Time 1h15m

Yield 12 servings

Number Of Ingredients 17

1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

APPLE CRUMBLE COFFEE CAKE

Apple Crumble Coffee Cake image

Finally, after all these years, I've come up with a solution for people who can't decide whether to make an apple crumble or coffee cake. This features the best things about both of those recipes. It's like baking a crumb-topped coffee cake on top of another coffee cake!

Time 1h35m

Yield 8

Number Of Ingredients 17

2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

Number Of Ingredients 22

3 cups flour
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 cup (2 sticks) butter, melted
1 teaspoon vanilla
2 large (or 3 small) tart apples (such as honeycrisp, granny smith, or pink lady), peeled and chopped
8 Tablespoons butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 cup sour cream
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 cup powdered sugar
1-2 Tablespoons apple cider
1-2 Tablespoons milk
Pinch salt

Steps:

  • Preheat the oven to 350 degrees. Grease a 9 x 13 inch baking pan.
  • In a mixing bowl, whisk together 3 cups flour, sugar, salt, cinnamon, and nutmeg. Add the melted butter and vanilla extracts and stir until the mixture is evenly moist. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla and sour cream. Meanwhile, in another bowl, mix together the flour, baking soda, salt, and baking powder. Add this to the butter mixture, stirring until the ingredients are just combined.
  • Spread half the batter into a thin layer at the bottom of the pan. Sprinkle the apple chunks evenly over the batter. Top with about 1 cup of the crumble mixture. Spread the remaining batter over top followed by the rest of the crumble.
  • Bake the mixture for 35-40 minutes or until a tester inserted in the center comes out clean. If the top gets too brown, cover with foil for the last 10-15 minutes.
  • While the coffee cake bakes, whisk together the powdered sugar, cider, milk, and salt. Serve the cake warm with the cider drizzle. This recipe can be made up to two days in advance. Store in an airtight container or in the pan with saran wrap on top.

Time 41m

Yield 2 cakes, 12 serving(s)

Number Of Ingredients 16

2 1/2 cups chopped walnuts
1 cup brown sugar
1/3 cup butter
1 egg
1 tablespoon ground cinnamon
1 (1/3 ounce) packet quick-rising yeast
1/4 cup warm water, to activate yeast 105-115 degree's
3/4 cup scalded milk, then cooled before adding to yeast
1/2 cup butter, softened
1/4 cup sugar
3 eggs
4 1/2 cups flour
1/2 teaspoon salt
1 cup powdered sugar
1 tablespoon softened butter
1 -2 tablespoon milk

Steps:

  • 1 Make the filling. Mix all ingredients together except egg set aside.
  • 2 Place the yeast in a large bowl with the 1/4 cup of warm water. Wait for yeast to activate. You will see bubbles, and foamy looking top on it. If it doesn't appear to activate. Add a teaspoon of sugar to test. It may activate after adding sugar.Make sure water is not to hot or to cool. Warm not lukewarm,or hot!
  • 3 Stir in the milk, butter, sugar, eggs, salt, and 3 cups of the flour. Beat until smooth. Stir in enough of the remaining flour to make the dough easy to handle.
  • 4 Put dough on lightly floured surface and start kneading. Knead until smooth and elastic. Place in a greased bowl turning to greased side up. Let rise until double in size in a warm place. Hint: winter can be tough. You can place the bowl of dough over a bowl of hot water covered with a rack to support the bread bowl. Cover the bowls with a towel to trap warmth from the water like a tent. This helps it rise better in the Winter months. 1-1/2-2 hours.
  • 5 Remove dough from bowl after it has risen double in size. Punch the dough down with fist. Divide the dough in half. Lightly flour surface. Roll each half of dough in to a rectangle 12 x 15 inches long.
  • 6 When ready to use filling add the beaten egg to filling. Divide filling and spread over the 2 rectangles. Roll dough tightly by the long side of rectangle that is 15 inches.Pinch dough to seal where the dough ends. Repeat with other rectangle. Stretch the roll to even it out.
  • 7 Place each Roll on a lightly greased sheet pan. Coil the dough in a circle until the coil ends. Cover and let rise until double in size. About an hour. Heat oven to 350 degree's about 40 minutes or until browned. Brush cake with butter, and glaze.
