ELOISE'S MAKE AHEAD SALAD
This delicious salad is a good choice for company since you can prepare it the night before. We have an ongoing battle in our family over Best Foods/Hellmans vs. Miracle Whip. You can use either here. Recipe is from my Aunt Eloise.

Steps:
- Tear lettuce into a 9 x 9 pan. (Use your hands rather than a knife so that the lettuce won't turn brown.).
- Spread celery, green onions, water chestnuts and peas over lettuce.
- Mix sugar and mayonnaise and spread over peas.
- Sprinkle with parmesan and top with egg slices.
- Cover and refrigerate overnight.

MAKE-AHEAD SALAD
This salad looks odd but what good flavor it has. Real easy too! I had it for the first time last summer at a picnic and had to ask for the recipe. I am not sure of the serving amounts. (Prep time includes fridge time.)

- Layer the first six ingredients in a large bowl in the order listed above.
- Seal and refrigerate overnight.
- Add bacon immediately before serving and toss.

TOFU SALAD - EASY VEGAN - MAKE AHEAD (MOOSEWOOD)
Courtesy of the original Moosewood Cookbook. Love that you can make it ahead and just pull it out of the fridge at serving time. I'm serving this at a birthday party buffet to make sure there is something substantial for vegetarians/vegans in the group. The book recommends stuffing this salad into pita bread to make it a meal, which I've never tried but sounds great. Prep time includes the minimum 2 hours for marinading. Serves 6 as the main attraction, but more if it's a side dish. Enjoy!

Steps:
- Combine marinade ingredients in a large bowl.
- Cut the tofu into 1/2 inch cubes and add it along with the salad veggies into the marinade. Stir gently.
- Cover and let marinade at room temperature for at least two hours. You can prepare this a few days in advance, in which case just keep it in the fridge.
- Serve cold or at room temperature, sprinkled with all or some of the toppings.
