Couscous:
2 cups low-salt chicken broth
2 tablespoons extra-virgin olive oil, divided
1 tablespoon ground ginger
2 garlic cloves, pressed
2 teaspoons salt, divided
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1 10-ounce box plain couscous
1/2 cup raisins
1 cucumber, peeled, seeded, cut into 1/2-inch cubes
1 large red bell pepper, cut into 1/2-inch cubes (about 2 cups)
1 large carrot, peeled, quartered lengthwise, thinly sliced crosswise
1 cup thinly sliced green beans or trimmed sugar snap peas
2 teaspoons finely grated lemon peel
1/4 cup fresh lemon juice
Chicken:
2 1/2 tablespoons extra-virgin olive oil plus additional for drizzling
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
6 large skinless boneless chicken breast halves, pounded to 1/3-inch thickness
3/4 cup plus 1/3 cup (loosely packed) chopped fresh cilantro
1/2 cup chopped toasted almonds (optional)
1 lemon, cut into 6 wedges

Steps:

  • For couscous:
  • Bring chicken broth, 1 tablespoon oil, ginger, garlic, 1 teaspoon salt, turmeric, cinnamon, and cumin to boil in heavy large saucepan. Stir in couscous and remove from heat. Scatter raisins over, cover, and let stand until couscous softens, about 10 minutes. Fluff couscous with fork, breaking up any lumps with fingertips. Transfer couscous to large bowl. Add cucumber, red bell pepper, carrot, green beans, and lemon peel. Whisk remaining 1 tablespoon oil, 1 teaspoon salt, and lemon juice in small bowl. Add to couscous; toss to coat. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.
  • For chicken:
  • Place 2 1/2 tablespoons oil, lemon juice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in large resealable plastic bag. Add chicken and seal bag, releasing any excess air; turn several times to coat. Let stand at room temperature 30 minutes. Alternatively, chill 1 to 3 hours and bring to room temperature before continuing.
  • Prepare barbecue (high heat). Brush grill rack with oil. Transfer chicken from bag to barbecue with some marinade still clinging and grill until slightly charred and just cooked through, about 4 minutes per side. Transfer chicken to platter and let rest 10 minutes. Stir 3/4 cup chopped cilantro into couscous. Sprinkle almonds over, if desired. Drizzle chicken with oil, sprinkle remaining 1/3 cup chopped cilantro over, and garnish with lemon wedges. Serve with couscous.

MOROCCAN COUSCOUS

Moroccan Couscous image

This easy Moroccan couscous recipe with raisins and pinenuts is a fast, flavorful, versatile side dish to serve with chicken or lamb.

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 15m

Number Of Ingredients 12

1/4 cup pine nuts (or swap pistachios or slivered almonds)
2 tablespoons unsalted butter (use coconut oil or vegan butter to make vegan)
1 small shallot (chopped)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
2 cups low-sodium vegetable broth (or chicken broth)
1 cup whole wheat couscous
1/3 cup golden raisins
1/4 cup chopped fresh parsley
2 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil (use the good stuff here!)

Steps:

  • Preheat the oven to 350 degrees F. Spread the pine nuts in a single layer on an ungreased, rimmed baking sheet. Toast in the oven until fragrant and lightly golden, 5 to 7 minutes, stirring once halfway through. Keep an eye on them and DO NOT WALK AWAY during the last few minutes to make sure those precious pine nuts do not burn. Immediately transfer them to a bowl to stop their cooking and to make sure the hot pan doesn't burn them once they are out of the oven.
  • In a large skillet, melt the butter over medium heat. Add the shallots and cook for 3 minutes, until they begin to soften. Add the salt, pepper, and cumin and cook for 30 seconds.
  • Pour in the broth. Increase the heat to high and bring it to a boil. As soon as the liquid begins to boil, remove the pan from the heat. Stir in the couscous, cover, and let sit for 10 minutes.
  • With a fork, fluff up the couscous. Add the raisins, parsley, lemon juice, olive oil, and toasted pine nuts to the pot, then stir the ingredients together to combine. Taste and adjust seasoning as desired. Enjoy hot.

RANKING EPCOT’S WORLD SHOWCASE PAVILIONS BY BEST FOOD IN ...

From disneydining.com
Estimated Reading Time 9 mins
  • Japan. The World Showcase Pavilion that secures the top spot in terms of dining is hands down the Japan Pavilion which features several amazing full service locations as well as a quick service location and cart that serves up a popular snack.
  • Italy. The Italy Pavilion is home to several full service dining locations as well as one cart with treats, all of which are so delicious and popular that they more than make up for a lack of a quick service location.
  • Mexico. One of the most popular pavilions in all of World Showcase is the Mexico Pavilion thanks to its attraction, atmosphere, and variety of amazing dining locations.
  • France. The France Pavilion ranks high on the list thanks to its many dining locations that range from a cart and quick service locations to multiple full service locations including a signature dining experience.
  • Norway. The Norway Pavilion is only home to two dining locations, however they are both immensely popular, securing its high spot on this list. Kringla Bakeri Og Kafe is a quick service bakery location that features a cozy interior and outdoor open air patio with views of World Showcase Lagoon.
  • Germany. The Germany Pavilion is a favorite of many guests thanks in part to a unique full service dining location as well as a popular quick service location and amazing bakery and candy shop.
  • Canada. The Canada Pavilion is only home to one small cart and one full service dining option, however the restaurant is so wonderful and popular that it boosts up a few places on the list.
  • Morocco. The Morocco Pavilion is home to one quick service and two full service dining locations that feature live entertainment, beautiful atmospheres and views, and delicious food, but all of which tend to again be passed over in favor of other dining locations throughout World Showcase.
  • United Kingdom. A favorite World Showcase Pavilion of many guests mainly ranks for its pub and atmosphere and less so for its dining options. The UK Pavilion is home to the incredibly popular Rose & Crown Pub which draws in crowds every day, and the location is attached to the less popular Rose & Crown Dining Room.
  • China. The China Pavilion is home to two quick service locations and one full service location which all feature delicious food, but don’t rank nearly as high as other popular restaurants in World Showcase.
