EXTRA SHARP MACARONI AND CHEESE



Extra sharp macaroni and cheese image

We love creamy, tangy macaroni and cheese, so I was on a quest to create the perfect recipe. After experimenting with several different sauces, this one has fit the bill for us! Cooper sharp, extra sharp cheddar and my secret ingredient, sour cream, gives this mac and cheese the perfect tang we've been looking for!

16 oz box macaroni, elbow
4 Tbsp butter
3 Tbsp all purpose flour
salt and pepper to taste
pinch nutmeg, fresh
1 lb cooper sharp cheese (at deli)
4 c extra sharp cheddar cheese, grated
1/2 c sour cream, don't use lite
4 c whole milk, don't use skim

Steps:

  • 1. Prepare macaroni according to package, cooking about 1 minute less than it calls for. Drain and place in a 13 x 9 baking dish which has been sprayed with non-stick cooking spray.
  • 2. In a heavy, large sauce pan, melt butter over medium heat. Add the flour, salt and pepper (about a pinch each) and let it sit for about 90 seconds so the flour cooks. Stir with a whisk until the flour is smooth, about 1 minute. Add the milk, slowly at first, to incorporate, whisking quickly. Add the sour cream (it will look lumpy). Whisk frequently until it just about boils, being careful not to let it boil. Add the cheeses, starting with the cooper sharp, a few slices at a time and whisk until incorporated. Add 2 cups of grated cheddar and the tiniest pinch of fresh, grated nutmeg. Don't boil, just whisk until the cheeses are melted and the sauce becomes smooth.
  • 3. Pour the sauce over the macaroni (I use all of it because we like it very creamy. If you like a custard-y consistency, leave a little sauce out). Stir the sauce until the macaroni is covered. Top with the remaining 2 cups of grated cheddar. Do not cover. Cook in a 350 degree preheated oven for 45 minutes until it's bubbling. ENJOY!

2.5 cups whole milk
1/3 cup salted butter
3 cups Cooper® Sharp American Cheese (shredded)
1 cup sharp cheddar (shredded)
1 teaspoon flour
1 cup Parmesan (flakes or shredded)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Buttered or seasoned breadcrumbs (as desired)

Steps:

  • Make a roux by melting butter in a saucepan, adding flour. Stir until thick.
  • Add milk and cook over medium heat, stirring constantly until mixture boils and thickens, about 5-7 minutes.
  • Cook macaroni according to package directions, then drain.
  • Reduce to low heat and stir in shredded American cheese and 75% of sharp cheddar cheese, onion powder, garlic powder and parmesan.
  • Add cooked macaroni to cheese sauce and stir well.
  • Pour into an oven-safe dish and top with breadcrumbs and remaining cheddar cheese.
  • Flame top until golden, or broil 5-10 minutes.

1 (16-ounce) box elbow macaroni
4 1/2 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon salt
3/4 teaspoon pepper
2 cups whole milk
1 pound Cooper® Sharp White or Yellow cheese, shredded

Steps:

  • Cook macaroni according to package directions. Drain. Melt butter in 3-quart saucepan until sizzling. Stir in flour, salt, and pepper. Add milk and cook over medium heat, stirring constantly, until mixture boils and thickens, or about 5 to 7 minutes.
  • Reduce heat to low. Stir in Cooper® cheese and continue to stir constantly until cheese is melted, or about 5 to 7 minutes.
  • Add cooked macaroni and stir well. Serve immediately.
  • Follow all steps above, then spoon mixture into a 3-quart casserole dish. Top with breadcrumbs and bake at 350°F for 25 to 30 minutes or until brown and bubbly.

1 pound lean ground beef*
1 small yellow onion
1/2 green pepper, diced
1/2 red pepper, diced
1 tablespoon minced garlic
2 cups marinara sauce
1 (10-ounce) can diced tomatoes, drained
1 can kidney beans, drained
1 teaspoon chili powder
1 teaspoon cumin
1 pound elbow macaroni, cooked to package directions
1 cup milk
1 tablespoon butter
1 1/2 cups Cooper® Sharp White or Yellow cheese, sliced and chopped

Steps:

  • In a large skillet, add a tablespoon of oil and sauté onions, peppers, and garlic until soft. Remove the sautéed veggies and set aside.
  • Add the ground beef and brown over medium-high heat. Season with chili powder and cumin. Add marinara sauce, diced tomatoes, and kidney beans to the sautéed onions and beef mixture.
  • In a large saucepan, add 1 cup of milk and heat over medium heat. Add 1 tablespoon butter, then add the chopped Cooper® cheese and stir until cheese is blended with milk. Add the cooked macaroni noodles.
  • Reduce heat to medium-low, then add the chili and stir until well mixed.
  • Serve in large bowls and garnish with sour cream and chopped green onions.

ACADIA'S VELVEETA MAC & CHEESE

This recipe is a revised version of my Mom's Cooper Sharp Mac & Cheese recipe which I have been making for 25 years. But, I didn't have the correct ingredients for it, so this is how it came out. My DH and DD loved it so much better, that I now have my own version. LOL!

1 cup cooper sharp cheese (shredded or sliced)
12 Velveeta cheese slices (individually wrapped)
1 1/2-2 cups macaroni (cooked)
1 cup low-fat milk
1/2 cup light cream
2 tablespoons butter

Steps:

  • Pre-heat the oven to 400 degrees F.
  • In a 2-quart baking dish place 1/2 a cup of cooked macaroni.
  • Add 4 slices of Velveeta on top of the macaroni covering them.
  • Layer another 1/2 a cup of of macaroni on top of the Velveeta slices.
  • Add 4 slices of Velveeta on top of the macaroni covering them.
  • Layer another 1/2 a cup of of macaroni on top of the Velveeta slices.
  • Add 4 slices of Velveeta on top of the macaroni covering them.
  • Add two tablespoons of butter on top of the Velveeta.
  • Place in oven for 15 minutes so Veelveta melts.
  • Remove from oven and give it a quick stir.
  • Pre heat the oven to Broil.
  • Add milk to baking dish.
  • Layer the Cooper sharp cheese so it covers the top of the.
  • Velveeta and macaroni mixture.
  • Poor light cream on top of the Cooper sharp cheese.
  • Place in the broiler for 5-7 minutes on the lowest rack.
  • It will get a bubbly crust on top.
  • HOT! Let sit for 5 minutes before serving.
  • Enjoy!

Steps:

  • Cover macaroni with cheese evenly.
