Anise overnight cookie. Drop cookie onto greased cookie sheet and bake the next day. These are traditional in our family. Delicious with coffee! Anise oil can be found in drugstores or at a candy supplier.

3 eggs
1 ⅛ cups white sugar
¼ teaspoon anise oil
1 ¾ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt

Steps:

  • In a large bowl, beat eggs and sugar for 20 minutes, yes 20, with an electric mixer. Combine the flour, baking powder and salt; stir into the egg mixture along with the anise oil and continue to mix for about three minutes. Drop by teaspoonfuls onto well greased cookie sheets so that cookies are 2 inches apart. Cover the cookie sheets carefully with foil or plastic wrap and refrigerate overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Bake cookies for 10 to 12 minutes in the preheated oven, until the bottoms begin to brown. When cool, store in tins.

1 1/2 cups plus 2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 teaspoon coarse salt
2 teaspoons ground anise seeds
4 large eggs, room temperature
1 cup plus 2 tablespoons sugar, plus more for sprinkling

Steps:

  • Preheat oven to 350 degrees. Sift flour, baking powder, salt, and anise in a medium bowl. Whisk eggs with a mixer on medium speed. Slowly add sugar, increase speed to high, and whisk until thick and glossy, about 10 minutes. Reduce speed to low, and add flour mixture, whisking until just combined.
  • Spoon batter into a pastry bag fitted with a 1/2-inch round tip. Pipe 1-inch tapered mounds on baking sheets lined with nonstick baking mats, spacing them 1 inch apart. Bake until firm, 10 to 12 minutes. Let cool on sheets on wire racks.

8 ounces bittersweet chocolate, finely chopped
1/4 cup (1/2 stick) unsalted butter, diced
1 teaspoon plus 1/4 cup sugar
3 whole star anise*
1/4 cup all purpose flour
1 tablespoon unsweetened cocoa powder
1/2 teaspoon coarse kosher salt
1/4 teaspoon baking powder
2 large eggs
2 tablespoons honey
2 teaspoons finely grated grapefruit peel

Steps:

  • Combine chocolate and butter in medium microwave-safe bowl. Microwave in 10-second intervals until chocolate is almost melted; remove and stir until melted and smooth. Finely grind 1 teaspoon sugar and 3 star anise in spice mill or small coffee grinder. Transfer to small bowl; whisk in flour, cocoa, coarse salt, and baking powder.
  • Beat remaining 1/4 cup sugar, eggs, honey, and grapefruit peel in large bowl until thick and smooth. Fold in chocolate, then dry ingredients. Cover bowl; chill batter until cold and firm, at least 45 minutes and up to 1 day.
  • Preheat oven to 375°F. Line 3 large baking sheets with parchment paper. Drop batter by tablespoonfuls onto prepared sheets, spacing mounds 2 inches apart.
  • Bake cookies, 1 sheet at a time, until dry-looking and tester comes out with moist crumbs still attached, about 10 minutes. Cool on sheet 3 minutes, then transfer to racks and cool completely. DO AHEAD: Can be made 1 day ahead. Store airtight between sheets of waxed paper.

1 3/4 cups unbleached all-purpose flour
3/4 teaspoon baking powder
1/2 cup cane sugar
1/4 cup unsalted butter (at room temperature)
3 large eggs
1 tablespoon pure anise extract
1 teaspoon crushed anise seeds ((optional))
1 cup powdered sugar
2 tablespoons milk
1/4 teaspoon anise extract
candy sprinkles

Steps:

  • Preheat the oven to 400˚F. Line two cookie sheets with parchment paper.
  • Add flour and baking powder to a medium mixing bowl and whisk to combine. Set aside.
  • In a large bowl, beat butter and sugar with an electric mixer on medium speed until fluffy, about 5 minutes.
  • Beat in eggs one at a time, add 1 tablespoon of anise extract and anise seeds, and mix until well blended.
  • Add the flour mixture a little at a time, and mix until well blended. The dough will be soft and sticky.
  • Drop rounded tablespoons of dough 2 inches apart onto the prepared baking sheets.
  • Bake 5 to 7 minutes until bottoms are golden brown and the cookie springs back when pressed with your finger.
  • Remove the cookies from the baking sheets to a wire rack to cool.
  • To make the glaze, whisk together the powdered sugar, milk, and 1/4 teaspoon anise extract in a small bowl until smooth.
  • Place the cooling rack of cookies on the cookie sheet to catch drips and the extra sprinkles.
  • Grab one cookie, dip the top into the glaze, put it back on the rack, and add the sprinkles right away before the icing begins to harden.
  • Repeat with the remaining cookies, and then let the cookies sit until the glaze is hard.
  • Store in an airtight container at room temperature for up to 2 weeks. The recipe makes about 32 cookies.

This authentic anise cookie is my mothers recipe. The use of anise oil (available behind the counter from your pharmacist)sets this cookie apart from the rest. You can make these cookies in November and store them in a tightly covered tin to let them age and mellow, ready for Christmas.

4 large eggs
2 cups granulated sugar
2 cups sifted flour
1 teaspoon anise oil (not extract see above)

Steps:

  • With a Kitchenaid mixer: beat eggs 20 minutes with 2 cups of granulated sugar (yes I mean 20 minutes as this is what will make the cookies light as a feather with a crisp melt in you mouth top crust).
  • Add flour gradually, beating well after each addition. Add 1 tsp anise oil and blend well.
  • Drop by tablespoonsful onto greased cookie sheets and let stand in a draft free place overnight.
  • Bake in a 375°F oven for 10 minutes until light golden but do not brown.
  • Cool on baking racks thoroughly before storing.
  • Store in a tightly covered cookie tin (not plastic).
  • The longer you let the cookie age, the better it will be.

2 1/4 cups sifted flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 eggs
2 cups sugar
1 1/2 teaspoons anise extract

Steps:

  • Sift flour, baking powder and salt together several times.
  • Beat eggs at low speed until frothy, turn mixer to medium, slowly, gradually beat in sugar (about 1 tbl at a time) Turn mixer to a low speed; add sifted dry ingredients slowly, beat 15 minutes longer, blend in anise.
  • Using small cookie scoop or teaspoon drop onto greased cookie sheets,work quickly.
  • Allow to stand in a cool place several hours or over night, the top of the cookie should be dry to the touch.
  • Bake at 325 F about 14 minutes, should not brown.
  • Makes about 10 dz.

  • Place the eggs in a stand mixer with the whisk attachment in place. Beat the eggs until foamy. Add the powdered sugar, a little at a time along with the vanilla extract and anise oil.Once all the powdered sugar has been added continue to beat the mixture for 10 minutes. Yes, that's 10 full minutes, do not reduce the time. The batter needs to be very loose and airy.
  • Combine the flour, baker's ammonia and salt in a bowl. Add HALF of the flour mixture to the wet mixture along with the lemon zest and beat it for a full 15 minutes, do not reduce the time (if the mixture is too dry for your whisk attachment, use the paddle attachment).Attach the paddle attachment, add the remaining flour and beat for another 5 minutes.The dough should be very soft but not wet and sticky. If the dough is too dry or stiff mix in a little more lightly beaten egg.Form the dough into a ball, flatten it to an inch-thick disk, wrap it in plastic wrap and refrigerate for at least an hour or overnight.
  • The next day roll out the cold dough to about 1/3 inch thick (1 cm) on a floured work surface.Use your molds or rolling pin to make the shapes and cut them out with sharp knife or pastry cutter. If you're using molds lightly dust them with flour to prevent the dough from sticking.Toast the whole anise seeds in a dry pan over medium-high heat until aromatic, being careful not to let them scorch. Place the anise seeds on a lined cookie sheet, spreading them out evenly.Lay the Springerle on top of the anise seeds on the baking sheet. Let them dry at room temperature for a full 24 hours, longer if you're in a place with high humidity. The outside of the Springerle should be dry.
  • After the cookies have dried for at least 24 hours, lay a damp towel on the counter and gently press the Springerle down onto it to very lightly and evenly moisten the bottoms. Return the Springerle back to the cookie sheet.In an oven preheated to 300 degrees F with the rack positioned in the middle, bake the cookies for 20-30 minutes. Do not let the cookies turn golden, they're supposed to stay very pale, basically the same color as when you put them in the oven.
