Think of egg foo young as a cross between an American-style omelet and a crispy Chinese pancake, loaded with vegetables and topped with a savory mushroom "gravy." It's a super-speedy meal thanks to packaged broccoli slaw, matchstick-cut carrots, and microwaveable brown rice. A smaller (8- to 10-inch) skillet will make for a taller, fluffier pancake. Tamari sauce is slightly thicker than soy sauce with a more robust flavor (many brands are also gluten-free). Use anywhere you'd use soy sauce, especially in meat marinades.

Number Of Ingredients 15

2 tablespoons sesame oil, divided
3/4 cup matchstick-cut carrot
1 bunch green onions, thinly sliced, white and green parts divided
2 cups packaged broccoli slaw
1 teaspoon minced peeled fresh ginger
3 garlic cloves, grated
1 tablespoon unseasoned rice vinegar
1 1/2 tablespoons tamari sauce or reduced-sodium soy sauce, divided
3/4 teaspoon freshly ground black pepper, divided
6 large eggs, lightly beaten
1 cup unsalted vegetable stock
1 tablespoon all-purpose flour
1 (8-oz.) pkg. presliced cremini mushrooms
2 (8.8-oz.) pkg. precooked brown rice (such as Uncle Ben's)
1 tablespoon toasted sesame seeds

Steps:

  • Preheat broiler; place rack in upper middle position.
  • Heat 1 tablespoon oil in a 10-inch oven-safe skillet over medium-high. Add carrot and white parts of green onions; sauté 3 minutes. Add slaw, ginger, and garlic; cook 3 minutes, stirring occasionally. Add vinegar; cook 1 minute or until liquid evaporates.
  • Combine 1 1/2 teaspoons tamari, 1/4 teaspoon pepper, and eggs in a bowl, stirring with a whisk. Add egg mixture to slaw mixture in pan, tilting pan to spread mixture evenly. Cook 3 to 4 minutes or until egg is set on the bottom. Place pan in oven; broil 2 minutes or until top is set and golden. Cut into quarters.
  • Combine stock and flour in a bowl, stirring with a whisk. Heat remaining 1 tablespoon oil in a skillet over medium-high. Add mushrooms; cook 5 minutes or until browned. Add flour mixture; bring to a boil, and cook 1 minute or until mixture is slightly thickened. Stir in remaining 1 tablespoon tamari and 1/4 teaspoon pepper.
  • Heat rice according to package directions; divide evenly among 4 plates. Top each serving with 1 wedge of the pancake and 1/4 cup mushroom mixture; top evenly with green parts of onions, remaining 1/4 teaspoon pepper, and sesame seeds.

1 large green onion
4 eggs, beaten
¾ cup bean sprouts
3 tablespoons soy sauce, divided
2 tablespoons peanut oil, divided
2 cups sliced fresh mushrooms
4 teaspoons cornstarch
1 cup chicken or beef broth

Steps:

  • Thinly slice green onion, and reserve 1 tablespoon of the top for garnish. Stir the remaining onion into the egg along with the bean sprouts and 1 tablespoon of soy sauce.
  • Heat 1 tablespoon of peanut oil in a large nonstick skillet over medium-high heat until hot. For each pancake, drop 1/4 cup of egg mixture into the hot oil. Cook until the bottoms are set, 1 to 2 minutes, then turn over and continue cooking for another 1 to 2 minutes until cooked through. Transfer to a warm serving plate while you make the remaining pancakes.
  • Heat the remaining 1 tablespoon of peanut oil in the skillet and cook the mushrooms with the remaining 2 tablespoons of soy sauce until the mushrooms are soft, about 3 minutes. Dissolve the cornstarch in the broth, stir into the mushrooms, and cook until thickened. To serve, pour the sauce over the egg foo yung pancakes, and sprinkle with the reserved onion.

1 teaspoon sesame oil
1 cup chopped onion
¼ cup chopped green onion
½ cup chopped celery
1 cup bean sprouts
¼ teaspoon cornstarch
½ pound shrimp, peeled, deveined and roughly chopped
2 tablespoons soy sauce
1 teaspoon salt
8 eggs, well beaten

Steps:

  • In a skillet over medium heat, heat sesame oil and lightly fry the onions, celery and sprouts. Stir in cornstarch and add shrimp, soy sauce and salt. Stir until well blended. Remove from heat and transfer to a bowl.
  • Return the pan to the heat, and add the beaten eggs. Fry the eggs while stirring gently. Return the vegetable and shrimp mixture to the pan while the eggs are still liquid. Finish frying until eggs are fully cooked.

I love Chinese take-out, and frequently try different recipes to make at home. Never quite making the grade usually. I have to say I fiddled with this one and I don't think I'll be ordering any more "egg foo young" from our local chinese joint. Don't be surprised on how good this is! It's my recipe but the ideas came from a cooking website speciallizing in Asian cuisine. If you have clam juice, or seafood stock or shrimp stock use it, chicken stock will do, and water if you have none. It will make a difference on the result in the taste of your "chinese omelets'." I have yet to master the gravy part the take-out kind, but I never eat it anyway. So I didn't include one here. If you like you can make your own gravy or use a store bought variety. But I don't think you will miss it much. Your option. I'm by no means biased against gravy.

6 jumbo eggs
1/2 cup shrimp, cooked and roughly chopped
1/2 cup mixed mushrooms, chopped fine
1/3 cup green onion, chopped
1 cup mung bean sprouts, fresh
1 tablespoon low sodium soy sauce
2 teaspoons salt
1/2 cup chicken stock or 1/2 cup shrimp stock
8 tablespoons vegetable oil

Steps:

  • Crack all eggs into a bowl and beat until foamy. Add 1 teaspoons salt, and shrimp stock. Beat well again.
  • Chop shrimps, mushrooms, and green onions. Place each in their own little bowls.
  • In a 6 inch non-stick skillet heat 1 tablespoons vegetable oil until it shimmers. Add a small handful of mushrooms and green onions. Fry briefly stirring continually.
  • Add 1/4 of egg mixture to pan on top of mushrooms, and onions. Dribble a little of the soy sauce, and salt into egg mixture now and sprinkle a small handful of shrimps, then bean sprouts on top.
  • Do not stir. Let cook until egg starts to brown nicley along edges of omlette.
  • Using a large spatula flip over and pour 1 tablespoons vegetable oil around sides of pan. Swirling pan so eggs don't stick.
  • When eggs are completely cooked, remove and serve immediatley.
  • Repeat making these omelettes until all ingredients have been used.
  • Should make about 4 Egg Foo Youngs.

6 fresh eggs
2 celery ribs
1/2 onion
1 1/2 cups fresh bean sprouts
2 dried shiitake mushrooms
2 tablespoons sesame oil

Steps:

  • Turn oven to 325 degrees.
  • Dice 1/2 onion,.
  • Slice 2 ribs celery.
  • Place 2 shiitake mushrooms in water, microwave for 2 minutes.
  • Let mushrooms cool and slice or chop.
  • 1-1 1/2C bean sprouts.
  • Beat 6 fresh eggs.
  • Add 1-2T water to eggs.
  • Put about 2T sesame oil in skillet, fry onions and celery just until heated thru.
  • Pam a skillet or pie pan for the oven.
  • Mix veggies, mushrooms and bean sprouts into beaten eggs and pour in pan/skillet, place in oven for about 8-10 min or until pretty firm.
  • Remove slice and serve.

I usually double the amount of sauce, and I like to add a touch of oyster sauce to the sauce sometimes, too. For a complete Chinese experience, we usually eat this with Recipe #228704.

4 eggs
3 tablespoons water
1 tablespoon soy sauce
1 cup fresh bean sprout
1/2 cup fresh mushrooms, sliced or 1 (8 ounce) can mushrooms, chopped
2 -4 green onions, thinly sliced
cooking spray
2 teaspoons cornstarch
1/2 cup beef broth
1 tablespoon soy sauce

Steps:

  • FOR OMELETS:.
  • In a medium bowl, beat the eggs with water and soy sauce.
  • Stir in bean sprouts, mushrooms and green onions; mix well.
  • Spray an 8-inch non-stick skillet with cooking spray, and heat skillet over medium heat.
  • Pour in approximately one fourth of the egg mixture.
  • As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath.
  • Cook until bottom is set and beginning to brown, and top is almost set, then slide onto a plate.
  • Flip over (uncooked side down) back into skillet and cook until eggs are done in the middle, about 1-2 minute.
  • Slide onto a serving plate, keeping warm.
  • Repeat procedure to make 2-3 more omelettes, stacking them on serving plate when done.
  • Cut omelets into wedges and serve with warm Oriental Sauce.
  • FOR ORIENTAL SAUCE:.
  • Combine all sauce ingredients in a small pan and heat to a boil, stirring constantly.
  • Boil for 1 minute; serve hot.

2 teaspoons grated fresh gingerroot
1 cup reduced-sodium chicken broth

1-1/2 cups egg substitute
1/4 cup chopped green onions
2 cups canned bean sprouts, rinsed and drained
