.
  • Bake for a further 30 minutes, then remove and spoon over Sauce.
  • Skim off fat (optional): Tilt pan and spoon or drain off excess fat.

1 pinch salt
1 rotisserie chicken breast
1 cup red cabbage, shredded
⅓ cup barbecue sauce, plus more for serving
2 tablespoons green onions, thinly sliced

Steps:

  • Preheat the oven to 425°F (220°C). Line a small baking sheet with parchment paper.
  • Using a sharp knife, carve out one of the breasts from the rotisserie chicken. If the chicken is particularly small, use both breasts. Chop the chicken breast into very small pieces and set aside.
  • Use a fork to poke holes all over the sweet potato. Transfer the sweet potato to the prepared baking sheet.
  • Bake for 40-50 minutes, until the sweet potato is tender when pierced with a paring knife or skewer.

1 1/2 cups BBQ sauce
1/4 cup honey
1 tablespoon vinegar
1 teaspoon kosher salt
3 chipotle peppers in adobo
2 cloves garlic, minced
1 onion, sliced
4 medium russet potatoes
Vegetable oil, for baking potatoes
2 cups sour cream
2 cups shredded Cheddar
1 cup diced green onion

Steps:

  • For the chicken: Add the chicken, BBQ sauce, honey, vinegar, salt, chipotles, garlic and onion to a multi-cooker along with 1/4 cup of water and toss to combine. Cover and position the vent to Sealing. Set to pressure cook on high and set the timer to 12 minutes.
  • When the time is up, quick-release the steam, then remove the lid. Remove the chicken to a large bowl and shred with 2 forks. Add the sauce to the meat in 1/4-cup increments until it has become saucy but not soupy. Reserve the remaining sauce for serving or freeze for future use (see Cook's Note).
  • For the potatoes: Preheat the oven to 400 degrees F.
  • Prick each potato all over with a fork. Rub vegetable oil on each potato and bake on a baking sheet for 1 hour. Slice the potatoes lengthwise three-quarters of the way through. A new way to get your meat and potatoes!

4 large baking potatoes
2 large boneless chicken breasts, fresh or frozen
1/2 c bbq sauce (more depending on your taste)
1/2 c shredded extra-sharp cheddar cheese
oil, salt and pepper
4 Tbsp butter, if desired
garnish with sliced green onions, sour cream or thinly sliced red onions (optional)

Steps:

  • 1. Clean your potatoes with a stiff-bristled brush and cold water. After you've throughly cleaned the potatoes, look them over and remove any bruises or mis-colored spots.
  • 2. Using a fork, work your way around each potato stabbing deeply into it's flesh. 6-12 stabs should do it depending on the size of the potatoes you are using. This allows steam to escape during the cooking process.
  • 3. Dry the potatoes off with a paper towel and preheat the oven to 350°F. Take a small bowl and add just a splash of your chosen oil, and have a container ready for the potatoes once they've been oiled. Then lightly salt and pepper each one and put aside as you wait for the oven to heat up.
  • 4. Once the oven has heated, arrange the potatoes directly on the cooking rack and place a baking sheet on the rack underneath them to catch any drippings.
  • 5. Cooking time will vary from 1 hour and up depending on the size and quantity of potatoes you cook. The skin should be puffed up, golden-brown and crispy, and the potato should squish easily and be very soft on the inside.
  • 6. On another baking sheet lined with aluminum foil, lightly coat with non-stick cooking spray. Add a little BBQ sauce and place chicken on top of the sauce. If using frozen chicken, bake per package instructions (you can place the baking sheet with the chicken on top of the other baking sheet and place in the oven during the last 30-35 minutes of the potato cycle). After the 30-35 minutes, check to make sure the chicken has cooked through. The juices should run clear. If it is not cooked thoroughly, increase the heat to 375 and bake for 10 more minutes.
  • 7. Once the chicken has been properly cooked, carefully remove the chicken and the potatoes from the oven. Keep in mind that potatoes retain heat for quite a while, so use tongs or an insulated cooking mitt to remove the potatoes.
  • 8. Once the chicken has cooled enough to handle, tear or shred with your hands or two forks. Add the BBQ sauce and mix together.
  • 9. Cut the potatoes open and fluff with a fork. Add butter, additional salt and pepper (if desired). Top the potatoes with the BBQ chicken mixture and then top with cheese.
  • 10. Place on a microwavable plate and microwave in intervals of 30 seconds until the cheese has melted.
  • 11. Garnish with sliced green onion, sour cream, or thinly sliced red onions.
