Tender and moist, these grilled kabobs from Sheri Jean Waked are extra special when served with her garlic dipping sauce. "This is a lighter version of a dish my Lebanese mother-in-law taught me to make," she writes from Loveland, Ohio. "I reduced the amount of oil and substituted yogurt for mayonnaise."

8 garlic cloves, minced
1/2 teaspoon salt
1/4 cup minced fresh cilantro
1 teaspoon ground coriander
1/2 cup reduced-fat plain yogurt
2 tablespoons lemon juice
1-1/2 teaspoons olive oil
2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
GARLIC DIPPING SAUCE:
4 garlic cloves, minced
1/4 teaspoon salt
2 tablespoons olive oil
1 cup (8 ounces) reduced-fat plain yogurt

Steps:

  • Place garlic and salt in a small bowl; crush with the back of a sturdy spoon. Add cilantro and coriander; crush together. Add the yogurt, lemon juice and oil; mix well. Pour into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours., For dipping sauce, place garlic and salt in a small bowl; crush with the back of a sturdy spoon. Mix in oil. Stir in yogurt. Cover and refrigerate until serving., Drain and discard marinade. Thread chicken on eight metal or soaked wooden skewers. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes until juices run clear, turning occasionally.

This is one of my favorite recipes for the grill. I usually have everything I need on hand, for one of those warm evenings when it's too nice to stay inside. Preparation time does not include time for chilling.

4 chicken breast halves, skinned and boned
1 cup picante sauce
2 tablespoons vegetable oil
1 tablespoon lime juice
2 garlic cloves, minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt

Steps:

  • Flatten chicken breasts to 1/4" and cut into 1" strips. Place in a shallow container. Combine next 7 ingredients, mixing well. Pour over chicken, cover and chill 1 - 2 hours. Thread chicken onto skewers. Cook over medium heat 6 - 8 minutes or until done, turning occasionally and basting with remaining marinade. Serve with additional picante sauce for dipping if desired.

12 skewers
2 lbs boneless skinless chicken breasts, cut into 1 inch chunks
4 large red bell peppers, cut into 1 inch pieces
3 garlic cloves, minced
1 cup olive oil
5 tablespoons lemon juice
1 teaspoon lemon zest
2 tablespoons Dijon mustard
1 1/2 teaspoons tarragon leaves

Steps:

  • If using wooden skewers, soak them in water for 10 minutes.
  • Preheat grill on medium heat.
  • Alternately thread chicken and peppers onto skewers.
  • In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, mustard and tarragon. Reserve 1/3 cup of olive oil mixture and set aside.
  • Oil grill grates. Brush kabobs with some of the olive mixture and place on grill.
  • Grill kabobs, basting frequently with olive oil mixture and rotating every 3-4 minutes, until chicken is cooked through, about 10 - 15 minutes, or until a thermometer inserted into chicken reads 165 degrees.
  • Remove from grill. Serve drizzled with reserved olive mixture over your favorite rice or couscous, garnished with lemon wedges, if desired.

10 long sturdy rosemary sprigs
1 lb boneless skinless chicken breast, cut into 1-inch cubes
10 garlic cloves
olive oil
1/4 teaspoon fresh ground pepper
1 lemon, sliced 1/4-inch thick

Steps:

  • To roast garlic: Fill an oven-safe dish halfway with peeled garlic cloves, and cover completely with olive oil. Bake at 350 degrees for 20 minutes. Remove from the oven and let the mixture cool, uncovered, until room temperature.
  • Leaving a bushy "top," strip the rest of the needle-shaped leaves from each rosemary sprig to make a "skewer." Thread the chicken cubes on the skewers, placing a roasted garlic clove between each two cubes. Season the skewers with pepper to taste.
  • Preheat a grill pan over medium heat until very hot. Add the chicken kabobs and scatter the sliced lemon around the pan. Grill for 4 minutes on each side, until the chicken is firm. Sprinkle with additional salt and pepper. Serve immediately.

Very flavorful chicken - easy to make and are good served hot off the kabob or cold in a salad. This is a recipe for two. The photos show the chicken paired with my Bean Salad and sun dried tomato dressing.

3 boneless skinless chicken breasts
1 1/2 tablespoons honey
1 tablespoon olive oil
1 1/2 tablespoons mustard (I use whole grain)
3 tablespoons lemon juice
3 minced garlic cloves
2 teaspoons paprika
pepper

Steps:

  • In a glass dish (due to the acid) combine all the ingredients except the chicken. Mix well and set aside.
  • cut your chicken breasts into strips - then into small cubes.
  • Bathe the chicken in the marinade for 30 mins or longer if you can.
  • Skewer pieces of the chicken far enough apart to ensure even cooking.
  • Preheat grill to medium high.
  • Grill on indirect heat for approximately 10 minutes a side. The indirect heat allows you to cook the chicken a little longer ensuring doneness.
  • Flip and continue to cook for another 10 minutes.
  • Serve.
  • This recipe is paired with my Bean Salad with Sun Dried Tomato dressing (Recipe #228063).

1 lemon, juiced and zested
1 tablespoon brown sugar
1 clove clove garlic, minced or pressed

Steps:

  • Combine butter, lemon juice, lemon zest, brown sugar, and garlic in a bowl. Add chicken and marinate for at least 1 hour.
  • Preheat grill for high heat.
