SESAME CHICKEN WITH SPICY DIPPING SAUCE
Steps:
- In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce, rum, crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.
- Preheat the oven to 400 degrees F.
- Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.
- To assemble:
- Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some Spicy Apricot Sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.
- Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.
- Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.
- Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick.

- Mix first 3 ingredients until blended; pour over wings in shallow dish. Stir to evenly coat wings. Refrigerate 30 min. to marinate, turning after 15 min.
- Heat grill to medium-high heat. Remove wings from marinade; discard marinade. Grill wings 15 min., turning occasionally. Combine barbecue sauce and wing sauce; brush half onto wings. Continue grilling 4 to 5 min. or until wings are done, turning and brushing frequently with remaining sauce mixture.
- Place wings on platter; sprinkle with onions.

- Put oven rack in upper third of oven and preheat oven to 425°F.
- Line a large shallow baking pan with foil and lightly oil foil.
- Mince garlic and mash to a paste with salt using a large heavy knife.
- Transfer garlic paste to a large bowl and stir in soy sauce, hoisin, honey, oil and cayenne.
- Add wingettes to sauce, stirring to coat.
- Arrange wingettes in 1 layer in baking pan and roast, turning over once, until cooked through, about 35 minutes.

- In a large plastic bag or glass dish, combine the first nine ingredients. Add chicken wings; coat well. Cover and refrigerate 2-3 hours or overnight, turning occasionally. SPICY BAKED SESAME CHICKEN WINGS
This is the best/easiest way to cook wings, in my opinion! They are not fried, not greasy, are lower in calories, and oh so yummy! A little spicy, but not too much, and a little smoky from the chipotle and liquid smoke! Obviously bourbon is optional! I prefer the drummies, but my husband likes the whole wing, minus the wing tips. Your choice!

- Preheat the oven to 425 degrees F (220 degrees C).
- Place a baking rack on top of a baking sheet, and lay chicken wings on top. Spray with cooking spray and season with salt and pepper.
- Bake in the preheated oven for 15 minutes. Flip wings and bake for another 15 minutes.
- While the wings are baking, combine soy sauce, brown sugar, vinegar, cornstarch, chipotle peppers, bourbon, ginger, chile-garlic sauce, hot sauce, sesame oil, and liquid smoke in a small pot over medium-high heat. Bring to a boil, stirring occasionally. Lower heat slightly and simmer for 1 minute. Turn off the heat and keep sauce warm.
- Remove wings from the oven and turn on the broiler; if you can adjust the broiling temperature, select 480 degrees F (245 degrees C).
- Brush sauce on wings, and broil for 5 minutes. Flip wings, brush sauce on the other side, and broil for 5 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Garnish wings with sesame seeds and serve.

- Preheat an oven to 350 degrees F (175 degrees C).
- Blot chicken wings dry with a paper towel.
- Beat the eggs in a bowl, and place the flour in another bowl. Dip chicken wings into the egg, then into the flour to lightly coat, shaking off the excess.
- Melt the margarine in a large skillet over medium high heat.
- Pan fry the chicken wings until well browned on all sides, about 10 minutes.
- Meanwhile, gently boil the cider vinegar, soy sauce, water, brown sugar, monosodium glutamate, salt, serrano chile peppers, and ginger in a saucepan over medium heat until thickened, 5 to 7 minutes.
- Toss the browned chicken wings in the sauce to coat, then transfer the wings to large baking dish with a slotted spoon. Reserve remaining sauce.
- Bake in the preheated oven until the chicken is no longer pink in the center, about 30 minutes, rotating and basting with the reserved sauce after 15 minutes.
- Sprinkle sesame seeds on the chicken wings before serving.
