1 cup sugar
2 cups whipping cream or 2 cups half-and-half
2 teaspoons vanilla

Steps:

  • Combine ingredients and stir briskly about two minutes until sugar is dissolved. (Undissolved sugar crystals may be a cause of large ice crystal formation.)
  • Pour into a 1-gallon ice cream freezer can and freeze according to manufacturer's directions.

Steps:

  • In a mixing bowl, add milk, sugar, and a pinch of salt.
  • Whisk on low speed using the whisk attachment of a hand blender or stand mixer until all the sugar is dissolved.
  • Add vanilla extract and heavy cream.
  • Mix well with a spatula or a spoon (do not whisk).
  • Chill the mixture in the fridge for about 2 hours.

2 cups half-and-half
1 cup heavy whipping cream
1 1/2 teaspoons vanilla extract
1/2 cup sugar

Steps:

  • Combine all ingerdients in bowl, mixing well.
  • Start the ice cream maker and pour mixture through hole in lid.
  • Churn for 20-40 mins or until desired consistancy.
  • Variations: Add 1/2 cup mix-ins, such as chocolate chips or chopped nuts, after ice cream has churned for at least 15 minutes or when mixture is thick and has star5ted to freeze.

2 cups half-and-half
1 cup whipping cream
3/4 cup vanilla sugar (regular sugar works fine too, it's just not quite as intense)
1 vanilla bean, split and scraped

Steps:

  • You'll need a thermometer and ice cream maker for this recipe!
  • Combine all ingredients in a medium sauce pan and place on stove over a medium heat.
  • Bring the mixture to 170°F.
  • while stirring occasionally.
  • If you do not have a thermometer you can heat it to you see a bubble hit the surface of the mixture.
  • DO NOT ALLOW IT TO BOIL!
  • Remove from heat and cool slightly.
  • Place in airtight container and refrigerate overnight to allow flavors to meld.
  • If you're in a hurry you can place the pan in an ice bath.
  • Either way the temperature of the mixture will need to be at 40°F.
  • for most ice cream makers.
  • (This may not be necessary in a self contained freezer unit). Remove vanilla bean hull and freeze mix per manufacturers directions in your ice cream maker.
  • Wash and dry your bean hull, place it in 2 cups of sugar and in a few days you'll have vanilla sugar for your next batch of ice cream To firm up the ice cream place it in a lidded container in your freezer for an hour before serving.

Steps:

  • In a saucepan, combine milk, sugar, cornstarch, and vanilla bean paste or extract. Stir well until cornflour is well combined.
  • Cook on medium heat stirring constantly. Once the milk is hot, lower the heat to medium-low to prevent the bottom from burning.
  • Continue to cook stirring constantly until the milk thickens and coats the back of a wooden spoon.Pro tip - The more you cook, the thicker the pastry cream will become.
  • At this point, you can add an egg yellow color if you want it to look like the classic pastry cream. Pro tip - I don't use any color in this eggless version. So you can see that the color is white.
  • Pour into a bowl and cover with plastic wrap to prevent a skin from forming at the top.Pro tip - If a skin forms on the pastry cream it will become very lumpy.

3 tablespoons instant vanilla pudding (or banana flavor, if you can find it)
1/2 cup sugar or 1/2 cup Splenda granular
1/2 cup whipping cream (Maybe you could substitue half n half and not add milk)
1 -2 mashed banana
1 -1 1/2 cup milk

Steps:

  • Mix all together and pour into freezer can.
  • I usually add the milk after the other mix is in the container so that it just fills it to about 2/3 full.
  • Freeze per instructions.
  • Peach Ice cream - substitute 1 c peach puree (peaches blended in blender).
  • Vanilla ice cream - leave out fruit. Add 2 tsp vanilla.

Steps:

  • In large bowl, combine ingredients; mix well.
  • Pour into ice cream freezer container.
  • Freeze according to manufacturer's instructions.
  • Freeze leftovers.
  • NOTE:.
  • If you bring the liquids to a simmer is makes a smoother ice cream.
  • Also, if you chill the mixture for 4 - 24 hours, it will also increase the flavor.

  • Fresh Fruit Ice Cream:
  • Reduce half-and-half to 1 cup.

  • In a thick bottomed pan, pour all but half a cup of milk and add sugar to it. Heat it, stirring in between to dissolve the sugar. Let it simmer for 2-3 minutes on low heat.
  • To the reserved half cup of milk, add 4 tbsp corn flour. Mix until no lumps remain and add it slowly and steadily to the simmering milk. Stir continuously to avoid any lumps.
  • Cook it for some more time until the milk thickens and starts to coat the back of the spoon. Take off the heat and let it cool. Stir well to prevent any skin from forming at the top.
