LEMON & ELDERFLOWER FIZZ
Raise a toast with this zesty cocktail with a gin and sparkling prosecco base and lemon sorbet and elderflower cordial mixers

Steps:
- To decorate the glasses with a sugar rim, tip the sugar onto a flat plate and the lemon juice into a bowl. Dip the rim of each glass in the juice, then the sugar.
- Put the gin, lemon juice, sugar and elderflower cordial into a large jug. Stir until the sugar has dissolved. Add the prosecco, then the sorbet, and give it a good stir. Pour into the prepared glasses and pop in a few strips of lemon zest.

RASPBERRY AND ELDERFLOWER SORBET
Another delicious concoction from Donna Hay. We made this dessert for family this Christmas as it suits not only the hot Christmas we have in Australia, but also the food intolerances of the family. We strained the fruit to remove the seeds so used a few more raspberries - but this is only for food intolerances and isn't a necessary step.

Steps:
- Place all ingredients in a food processor and process until combined.
- Pour into a freezer proof container and freeze until set, approximately 3-4 hours.
- Cut the sorbet into chunks and reprocess in the food processor until smooth.
- Return to the freezer for 1 hour or until ready to serve.

- Tea. For relief from colds or flu, pour boiling water over fresh or dried flowers and steep in a covered container for 10 minutes. Mix in a spoonful of local honey and feel those pesky symptoms ease as you breathe in this steamy sweet beverage.
- Tincture. The flowers can be tinctured in alcohol for use as an herbal remedy for various ailments. Just place crushed dried flowers in a jar, cover with 60% alcohol, and let sit in a cool dark place for 3 to 4 weeks, shaking daily.
- Salve for Inflammation Relief. Use a salve or lotion made from the blossoms to reduce inflammation and pain from sprains and strains. You can incorporate other healing herbs such as calendula, comfrey, or st. John’s wort for additional support.
- Soothing Eye Wash. Make an eye wash for relief from itchy eyes, conjunctivitis, or hay fever. Just make a batch of elderflower tea, let cool, and rinse!
- Syrup. A syrup for fighting off colds, flus, and winter blues can be made with flowers of the elder tree as well as the berries. Or combine them for maximum benefit and flavor!
- Cosmetics. Back in the Victorian era, elderflower water was often used as a skin cleansing lotion, believed to keep the skin young and free of blemishes.
- Cordial. A cordial is a type of sweet soft drink that is historically popular in Western Europe and has been brewed since the Roman era. Delightfully fragrant and sweet, this concentrated syrup can be added to drinks or even mixed into recipes such as cakes and pancakes.
- Cocktails. Try out a fun and unique cocktail. Simply mix the flowers with lemon or lime peel or lemon balm and infuse in vodka for a couple of weeks. Strain out the liquid, add sugar syrup, and let the concoction sit for two more weeks.
- Wine. This one is a classic! Elderflower wine has a distinctive crisp, floral taste, and is very pleasant chilled with a picnic on a sunny afternoon. Here is the recipe I use
- Cooking with Elderflower. Use the cordial and/or dried flowers in cakes, tarts, jams, pies, or pancakes! The blossoms are great when balanced with tart fruits such as rhubarb.
