STRAWBERRY FROZEN YOGURT

4 cups strawberries, hulled and chopped
3/4 cup sugar
1 teaspoon lemon zest
1 teaspoon lemon juice
1 tablespoon rum
1 vanilla bean, halved lengthwise and seeds scraped
1 cup plain whole-milk Greek yogurt

Steps:

  • A full 24 hours before you make your frozen yogurt, place your ice cream maker insert into the freezer.
  • Add strawberries, sugar, lemon zest, lemon juice, and rum to a bowl and toss. Cover with plastic wrap and let the strawberries macerate at room temperature for 1 hour.
  • Add the strawberries with their juices to a food processor. Pulse the berries, and then add the vanilla beans seeds and yogurt. Continue to blend until smooth.
  • Place in the refrigerator to chill for 1 hour.
  • Turn your ice cream machine on and pour in the chilled yogurt mixture. Churn until the mixture looks slushy like soft serve, about 12 to 15 minutes.
  • Place in the freezer for several hours until hard enough to scoop.

2 cups Greek yogurt (plain, full-fat (I use Fage 5%))
1/2 cup unsweetened cocoa powder, (Dutch-processed )
2 teaspoons pure vanilla extract
2 teaspoons stevia glycerite (equals 2/3 cup sugar - see notes)

Steps:

  • Add the ingredients to your food processor. Process until completely smooth, stopping once to scrape the sides and bottom of the bowl.
  • Using a spatula, transfer the mixture to a square 9-inch pan. Cover with cling wrap, and freeze for 1 hour.
  • Remove the pan from the freezer. Use a fork to stir the already-frozen edges into the still-soft center. If the edges are very frozen, you might need to scrape them with a knife. Stir the mixture until smooth, then spread it evenly in the pan.
  • Cover again, and place in the freezer for 3 more hours, repeating the process of stirring the yogurt every 60 minutes.
  • When the entire mixture is frozen, serve immediately as soft-serve yogurt (use chilled bowls), or freeze for two more hours for a firmer consistency that you can scoop out with an ice cream scoop.
  • If frozen overnight, remove the yogurt from the freezer 10 minutes before serving to allow it to soften.

Steps:

  • Heat the peanut butter, sugar and water in a small saucepan on a low heat. Stir constantly until the sugar has melted and a smooth paste is formed. Remove from the heat and stir in the vanilla.
  • Transfer into a mixing bowl and allow the mixture to cool for a couple of hours in the fridge. It will become very thick.
  • Stir the yogurt through the peanut butter mixture until smooth, and then add the grated chocolate.
  • Run through the ice cream maker according to machine instructions.
  • Serve! You can eat some immediately (it has a great soft serve texture straight from the machine), or freeze for a few hours to get a more scoopable texture. (If your freezer temp is high, you may need to let it sit for a while before you an scoop it.)
